Hi friends!

Thank you so much to all of you who stepped out of lurkdom — lurkdom doesn’t sound very pretty, how about the land of not commenting?- to say hello and tell me what your favorite bar is! It was so nice to see some new "faces" on here and I hope you know how much I appreciate you reading!! I hope to see you around here more often :D

So yesterday I started the morning with a full-sized breakfast cookie with golden raisins– using a 1/2 cup instead of 1/4 makes this a very satisfying breakfast!

I made some of the goodies to send out to the BSI winners from last week:

Banana bread (I had to taste it, to make sure it came out ok, haha)

Megan brought me the best morning snack I could ever wish for:

Raw vegan banana ice cream with almond butter cups

If you could put heaven in a custard cup, this would be it

I took Bella to the vet, to Petsmart, then hit up the gym for a light leg day since my leggies were SORE from Wednesday night’s Zumba and Spin


Warm up 15 minutes at 4.0 with 2.5% incline
Leg extension 35 lbs, 3 sets of 12
Seated calf raise +20 lbs, 3 sets of 12
Plie squat 12 lb kettleball, 3 sets of 10
Abductor/adductor machine 35 lbs adduction, 50 lbs abduction, 3 sets of 12 of each
Total time: 35 minutes  

 

I heated one of these beauties up for lunch while I choreographed for step:

I taught step, which went EXTREMELY WELL because they fixed my mic!!!! I thought I was never going to have one again!!

School was laaaaaame (I used to love Finance and now I feel discouraged and dread going to that class), then I came home to watch some Grey’s and chill.

I started off this lovely Halloween morning with a TREAT:

I <3 raw vegan macaroons!!!!

Deciding to use every pumpkin dish I now own, I had coffee and the best savory oats I’ve had so far

-1/2 cup oats with Laughing Cow melted in and 2 soysage links crumbled and stirred in- seasoned with salt, pepper and Texas Pete

-1 "pop" egg on top

(and Mr. Pumpkinhead filled with Vanilla Biscotti coffee)

The b-fast was delish, but almost a little too much for me! Next time I’m going to use 1/4 cup oats… this meal was about 100 cals more than my usual breakfasts (not that I’m counting or anything.. yikes!), and I could feel it. The bonus is that it kept me full for longer and I only needed a tiny mid-morning snack.

I ran some errands and went to Best Buy to get my laptop and they don’t have the one I want. So I’m either going to have to wait until they get it online and order it from the store, or go through Dell’s website. Bah. The good news is that Vieja Computadora is behaving rather well today.. knock on wood…

I met Jeni at Firehouse Subs and got my usual medium veggie sub on wheat. It was funny because I usually ask for sliced egg on it and the guy making the sandwiches was like "No eggs today?" and I explained to him I already had one for breakfast, but I was surprised he remembered my "usual" :D

I just munched another slice of my latest banana bread (to make sure it’s safe again.. hahah) and I’m about to hit the gym for upper body and meet Renee for a run.

Looks like I’m not going to wear either tutu tonight! My friends and I decided to get together and grill and we’re going to make a bonfire :D Maybe s’mores are in my future??

“Raw vegan banana ice cream with almond butter cups” oh boy that sure does sound super! I’ve never had anything “raw” or “vegan” before (although I eat raw food… you know what I mean) but that sounds enticing!

I would ADORE a Sunday breakfast meet-up! Unfortunately, I’ll be working all day! :(

Happy Halloween! I sincerely hope you get to have smores because they are pretty much the best campfire snack ever invented. Although, I could honestly just eat a ton of the toasted marshmellows and forget the graham crackers and chocolate.

The vegan banana ice cream sounds great. What goes into it – just bananas?

hi amisha! here’s the recipe for the b-fast cooki:
oatmeal raisin b-fast cookie:
1/4 cup oats (or you can use 1/2 to make a bigger cookie and use more milk)
1 tbs peanut butter
cinnamon
1/8 cup raisins
1/2 scoop vanilla protein powder
a little Stevia (or sweetener of your choice: agave, sucanat, real sugar, whatever you feel like)
1/8 cup fat free milk
- Mix the oats, cinnamon, protein powder and sweetener in a bowl until the peanut butter is crumbly. Add in the raisins. Add the milk and stir to combine. Press the mixture down on a small plate, making it even and round. Leave in the fridge overnight. The next morning, grab a spoon and enjoy :)
for the “monkey version” skip out on the raisins, use chocolate protein powder instead of vanilla and after combining all ingredients (including milk) add 1/2 mashed banana (if it’s a small banana, if it’s a large sized one, use 1/3 banana) and then press the mixture onto the plate and leave in the fridge overnight.

hey brittany- it’s made with coconut meat, coconut water, agave nectar, banana, cashews, almond butter and cacao beans! it was INCREDIBLE :D

Haha- I was about to ask for the bfast cookie recipe also but am glad I scrolled to look at the comments first!

Your commitment to health and staying active/busy are Really impressive. I know what it’s like to have someone you love far away (best to keep busy, I’ve found!) In fact, that’s part of the reason I started a blog- I just wanted to make sure it was alright that I added you to my ‘blogroll’ (Please don’t feel obligated to do the same, I just wanted to put up some ladies I go to for constant inspiration ;) )

I love all of your holiday dishes. I totally used to make fun of my mom (behind her back) for those when I was younger, now I want all of hers. :-)
