Happy humpday! The weekend is in sight!
You won’t believe this but we saw Little Friend last night! He’s alive and well- still romping around Valdosta. We took the puppies out laaaate –our Mario Kart sesh lasted a little while- and he was across the street, sitting by the neighbor’s car in a very statuesque manner, watching us. We’ve left food and water out for him each night –and the food is gone when the pilot leaves for work- but now we know he’s been eating it (and not raccoons or something weird). He’s our unofficial pet
Today has been full of comforting eats…
I was long overdue to make some of these:
RAW MACAROONS
This batch is chocolate cinnamon… check out this foodgasmic dough
And lunch was a new raw creation: Cheezy mushrooms and “rice”
I made some jicama rice and set it in the dehydrator to warm up a little
Next was the “cheeze sauce”- 1/4 cup soaked raw cahews, lemon juice, chili powder, nutritional yeast, tumeric, garlic, filtered water, sea salt and pepper
I stirred half the cheeze mixture into the rice and then topped with portobello mushroom slices that I marinated in a little EVOO, garlic, salt and pepper and dehydrated this morning for a few hours (I randomly put stuff in the dehydrator at various points during the day and it makes creating food a lot easier!)
I topped it with the rest of the cheeze mixture and some chives from our lil garden and stirred up the goodness
I’m speechless. All I’ve got is: nom nom nom….
Since I haven’t had anything green in my life yet today (besides the chives and a multivitamin, which isn’t “real” food- just insurance), I’m gonna juice it up before I go to teach spin and Zumba.
I’m so glad you’re liking my diet musings so far! I’ve definitely tried quite a few things before I found what works for me and I think it’s awesome that ya’ll can learn from my diet blunders and make decisions on how to ideally fuel yourself.
I’m off to take these puppies to PetSmart and then a little yoga (for sanity purposes), teaching spin and Zumba and INDIAN DINNER!!

I've been reading your blog for a while now – but never commented – I have to tell you that I love you blog. I love seeing all the wonderful food you make and all the healthy decisions that you decide to make throughout your day. It makes me realize it CAN be done and all you need is a little forethought and a positive attitude!
Quick question – I know you can't post all the recipes you use, but could you post your top five cook books or websites that you get your food ideas/recipes from? Maybe even make it an extra link somewhere on the blog "Fitnessista recommends…."?

Yum, that sounds like risotto! Have you ever tried making "rice" from cauliflower? I'm not a huge jicama fan but that recipe sounds so good.

I'm obsessed with jicama these days, but I haven't tried it in rice form…just been spiralizing the heck out of it. Yum – I bet it would be so good with a cashew cheese sauce, but I can't stop eating with with Gena's guacamole!

I'm really enjoying your blog with all the raw foods. Your mushroom dish sounds delicious and your macaroons…. Well, they are making the dehydrator sneak up my list of wants! After catching up on your blog last night, I dug out my copy of Ani Phyo and today we will eat her persimmon and candied pecan salad.

That's great about the little doggie yay! I'm a HUGE animal lover, raccoons and all! We even do the live mouse trap- I hate to see any animal hungry or sad
I even saved a opossum one time and the hubby took it over to the DNR and they nursed him back to health!:D I think that it's AWESOME you helping the doggie like that!

That is so neat you are from Valdosta. Georgia is my absolute favorite state. I've been going camping up there with my family since first grade! Stone Mountain right outside of Atlanta and Helen, GA are my favorite spots!
Stone Mountain has a great trail around the entire mountain for running/hiking. If you haven't been there yet I'm sure you will love it!
