Sweet Potato Black Bean Chili
- 2 medium sweet potatoes, peeled and diced
-1 small sweet onion, small diced
-1 red bell pepper, seeded and diced
-1 can organic black beans, rinsed and drained
-1 14 oz can organic fire roasted diced tomatoes, drained
-1.5 C organic veggie broth
-3 garlic cloves, minced
-1 T chili powder
-1 t cumin
-1 t paprika
-pinch cayenne
-1/2 t sea salt
-1 lime (for splash of juice at the end)
Combine all ingredients into a slow cooker (except the lime), sprayed with nonstick spray.
Cook on low for 6-8 hours.
If you’d like to add meat –I did this for the pilot-, bake an organic chicken breast seasoned with sea salt, pepper, and chili powder, dice and put into his bowl.
Add chili and FEAST

After reading your last post, I found a similar recipe online, went to Target to buy a slow cooker, and am happily awaiting this chili as my very first crock pot meal. Already smells wonderful!!
After reading your posts I discovered that eggs could be cooked in the microwave. I know I’m late and all but I can’t seem to figure it out. Do you scramble it and cover it or just scramble it and leave it for a bit?
P.S. That chili looks sooooo good! I should really invest in a slow cooker. It makes life easy and food fabulous.

Random comment: I totally thought of you tonight because I was studying at B&N, saw a fox of a man, and proceeded to muse over what a good place a bookstore is to meet fellows, for the obv reasons, and then I chuckled to myself thinking how many other girls/people in general share the bookstore gameplan……then I turned to internal reflection, wondering, um…is it weird that I spontaenously thought of a blogger—-in a wholly non-blog or otherwise online related context, mind—whom I’ve never met but with whom I feel a kindred spirit? I concluded that 1) yeah, it is pretty weird and 2) I don’t really care that it’s weird.
Random question: your hectic schedules make me curious–approx how many hours of sleep do you get each night? as with food and exercise, everyone’s needs are different, but I am curious! have a wonderful night

Sweet potatoes are amazzzing! Do you think that your recipe could be adapted to not be made in a slow cooker? I do not have one!!
It is on my list for the holiday season!! I can never make any recipes involving sweet potatoes b/c I like them so much on their own! I know that if I try something though that new flavors will bring a whole new dimension to the sweet taters..righ?!

Yum! Black beans + sweet potato = combo made in heaven. I made a similar chili with bsquash once, but the sweet potato sounds much better!
