WE’RE GOING TO NEW YORK!!!!!!!!!!!!!!!!! Ahhhhh I’m just so excited! I’ve never been but have a feeling I was destined to live there ;) We’re going with Megan and her pilot for Memorial Day weekend and I’ve already talked to Gena about organizing an NY bloggy meet up :D More details to follow!

So the rest of our Orlando weekend was pretty mellow. We hit up the beautiful Whole Foods and got some groceries and lunch.

Of course I had to hit up the hot bar:

My meal was absolutely horrible:

I think it’s a secret blessing that the closest Whole Foods is 3 hours away. Otherwise, we would be in the poor house.

I held a fluffy cuddle bug on the way home:

I also snacked on some Mary’s Crack

I’m pretty sure you could put curry on a shoe and I would eat it :D

When we got home, I put away our groceries stash:

Puppy treats, garbanzos, peach cups, Thai coconuts, Larabar, dried fruit, vino, carob powder and nanners

Sunshine burgers (made out of VEGGIES and not soy), mangoes, carrots, almond butter, more coconuts, and Quorn cutlets (made out of FUNGUS and not soy hahaha)

Coconut water, sea salt, coconut oil, eggplant marinara, hot salsa, dried unsweetened coconut (macaroons? yes), Amy’s frijoles, apricot preserves

I spent the evening working on Week 2 of the Summer Shape Up and crashed out!

This morning, I wasn’t too starving when I woke up, so I just had a nanner with AB before cleaning the casa, picking up Viesa from Megan’s house (who stays with Megan or at the pet resort when we go to O-town because she’s tried to eat my aunt’s yorkie), and then made some juice.

Megan was so sweet and gave me some food she made to have for lunch.

Raw “rice” (made out of jicama) with bell pepper, onion, lemon juice, salt and pepper

And raw baba ganouj (which I dipped some carrots into)

I did a LOT of Betty Crockering up in herre today…

Made eggplant bacon to put in the dehydrator:

I’m stoked to have this with b-fast tomorrow!

And I used the carrot pulp from this morning’s juice to make some raw carrot curry bread:

Also whipped up some Super Charge Me cookies from Eat, Drink and Be Vegan:

I took the cookies to work for my Summer Shape Up group to show them that there is such a thing as healthy and delicious treats :D

I can’t even say how proud I am of everyone doing the Summer Shape Up- you’re doing such a great job and everyone in my group at the gym lost weight already (I’m checking their body fat again at the end of the month). Three months is a PERFECT amount of time to see a huge difference- stick with it and remember change creates change.

Well, I’m stinky from teaching Zumba so it’s time for this girl to shower. Maybe I’ll hang out with my pilot before he has to go to bed ;)

NY is going to be a blast! What a great trip idea. :)

I am totally the same way about curry; you can add curry to anything and it clearly increases the yumminess by a hundred times!

That’s kind of funny (and scary!) that Viesa has tried to eat a yorkie. :P

carob powder?? for something like hot (carob) chocolate?!! That would be delicious! Or, I bet you are going to include it in some creative smoothie or something, knowing you!

And Gina, New York is going to be AMAZING….I’ve only been once, but loved it, and the bucks is on every street corner, so i’m sure you will be in coffee heaven!

I really need some coconut in my life. Every day when I read your blog, I tell myself this but I never get off my butt to get some. Maybe on my day off this week, I will. Whoooo knows…

I’m not sure if you’ve tried the Quorn chicken before, but I LOVEEEEE it. I’ve only had the breaded patties, but they tasted amazingly like chicken and I really enjoyed them a lot.

I feel obligated to draw you a map so you can see the whole foods at the base of central park, the whole foods at the base of union square and the various other trader joe/whole foods around the city :) Hope I can make a meet up!
