A monkey cookie kinda morning

Happy Thursday!!! Does anyone else get a long weekend? The pilot gets 4 days off work! Whoo hoo! I’m thinking some kind of getaway is in the near future ;)   (I hope!)

This morning I woke up to a chocolate peanut butter banana b-fast cookie. When I took my first bite, the clouds parted and the angels sang. It was muy delicioso.

I also had the standard cuppa cafe. I spent the morning relishing in the fact that it’s my active recovery day and that I didn’t need to get ready for the gym.. I studied, worked on Zumba dances and watched Martha. A few hours later I had a little snack- vanilla Chobani and about 1/5 of a granola plank. These two were destined for each other.

I went to the gym for 30 minutes of easy Oxygen mag reading on the elliptical, then came home and took the babies on their weekly PetSmart excursion (they were thrilled).

Lunch time: leftover roasted ratatouille veggies on a whole wheat wrap with a serving of crumbled goat cheese. Why have I not tried goat cheese before?!? A.mazing.

I’m meeting a friend for coffee very soon and the pilot’s coming home early!!! This is a huge deal because he’s been working like crazy lately… I’m stoked to get to hang out with my hubby :D

here is the recipe for the oatmeal raisin cookie:
1/4 cup oats
1 tbs peanut butter
cinnamon
1/8 cup raisins
1/2 scoop vanilla protein powder
a little Splenda (or sweetener of your choice: agave, sucanat, real sugar, whatever you feel like)
1/8 cup fat free milk

- Mix the oats, cinnamon, protein powder and sweetener in a bowl until the peanut butter is crumbly. Add in the raisins. Add the milk and stir to combine. Press the mixture down on a small plate, making it even and round. Leave in the fridge overnight. The next morning, grab a spoon and enjoy :)

for the “monkey version”, skip out on the raisins, use chocolate protein powder instead of vanilla and after combining all ingredients (including milk) add 1/2 mashed banana (if it’s a small banana, if it’s a large sized one, use 1/3 banana) and then press the mixture onto the plate and leave in the fridge overnight.

Oh my…I’m TOTALLY making this breakfast cookie asap!!!! How perfect is greek yogurt with a plank?! I find it to be the most filling snack ever! I had one this afternoon and I’m still full (and that was almost three hours ago..that never happens!). I’m SO SO SO happy you finally gave the planks a try—I just knew you would love them!

Oh! and I meant to tell you! Congrats on teaching spinning! I have actually only been to a class once (because I was scared of it!) but I loved it and can’t wait to join a gym when I move home so I can go more often. Such a great cardio workout…love the feeling afterwards!

I finally tried the granola planks this morning – yayyy!!! So, SO GOOD! Next up: adding them to Chobani!

Ok here is what the girl from my gym said about Zumba:

" Kumbia Kings, DLG, Groupo Mania. You tube is also another great resource along with googling Zumba song List, other instructors that have web pages put their song on them and tell you what part of their class they use it in."

sucha yummmmy post! your breakfast cookie idea is awesome…i love it! i need to give it a try so i can sing a rejoice in the morning just like u did today! haha. i hope u and the hubby get to take a lil mini getaway..or atleast have a great weekend together with lots of fun and relaxation!!
