1/4: Meals and fitness for the week

Hi guys! Hope you had a wonderful weekend <3 This little feature is back by popular demand. I used to share my weekly fitness plan and meals, and stopped to take the weekends off when we were crazy busy with the move and finishing up edits for the book. Now that things have stabilized (for now haha), I’ve had some requests to bring it back! 

Meals and fitness

Some eats from lately:

Protein oats  1 of 1

(protein oats: simmer 1/3 cup oats until cooked, stir in 1/2 scoop chocolate protein powder, 1 cup frozen berries, and a lot of almond milk. Sweetened slightly with Stevia and topped with a tablespoon of almond butter)

Cauliflower pizza  1 of 1 2

Baked chicken  1 of 1

Here’s what this week’s tentative fitness plan looks like: 

Give planks workout  1 of 1

Sunday: Core40 Combo

Monday: Teach BODYPUMP and Spin

Tuesday: OFF

Wednesday: Teach Zumba + 20 minute strength blitz

Thursday: OFF

Friday: Orangetheory

Saturday: Teach Zumba

 

Meal prep is pretty light this week (just planned a few simple dinners for Mon-Wed, since Livi’s birthday is on Thursday and we’ll be celebrating!). She requested macarons and cupcakes for her class. 😉

Here’s what I have for dinner ideas:

Mini turkey and lentil meatloaves with mashed sweet potatoes and salad

Crockpot chicken cashew chicken with brown rice 

Crispy mustard roasted chicken (using coconut flour and almond meal instead of panko) with brussels sprouts and cornbread

Crustless quiche with breakfast potatoes and salads

 

Brownie batter protein bites  1 of 1 3

Snacks and prep:

Protein brownie batter bites

Paleo bread

Chop veggies for salad, wash fruit

Make huge batch of chia pudding

Grain-free granola (from the book!)

    I got your book on Wednesday and read it cover to cover! I made your perfect protein pancakes and froze them for breakfast and baked some sweet potatoes for lunches. I am all set for the work week and just heard my school district might be closed tomorrow! Cold day, baby!

    Random Question: if I wanted to make any of these different recipes, particularly the superfood cookie dough, would it still work if I substituted regular peanut butter for almond butter and added vanilla protein powder? If so, how much protein powder is recommended?

    I made granola today, chicken is in the crockpot for tomorrow’s shredded chicken tacos, a big pot of friendship soup is on the stove, meals planned, grocery list complete. Now I have a pile of laundry to tackle, then maybe a little knitting (dishcloths).

    I actually just finished prepping some egg white muffins and your breakfast cookies (which I make a batch of every Sunday!). Question for you – where do you find most of your meal inspo? Pinterest, your own blog, google, cookbooks? Just curious. I was obsessed with Pinterest recipes for a while there, but received an Ina Garten cookbook and the Pioneer Woman cookbook for Christmas, so will be pulling most of our dinners from there for the next few months 🙂

      it was a variation of jess’ from how sweet eats, using goat cheese and manchego instead of the other cheeses

    After the holiday weight gain, I am back at it all tomorrow. Having quite a few salads with many kinds of greens and tons of WATER. Talk about salt and sugar overload.

    Thank you thank you thank you for this!! I know I’ve been bothering you about it for a while! Umm hello! I need that paprika chicken in my life! I think I’m going to make that for dinner this week too! You must have so much energy! I’m just tired reading your teaching schedule–lol. Also Just curious–what happened to barre? I remember you taught on Tues and Thurs? Did you just not count that because it’s more demonstrating? And I just noticed–from the pic above–you have really nice turnout!! I have the worst! My feet are flat like Fred Flintstone and pronate inward. Have a great week girlfriend!! XOXO

      i don’t include barre because even though i do a lot of class with them, it’s more of an instruction-based class. i got a sub for thurs night so we can celebrate with liv for her birthday 🙂 and don’t let the turnout fool you; ballet was never a strong point for me haha. my irish dance teaching once told me i had “duck feet” bahaha

    I got your book Friday and almost finished reading it already! I could totally relate to the part where you talked about steady state cardio & not seeing results. I definitely had results doing that during my weight loss, but since then the same as you described still had the jiggly bits. Funny thing is my injuries last year forced me to do more strength training which prompted me to incorporate them in circuits. Your book is going to really help me take that to the next level. Thank you!!!

    Yay! I’m glad these posts are back. It helps me plan my weeks. We’ve been in major food ruts for months. I blame my picky kids. They change what they are picky over constantly! Loving meal ideas in your book too. Mapping out workout plan tomorrow. Have a good night!

    Brr, it’s a cold day outside and im going to make me some curry soup to warm my stomach! I “meal prepped” yesterday for today’s meal which is pork kidneys and bone broth 😀

    Yum!! I feel so much more prepared for the week when I have some things prepped and a plan in place. I made some minestrone soup with homemade bone broth, a frittata and salads for the week!

Your posts about giving back, being mindfully thankful, and passing those values on to your daughter have really influenced how I think and act, especially at the start of a new year.     last night i made some mediterranean chicken and pasta, an old recipe from fitness magazine. tonight before i prance off to teach zumba, i am making your sweet potato and black bean crockpot chili from the validizzy days! i made it last week too and i can’t get enough. i always loved your old serving size terms, “serves 1 gina as a snack or two normal people as a side dish.”
