Why hello bloggies! HAPPY FRIDAY!!!!! aaaaand Happy 21st Birthday to my cousin Steph ;)

Sorry I wasn’t able to give you guys a real post yesterday! It was a little hectic around here but things can chill now. I’m done with school AND working at school!! I’m actually at work right now, but today’s my last day.

I’m not sure if I’ve written about it yet, but I’m quitting the MBA program here. After a year of absolutely hating it, not learning anything and wasting time (and dinero) I decided to pursue my MBA at another school. I’m not sure where I’m going to go yet, but will most likely start an online program through another university in the fall.

So Wednesday night, I was a bad blogger and forgot my camera when we all went to Indian. It was a LOT of fun (there were 9 of us) and I ended up trying something new (Goa shrimp) :D

Yesterday, I had something I’ve been wanting for bfast for a little too long:

I did some Namaste Yoga on FitTV and then went into work for a little while.

When I got home, I was really craving soup so I had a bowl of Amy’s split pea soup and a spaghetti salad:

For the salad, I put some zucchini in the spiralizer and topped it with tomato, 1/2 avocado, lemon juice, fresh dill from our little garden and Goddess dressing.

After lunch, I met some friends at the gym and did Day 4 of the Summer Shape Up. There were 5 of us doing it together which made it a lot more fun, and the squat jumps even more hilarious ;)

I stopped by the casa for a snack and to grab my stuff to teach step.

I had a juicy, perfect mango:

Step was AWESOME and after teaching, I had to go back to the other gym to meet with one of the DJs and their Summer Shape Up group. I had 1/2 WCMN Clif bar on the way there.

I measured their body fat, weighed everyone, went over the eating and workout plans, and then finally came home to my pilot and puppies to make some dinner.

Megan stopped by to eat with us after work, and I put out some Tuscan White Bean dip:

I LOVE quiche. Seriously. I can’t believe I only recently started making them because they’re super easy and muy delicious.

It was a lovely evening with the tricycle ;) (The pilot, Megan and myself)

I had yet another bfast cookie this morning.

Next time, I can’t stay away from these for so long… because then I just want one everyday :D

As you might have noticed, I didn’t eat as *raw* as usual yesterday. Honestly, I didn’t have all of the ingredients to eat like I would have wanted to (smoothies, raw pasta, oats groats for bfast, juice ingredients). Thank goodness I can get stuff in Orlando this weekend :D

 In all of my raw ‘cook’books, many of the recipes are primarily based on different types of raw nuts. I’ve been kind of confused about that aspect of the cookbooks for a while, and have adapted recipes and measured the nuts while using these cookbooks to ensure that I was using correct portions. Too much of anything is not a good thing and while healthy fat is definitely good, feasting on nuts all day is a one way ticket to tighter jeans and a tummy ache.

I asked Megan about the nuts aspect of the cookbooks and she said the purpose of eating raw is to consume foods that are simple and whole. Nuts are very dense and used in many of the recipes to create a raw version of a meal that you might be wanting. She said a lot of the cookbooks have recipes that are meant for entertaining or for replacing cooked food that you might be craving, but not meant to be consumed for every single meal. She also suggested that if I’m going to make an entire meal from those cookbooks (like for a party with appetizers, entree, dessert) to eat as simply and light during the day so that I don’t get sick from eating such a rich a dense meal.

I’m hoping Megan will start her blog already…. I learn something about raw foods or nutrition almost every day from that girl ;)

Today’s tip: If you have bananas that are starting to ripen faster than you can eat them, peel them and put them in a ziploc bag in the freezer. Add them to a smoothie instead of ice—it makes the smoothie thicker since ice waters it down and in my opinion, every smoothie needs a banana :D

those breakfast cookies are ADDICTING, right??!!? I made one two nights ago and I ended up eating it an hour later before I went to bed! they just sit there in the fridge, calling your name…… irresistible!

Good luck with finding a new MBA program. It sucks to spend money and time on something to get a degree and learn nothing in the process!

Good for you and your decision to do your MBA elsewhere – you definitely should be getting what you want out of the program. I just started my MBA (part-time) a few months ago, and so far so good. Good luck!

i asked about breakfast cookies once and a whole slew of lovely ladies linked back to your site. you must be the guru of the bfast cookie! :) i am excited to try one out successfully, i am on soft foods for a couple weeks but when i am back to normal a bfast cookie is at the top of my list.

interesting info about not consuming that stuff at every meal, it makes sense, thanks for sharing that.

also the tip aboun bananas! i have a frozen dozen in my freezer at all times, i agree it makes the smoothie way more creamy and ice creamish as opposed to using ice!

What's in your white bean dip? That looks like something I would LOVE :) BTW….I think you should trust your gut and not give yourself a hard time about the MBA dropout. You are an ambitious, smart gal and you are already working so hard! Give yourself a break to figure out what will make you happy and satisfied :) Take care & hellooooooooo……TGIF!!!

Come get your MBA at UGA!!! It’s only 4 hours-ish north from Valdosta, and you would love Athens! Ok, I’m very biased (and emotional about my school since I just took my last final), but you should consider it :)

I need to get on making myself one of your famous breakfast cookies! now that it is warm outside, warm oats just don’t seem as appealing…

Hey girl!! That dinnertime salad looked amazing.

That is absolutely right about many raw recipes. As you know, I follow a very particular kind of raw foods philosophy–with an emphasis on digestive health and clean, simple eating–so those heavy nut entrees are not for me either. I’m trying to give lots of examples of non-nut based dishes on the blog. Nuts are awesome now and then, and rich meals are fine for company, but they’re not the most ideal human food.

Every time I try to make your breakfast cookies, I end up messing them up! Last time mine came out alright, but I think I need a less earthy tasting protein (I’m using living harvest help original) to make this superb.

I love how when you host, your spreads always look SO AMAZING. I luv that bean dip and all the cheese and veggie plates. AWESOME.

I’ve heard raw foodists say the same thing Megan did about all the heavy meals – they mostly eat lighter meals and stay away from the dense stuff. Too bad because I swear I could love on almonds, but you’re right…sometimes I tend to go a little overboard. For instance, I bought a jar of 365 almond butter 2 days ago, and it’s half gone! 14 servings my a$$.

I’m glad you decided to switch MBA programs. Being miserable for another year…no thanks! Wise decision for sure.

So excited about your upcoming podcast…I can’t wait to listen. Oh, and I LOVE Patagonia’s sports bras – thin straps. My favorite!
