HAPPY INDIAN FOOD DAY! Hope your morning is off to a great start.
The wives coffee last night was awesome. Each month, the wives in our squadron get together to have some wine and complain that our husbands work too much talk about upcoming events and catch up with what’s going on. We have a theme each time we meet (Bunco, wine party, restaurant coffee, charity meeting –where we talk about events while doing a philanthropic activity or each wife will bring something for charity) and last night was a taster party. Half of the wives brought appetizer/side dishes and the other half brought desserts, and we all brought the recipe for the host who will email them all out to everyone.
Since I was bringing an appetizer, I had my heart set on herbed goat cheese on endive but after I got all of the ingredients except the endive and Publizzle was out, I googled like crazy looking for something new to make. I decided on goat cheese stuffed mushrooms.
They came out pretty much amazing. The only thing I changed about the recipe was that I used Ezekiel bread instead of white and 1.5 garlic cloves instead of 1. The pilot and I split one before I left for the coffee and he begged me to make them again

I didn’t end up taking pics at the coffee. I had a glass of wine in one hand and food in the other, and it just would have been awkward with everyone around. My friend Kelly (who hosted) made a giant hummus and veggie platter (god bless her) that I went to town on, and I also had 1/2 pumpkin whoopie pie thing that Jeni made, some apples and pumpkin dip that Ash made, a couple bites of trifle and evil poppyseed cake. Oh, and a glass and a half of beautiful red vino.
I came back to the pilot, who did the dishes since the dishwasher is still broken (whatta guy!), practiced wine-induced Zumba and crashed out.
This morning, the puppies and I set out on our walk, got rained on, and came back to make a PINK smoothie.
(Almond milk, almond butter, banana, frozen strawberries, mesquite, chia seeds, sea salt and Stevia)
I remembered that my kale chips were ready and decided to have some with bfast.
As I scooped the chips into the bowl, the circulating air kept flinging chips at me. It was like a raw food vending machine…and it was awesome
Today’s plan:
-Make cookies for Zumba class (I promised I’d bring treats if they didn’t ditch me when I got back from school)
-Burn spin and Zumba CDs (I’ll post the playlists for ya later today)
-Practice Zumba dances
-Call Dept. of Ag….. again
-Clean/laundry
-Teach Spin, Zumba, training appointment

I love the pictures with the glass straw! I really want to get one of those. The stuffed mushrooms look sooo good..my hubby loves mushrooms and he would LOVE these.
I am so completely glad you found me again, because it reminded me to find you! I missed your gorgeous face, girl! And all your stellar recipes, especially since I’m just now getting into making raw recipes (I know, I know, what took me so long?)

I make instant kale chips in the oven.
They are absolutely addicting. It’s probably a good thing I can’t get kale anywhere right now.

Yum! During family holidays, there were always stuffed mushrooms – they were my favorite, ever. Its been so long since I had one!
