Hi everyone! Hope you’ve had a great day so far
This afternoon, I was a bit of a homework machine (still have a TON do to) and had a little cup of Flax cereal to keep me going:

A couple of hours later, I met my friend Megan for coffee and she brought a treat for me: blonde vegan macaroons!!! I totally had to try one, and it was incredible! I can’t wait to crumble one of these on my morning oats:
I ordered a tall iced skinny vanilla latte:
I’m hoping that last letter is a funny-looking "a" and that he really didn’t think my name was "Ginu" or "Ginn" :/
After coffee (which was a blasty), I had to stop at Publix and meander around since it’s so close. I grabbed some of the essentials: fresh pb, Larabars, Fuze and sushi for the pilot’s after-work snack.
I came home (the pilot BEAT me here! I was shocked!) and we chilled, watched some You, Me and Dupree and I started dinner: my version of the Rizzle’s (most people refer to her as Rachael Ray) Vicki’s Favorite Chicken with Grapes and Couscous. I used about 1/5 of the EVOO, whole wheat flour, whole wheat couscous (for the hubby, I had a salad instead) and fat free half-and-half instead of heavy cream. I was sad to discover that my stone ground mustard was expired so I had to use regular ol’ Dijon. It came out great- the grapes with the chicken is a surprisingly awesome combination.
I’m gonna have to wait until the morning to catch up on my favorite blogs, but I hope you all have a wonderful night!!!

Even though I still DO moderate comments on my blog, I still get tons of negative comments that I have to reject :0( You’re lucky -especially since YOU definitely do NOT deserve to have rude people commenting on your blog!!

Aw, I love that you and the husband just kicked back and watched a movie. My boyfriend’s been gone since Sunday, and all I’ve wanted to do is watch a movie with him!

larabars and fresh ground PB are 2 top items on my list too!!! baristas at starbs always mess up my name too with 'andria' or 'aundrea' sheesh. i <3 skinny lattes… that was a great addition to their menu.

Yum! Those macaroons sound amazing – one of my favorites for sure, but I’ve never heard of blonde ones before!! Extra yum!

It sounds like you had a great day and evening. I am looking forward to tonight to relax with my husband. His evening MBA program started again this week after 3 weeks off, so we don’t have many nights to relax until Friday.
Never heard Rachael Ray called “Rizzle” before! I remember seeing her make this recipe, never tried it though. Looks good!

the bummer is that you need a dehydrator (she’s a raw vegan, so she has one)!! do you think there’s any way we could bake them instead?? maybe we can experiment with the recipe a little
Blonde Macaroons(24-36 cookies)
3 cups dried, unsweetened coconut flakes
1 1/2 cups finely ground almonds
1 cup maple syrup
1/3 cup coconut oil
1 tbs vanilla (or 1/2 tbs vanilla, 1/2 tbs almond extract)
1/2 tsp salt
*Combine in a large bowl. Using a small icecream scoop or tablespoon, spoon rounds of dough on dehydrator screens. Dehydrate at 115 degrees for 12-24 hours until crisp on outside, chewy on inside.
**For chocolate, replace almond flour with 1 1/2 cup cocoa powder (preferably raw). (I usually do 1/2 cup cacao, 1/2 cup carob and add a little more cacao to taste)
