Attack of the Kashi Blob + a BSI submission

Hey! IT’S FRIDAY!!!

Hope you’ve all had a great day! Mine has been a little busy, but wonderful :D

I started out the day with the b-fast cookie I put in the fridge last night:

Delicious! Did anyone else make one?

I had a training session, then came home for a snack.

It was my first time trying one of these little guys:

It tasted good but I couldn’t chew it! It seriously hurt my jaw, it was very, very crunchy and chewy. Since I liked the flavor and didn’t want to waste it, I stuck it in the microwave for 15 minutes and turned it into a nice, chocolatey and crunchy blob of goodness and ate it with a spoon:

I ran some errands, walked the puppers, and then decided to make a BSI SUBMISSION!

After some contemplation with my limited ingredients (I need to go grocery shopping like you read about), I came up with:

Spicy Sweet Potato-stada

First, I made never-fried beans by pulverizing a can of red organic kidney beans, lime juice, cumin, garlic, salt and pepper in the food processor. I spread 1/2 cup of the mixture onto a split pita and placed it on a cookie sheet sprayed with nonstick spray:

I boiled a small diced and peeled sweet potato for 6 minutes (until fork tender), then tossed the cubes in my Sweet potato fry seasoning- steak seasoning and paprika.

I put the sweet potatoes on the beans, then baked for 8 minutes at 375

Next, I added some lettuce, salsa, and lime juice:

It came out soooo well! I think that sweet potatoes are amazing when they’re PICANTE! Thanks Melissa for choosing such an awesome ingredient!!

For dessert, I had the first thing I’ve made in my dehydrator!

Since it was an off-day from the gym and I don’t like to be a total snail on my off days, I did 35 minutes of the Zumba Power DVD (it was my first time doing this one and I really liked it.. the Advanced DVD is still my fave though) then a self-taught 20 minute yoga blitz. It was wonderful.

Then I got an hour massage…. HEAVEN :D Thank you, Ashley!!!!

Renee made dinner for Ashley, Megan and I. Doesn’t food taste better when you don’t have to cook it??

Orange roughy with lemon, dill, salt and pepper, pasta with basil pesto, tomatoes and olives and steamed onion, bell pepper, zucchini and squash:

It was incredible and so nice to be treated to a delicious home-cooked meal :D

Well it’s time for bed for this little girl! I’ve got a 5k in the morning and a birthday celebration at night!

Yay! You’ve already used your dehydrator! Are those things as big as they look? I’d like one, but don’t know if my tiny kitchen could accommodate it.

Shiraz is my favorite red wine! Good choice. :)

I loooove what you did with the sweet potato. I don’t know why I’ve never thought of using lime to season it. Brilliant!

good luck with the 5k! Orange roughy is my mom and I’s favorite fish, we make it all the time. I’m glad you go to to just enjoy!

Didn’t make the bfast cookie yet because I’m still so surprised it’s refrigerated!! Haha.

Fun BSI entry!!!! I love that you are so self motivated, I have never done Zumba and they don’t have it at any local gyms:( I should rent a DVD! Your doing another race tomorrow, man your racking up those miles!!!

I haven’t made the b-fast cookie yet, but I plan on making it sometime soon. As soon as I get myself some more protein powder.

Your raw vegan blonde macaroons look so delish. Now I want a dehydrator. Also you ring is gleaming in that photo – the pilot must LOOOOOVEE you :)

yeah half the kashi bars leave my jaw hurting half way through the bar. It’s a pity because sometimes they actually taste good.

Great idea with that Kashi bar, they ARE insanely difficult to chew, but they really do taste like a candy bar!
