Something worth waking up for

Hello! Hope you’re all having a great day!

Here is the breakfast cookie how-to I’ve been promising:

In a small bowl, add 1/3 cup oats, 1 tbs nut butter of choice (I used raw almond) and 1/2 scoop protein powder (tonight was chocolate Designer Whey)

Stir to combine and use the spoon to break up the nut butter until you have a nice crumbly mixture:

Add 1/8 cup milk of your choice (For me, unsweetened vanilla almond milk) and mix until fully moistened

Now the fun part- pick the mix-ins! You can get creative with this one– I’ve tried banana, raisins, pumpkin, chocolate chips, ground espresso beans… add anything you like :D

Tonight, I decided on 1/2 mashed banana that was looking a little ripe

Stir in your mix-ins of choice and season (I used a little Stevia and cinnamon)

Plop the mixture onto an appetizer-sized plate and with the back of your spoon, flatten it into a round shape with equal thickness throughout

Put the cookie in the fridge overnight. It will harden slightly from the nut butter and the oats will soften from the milk.

Next morning, grab a spoon and enjoy :D

To rewind to this afternoon, I made some grape leaves for lunch and a hummus salad

In this batch of grape leaves I used, California brown rice, golden raisins, kalamata olives, garam masala, lemon juice, salt and pepper. I thought the combination might be a little strange, but it was actually really good!

Still a little snacky, I grabbed 1/2 serving of raw goat cheese

Went to Jeni’s (I haven’t seen her in a week and a half because she was out of town, and I missed her!!!), then off to step and school.

I grabbed a Clif bar to munch in between teaching and class

Came home and decided to try another Oikos flavor, since the vanilla one didn’t work out so well the other day.

I grabbed the honey flavored one:

In the words of Miss VeggieGirl: HOLY YUM. It had a layer of honey at the bottom and the flavor was not overboard on the sweetness and the texture was glorious. Maybe the vanilla one I had was a fluke??? Or maybe the honey flavor is just way better?? I still have a blueberry one in the fridge to try so we’ll see what the final verdict is.. but I know I’ll buy this honey flavor again, for sure.

Still hungry, I grabbed half a pita and dipped it in some marinara:

Now I’m perfectly satisfied, ready to put on some jammies and comment it up on your lovely blogs.

On a side note: How does Grey’s Anatomy always manage to make me cry lately?!? And how did Denny come back?? I’m so glad he did, but a little confused over here :/ Guess I’ll have to wait til next week to find out…

I think honey and greek yogurt are just made for each other.

How do you like that goat cheese? I’ve never had any goat cheese other than the crumbly kind they serve on salads.

Yay a breakfast cookie! I’ll have to try this one, and soon. How many (ish) calories do your breakfast cookies tend to total after mix-ins? Do you eat it plain or with something else?

On the yogurt — I really think that honey flavor is the only way to go with Oikos. I don’t even really like the texture of the plain Oikos, although it’s better in the large tub than in the 90 calorie container. I love the honey, though!

The vanilla oikos you had was NOT a fluke. I definitely had the same experience with honey being way better than the vanilla. It is my favorite flavor–no question. I had the blueberry today…meh…it wasnt that great, but let me know how you like it!

ps. can you make the cookie without protein powder?? it looks great!

I am so confused by Grey’s too!!! Is it weird that I kind of want Denny to go away because he’s supposed to be dead and it bothers me that he’s there? And I cried tonight too…I really don’t know why, probably because of Denny.

I tried a vanilla Oikos first, then a honey, and I def. like the honey a lot better. But Oikos is the only Greek yogurt I’ve ever tried, so I’m no expert.

How did I never know the breakfast cookie was COLD?!? I feel like I’ve been out of the loop for so long- what else isn’t what I thought it was? Haha.

great recipe for the oat yummy cookie. So simple though. I’ve never had raw oats, i mean without cooking them. But I guess it’s okay to eat anyway. Have to try it!

Gina I cried hysterically last night- you’re not alone. Not sure if it’s because it’s THAT week (if you know what I mean) or because the episode was just that sad. Death is just so sad and to think about how Izzy is feeling is just devastating.

I don’t think he’s really there, I think she is just going through some type of psychosis. I am anxiously awaiting next week’s episode though!!!

I love the breakfast cookie idea! My husband’s grandmother makes cookies like this called “no-bakes”, I never thought of health-ifying them! And, Oikos honey yogurt is AMAZING…its one of my new favorites. :)

I ate a breakfast cookie before my run today.

I just leave my mixture in the bowl that I make it in rather than press it onto a plate. It doesn’t look like a cookie, but it’s still good.

ok so i decided to make one of the breakfast cookies that evreyone has been talking about on the blog world and i used your recipe! so i did basically everything correct, except for the fact that i put my cookie in the freezer overnight instead of the fridge! so that is why the next morning my cookie was a tad bit hard! whoops. luckily jenny from pb & jenny told me i was supposed to put it in the fridge! so now tonight i have an excuse to make one again tonight and try it out! i used 1/3 cup oats, 1 banana, 1/8 cup milk, and 1 tbsp. pb. i mean the cookie was really good towards the end when the cookie was a bit softer and i could taste everything in it versus when i took my first bite the cookie was ice cold and had like frost on it! haha
