Hello. I just found your blog and let me just say "Thank you!". My biggest problem with having Celiacs Disease and being healthy is that I run out of creative ideas, get frustrated, and make poor choices. I am very interested in your breakfast cookie, but Quaker Oats are not actually gluten free. For majority of people they should be fine, but with the severity of my disease, I cannot risk it. Have you ever tried making it with something like Bob's Red Mill Quick Cooking gluten free oats? Will it come out the same?

(I cannot wait to make chilis rellenos for breakfast!!!)

Thank you!

[...] Breakfast cookies are good, too! It’s been a while since I’ve had one, but it was just the thing on my mind as I sat with my cookie dough-bellyache and tried to think about Chemistry. It’s a great bring-with-you breakfast food (or anytime snack) because you only need one container to make it in, and it needs at least 15 minutes of “resting time” anyway, for all of the ingredients to gel together.
[...] The Breakfast Cookie. This is definitely something worth waking up to! I made it a cinnamon raisin version with vanilla protein powder, a dash of cinnamon, and some raisins to add the finishing touch. I enjoyed this right before we left for our trip. [...]
