A Busy Bee and BSI Submission

Heyyyyy! Hope you’ve all enjoyed your humpday!

I woke up pretty early this morning– not too early, because it’s dark and freezing in the AM now, and was ready for some b-fast:

Chocolate protein oats with unsweetened coconut and almonds

1 egg + 1 egg white + salsa + one productive Gina in a Moulin Rouge mug:

I went to Target (and spent less than $100, which is near impossible for me in that place!), Publix, to get macaroon ingredients and banana bread stuff for my lovely BSI winners, and to the post office to send my pilot his weekly care package.

For snack, I had one of these beauties:

I was a cleaning machine for about 2 hours (downstairs is spotless… tomorrow I’m tackling upstairs), then it was lunchtime:

I took the puppies on an hour-long walk on the base trail, then came home to work on some new Zumba dances. We did two new ones tonight- a Flamenco/Bellydance one and a Samba/Reggaeton/Bellydance one. SOOOOO FUN!

For snack, I had hummus and carrots (sorry I don’t have a pic, but at least hummus and carrots is nothing unusual)

I packed a Luna bar and water to take the the gym.

I taught spin and Zumba tonight (munched half of the Luna in between and the other half when I was done) and was excited that my friend Megan came to spin. Between teaching the two classes I burned 875 calories. Yowza!!!

When I got home, my legs felt exhausted and I was a starvin’ Marvin. I took a couple of dips into the peanut butter jar while I thought about what to eat :D

I had a salad with gingerly dressing:

Then I worked on my BSI Submission for this week. The fabulous Erica chose pears for the BSI, and here’s what I came up with:

Red Pear with Balsamic Reduction, Goat Cheese and Almonds

Doesn’t it look kinda like a butterfly?? Cute!

It did not taste cute, though… it tasted GORGEOUS!!!

1. Make the balsamic reduction– simmer 1 cup of balsamic vinegar, stirring occasionally, for about 20 minutes until mixture is reduced and sticks to the back of a spoon. Add in a little sugar (I used 1/2 tbs of Sucanat)

2. Slice a pear and dip the top of each slice into the reduction.

3. Top with goat cheese and almonds.

4. FEAST!!!!

The tart balsamic was such a nice compliment to the sweet pear and the savory goat cheese. It would be a great party appetizer, side or unique dessert!

Well friends, I’m gonna crash out. This little girl is sleeeeeeepy

biz! i’m sorry i took your idea!! we have great taste though :D

maddy- all of my meals were slightly larger today and even though there’s no pic, i dipped into the pb jar a few times while i was cooking :D i don’t like to eat a lot at night– sleeping on a superfull stomach makes me ill– so munching on some peanut butter is a good way to sneack in a couple extra hundred cals :D

I love the BSI,man what a creation! I can’t believe you teach to classes in a night. When I teach AKB I am pooped after one class! YOU KICK A$$!

My mom truly believes that Target has a curse in which it is impossible to spend less than $100 every time you go in the store. No matter what!

I love Fuze! I haven’t had it in forever – I will definitely need to check out that new flavor!

Your BSI recipe is definitely GORGEOUS!!! Wow, so professional looking…and for some reason I just feel like the words “balsamic reduction” make you sound like a professional chef ;o) Love the goat cheese and almond topping!!!

Whoa…that seriously looks amazing! Yummy AND cute, to boot.

I love “balsamic reduction,” although it reminds me of when I first heard it (at a nice restaurant) and had to ask if the “reduction” meant “low-fat.” :-(

ok seriously? FLAMENCO/BELLYDANCE ZUMBA CLASS? why can’t you come teach that at my gym?!!? sounds soooo super fun, and good for the core too hahah!

i STILL have not found a decent place to do any type of flamenco dancing in rhodey besides when i’ve taught it. so sad! when i was in florence (um FIVE years ago!) I could salsa every night and flamenco every day if I wanted (and i often did).

hey fittingbackin- yes i wear a hrm when i teach and when i work out. it tells me when i can work a little harder and how much more calories i need to eat each day to stay at the same weight.

miz- i love the tutu as a cape! i think mine is going to be black, even though i’m having a tough time deciding…

sabrina- i think i’ll just have to come chill in rhode island for a while… i’d tell you to come to valdosta, but i’d never wish that on anyone :D
