Hope you’ve all had a great day! So glad you’re liking the vacay re-caps so far—I’ll post the final one tomorrow. I’m still in vacation mode!! It feels like I’m moving in slooooooooow motion compared to the super-speed New York pace, and calling coming back “depressing” is a little bit of an understatement. I just want to walk around, shop and drink bloody marys but alas, here I am in Southern Georgia.

For lunch, I made something DEEEEELICIOUS:
Fal-awesome wraps!!!!
The star of the show was a Sunshine falafel burger:
Here’s the ingredient list for those who are interested:
Organic cooked brown rice, organic ground raw sunflower seeds, organic chick peas, organic split peas, organic tahini, organic sesame seed paste, organic parsley, organic sumin powder. organic garlic and sea salt
Nutrition Stats:
Calories: 230
Total fat 11g (Sat fat 1g, Trans fat 0g)
Cholesterol 0mg
Sodium 260mg
Total carbohydrate 25g (Dietary fiber 6g and Sugars 1g)
Protein 10g
Not too shabby, ehhhh??
As soon as I heated the burger up, it smelled ahhhhhmazing. I love falafel and thought it was so sweet that Sunshine made a burger based off this delicious food. I just don’t think they can have the word “awful” in them, hence the “fal-awesome”
For my meal, I made a yogurt dill sauce
-1/4 cup plain nonfat organic goat milk yogurt
-1 ts cumin
-1/2 tb each of coriander and chili powder
-sprinkle of garlic powder and sea salt
-palm full of fresh dill from our little garden
-juice from 1/2 lemon
Next, I split two giant collard leaves in half and removed the ribs and topped each collard halve with 1/4 falafel burger, 1/8 yellow bell pepper, and 1/4 of the yogurt mixture
All rolled up:
This was INCREDIBLE. If you have access to Sunshine products, definitely pick up some of these falafel burgers- I’m thinking you’ll love them. Let me know if you give the recipe a try!
I taught a sweaty, sweaty spin class tonight. The AC in the gym was BROKEN and of course, all of the people that came were taking their first class ever. I felt so bad for them- hopefully the sauna class didn’t scare them away.

Oh my gosh! Our AC was broken a couple weeks ago and it was AWFULLLLLLLL! I have never tried falafel but really want to. Everyone says falafel is so yummy! Have a good night chica

MMM those look love lovely! They don’t sell the falafel burgs here (so behind the times it’s upsetting) but I have other ones and would love to replicate your lunch with a tweak or two. I’ve been scared to try collard leaves for wraps but I’m ready to face my fear!
After seeing Sunshine burgers on your blog, I finally tried them this weekend and I loved them. I can’t believe they are made in Ellenville, NY – only about an hour away from where I live – and it took me this long to discover them! I love the collard falafel. Great way to have a healthy, low-carb meal. I like that there aren’t too many ingredients in the falafel burger.

My husband grilled up Sunshine burgers last night. They are so good!
I’ve seen the Sunshine burgers, but never the Falafel variety. I love falafel so I imagine that I would love those. I’ll keep my eyes peeled.
I’m so excited to try the falafel variety, I just found out last week they had them! The wraps look great!
