Hey guys! Happy humpday! Thanks so much for the name suggestions for Megan’s blog!!!!!!!!!! They were witty, hilarious and so much fun to read. Ya’ll are awesome :D We have it narrowed down to a few and will let you know when she gets her blog up and running!

So ast night, I taught spin and had to rush to the wives’ coffee which was a lot of fun. There wasn’t too much food I could eat there, so I had a little melon and grapes and came home chewing my arm off starving.

So I broke into the freezer for  a very sacred meal:

Those aren’t any tamalers…. those are homemade Tucson tamales. We brought them back and honestly, I felt so selfish eating two because we only have four left now, but what can I say, I was really, really hungry ;)

This morning, I had an almost-repeat of yesterday’s bfast:

Eggplant bacon (recipe is in Everyday Raw)

Oat groats soaked overnight with a smashed banana and 1/2 macaroon (aka Coconut Cream Pie) Larabar

I walked the puppies and then stopped at the commiscary for groceries for Thursday night’s girls night :D

I SAW THE PILOT FLYING TODAY. Not gonna lie, it scared the bejeezus outta me. I knew he was flying most of the morning and he told me he was going to be the 3rd jet in a 4-ship (4 jets). Driving onto base, I saw the plane he flies up in the air. The first one flew past, then the second one, and then THE THIRD ONE which I know was my husband. It shook me up a little bit!!!! It’s funny –a lot of the wives feel the same way- because we all know what our husbands do, but actually seeing them up in the air is a bizarre feeling. I thought I was going to be tossing oat groats on the side of the road, if you know what I mean.

So after all of that, I came home and had a piece of raw cheddar before starting to clean the casa:

I also peeled a jicama root and put in the food processor to make “rice” like Megan brought over the other day.

It TOTALLY looks like rice and I love the crunchy texture and slightly sweet taste. I’m a fan and am going to have a lot of fun experimenting with the “rice”.

Based of an Ani Phyo recipe for her Love the Chicks Pate, I made a cheesy paste to have for lunch.

I used 1/4 cup raw cashews, tumeric, chili powder, sea salt, 1/2 tbs of nutritional yeast and 1 tbs of water.

I spread the pate on some collard leaves and topped it with orange bell pepper and swiss chard from our little garden:

And rolled it all up:

Next, I seasoned up 1/3 of the plain jicama “rice” (which was a LOT) with bell pepper, grape tomatoes, lemon juice, cumin, garlic powder, cayenne, sea salt and cilantro.

I’m going to get back to cleaning the casa since Megan and I are going to Jacksonville tomorrow for Bikram and shopping, then teaching spin and Zumba and feasting at Indian.

Oh my gosh, I just couldn’t imagine looking up in the sky and knowing that my husband was up there strapped into a jet and flying around…crazy!!!! Those tamales look AWESOME!

I have a good friend whose husband flys and it makes her super nervous too! Ocassionally, they take a private plane (they own it with a bunch of other pilots and their wives) on vacation and she has to take massive amounts of drugs before she gets on the plane hahah. LOVEEEEEE jicama! I must try it in “rice” form. I love how its just slightly sweet. Sounds like you have some awesome plans for the rest of the week!

Lunch is absolutely beautiful! It looks fresh and delicious. I’d be totally freaked out to see my hub (if I had one) fly too! I just wouldn’t be able to do it, lol. Have a great rest of the day!

Count me in for sure! Could we go to raw place so that way some of us who are less familiar with options can have the opportunity to try some things? Hey Gina! It looks like you had a fabulous time in Orlando. I love that the pilot likes Kombucha. And hurray for your upcoming trip to New York! That’s awesome!

I’m so excited that Megan is planning to start a blog! Can’t wait to hear more!

Mmm…love the looks of those Tucson tamales! And wow, that jicama does look like rice! I love all of your raw meals.

Last but not least, I just wanted to tell you that I think it’s great that you are looking for a better MBA program. It’s definitely not worth doing something you don’t enjoy, so I’m very happy for you!!

Enjoy your Wednesday! Oh, and to answer a question you asked me last week, YES, we are planning on having the wedding in Arizona as of right now. But I really have no idea on details yet. I would love to chat with you sometime about some of the ins and outs of an AZ ceremony :o ) But we have quite a while, so no rush!

ALL the food on todays’ post looks amazing!

I know what you mean about knowing what your husband does vs seeing him in action. Mine is a submariner and headed back out on mission yesterday. We were on an overlook about 1000ft above sea level and I saw him on the bridge driving. Not as hair raising as if he were flying, but strong feelings no less.

YUM to that raw lunch!! It looks incredible! Whenever I see tamales, I always think about how my cousin dipped the entire thing in a bowl of ranch dressing, oy vey.

lunch looks super yummy. I’ve had to catch up on a weeks worth of your blogs. I just got back from vacation, and completely repelled technology while I was on it. I’m super intrigued by this jicama, going to have to try it. I’ve learned of s0o0o many awesome foods since I’ve gotten into the blogging.

This is my first time posting, but I have been considering getting certified to become a spin instructor for a while now and I realized you might have some advice! I’m just about to graduate college and have always loved spinning classes as well as motivating my teammates during extra practices for crew and i thought it would be fun. The certification seems a little pricey but do you think that it’s worth it once you start teaching? How long after you got certified did you start actually teaching the classes? Any info would help :) – Cathy

I think it’s adorable that you got nervous watching the pilot fly, but I also sympathize with ya since my mom’s bf flies planes for fun, and whenever she goes up with him (it’s rare) it freaks me out!!

Love homemade tamales!! No more for me anymore :( . The only ones I ate were my lovely grandmas but she passed away earlier this year before I get her to teach me to make them. Never had jimaca. Sounds interesting.
