Heyyyyyyy! I am so overwhelmed with warm fuzzies from your incredible comments regarding the pilot’s return. You all helped this deployment go by so much faster and I hope you know how much I truly appreciate your support! As you can probably imagine, I am ECSTATIC for him to be home!!!! He’s been sleeping a TON (6 months of flying and sleep deprivation caught up to him) but knowing he’s here is absolutely amazing.
I don’t want to bore you with every morsel to cross my face for the last 3 days, but here’s some of the more exciting stuff:
Whole Foods meal before leaving O-town:
The BEAUTIFUL meal Megan made for us when I got home Sunday night:
Raw zucchini pasta with raw pesto sauce, bell peppers, tomatoes and eggplant bacon:
Raw vegan lavender ice cream with blueberries!!!!!! (yes, my best friend spoils me with her amazing cooking)
Something NEW: Sweet potato hash with eggs!
Serves 2
-1/2 yellow onion
-1/2 red bell pepper, 1/2 yellow bell pepper (diced)
-2 cloves garlic, minced
-salt, pepper, paprika, chili powder
-1 medium sweet potato
1. Sweat the onions and garlic out for 3 minutes over medium high heat (with a little splash of EVOO)
2. Reduce the heat to medium and add the bell peppers and sweet potato
3. Season with salt, pepper, 1/2 tsp of paprika and 1/2 tsp of chili powder
4. Cook over medium heat for 7-10 minutes
The pilot’s request for his first dinner back home was red enchiladas:
I used Tyler Florence’s recipe – not to toot my own horn (toot toot?) but I’m thinking they were amazing. Couldn’t taste them because of the chicken, but they smelled GLORIOUS.
We also had homemade guacamole, brown rice chips, Amy’s vegetarian beans and I had a Mexican salad:
Last night I was feeling “bakey”, so I made some vegan spelt cookies from Eat, Drink and Be Vegan:
So gooooooood. I’m way excited to make some more dishes from that cookbook!
This morning I woke up to some delicious Eggplant Bacon that was “cooking” in the dehydrator (from Matthew Kenney’s Everyday Raw):
And also had 1/4 cup oat bran, 1/4 cup multigrain oats, brown rice protein, almond butter, mashed nanner, cinnamon, vanilla, sea salt and a crumbled cookie:
Next, I took the babies to the base trail for their walk:

As far as the workout portion of my life, it’s been pretty nonexistent lately. My legs hurt like the dickens. Seriously. Walking down the stairs in our house is a major production and I have to hold onto both sides and hop down. I’ve been doing a little yoga and tons of stretching every day, but I was wondering is it ever going to go away?!?!
I’ve had to cancel almost all of my aerobics classes this week (which I hate doing but my body would hate me even more if I tried), except for spin because I can teach that without actually having to do it. Tonight I’m going to *try* to teach Zumba…. we’ll see how it goes!!!!!!!

My favorite oatmeal addition is any type of fruit. Apples, Bananas, or any dries fruit.

i love oatmeal (blended into a bran consistency before boiling) with a drizzle of maple syrup, a tiny amount of ground flax seeds and a few fresh blueberries….. so delicious!

I’m always adding new combinations of fruit and nuts to my oatmeal – but two things are constant: milled flax seed and brown sugar!
my favorite add is any kind of fresh fruit! i usually add ones that are in season. my favs are blueberries, bananas, blackberries and strawberries. i also like to add ground flax, walnuts, almonds and raisins
mmm, organic blueberries and cinnamon are must-haves in oats.

My favorite oatmeal addition and go crazy when I run out, is flax seed meal. It’s so yummy!
