Vegan Power Cookies

Hey everyone! Thanks so much for your good vibes and wonderful tips on the blood work <3 Too bad THIS got in the way:

A breakfast cookie? Yup. I made one with vegan chocolate chips to bribe myself to be brave when I got to flight medicine, only to find out that you can’t have blood taken if you’ve just eaten. Whoops :/ So I have to go back—probably tomorrow. Please save those good vibes for me!

When I got back to the casa, I still had cookies on my mind.

So I put on the coolest apron I’ve ever seen (thank you POM friends)!

Then I got cooking! Don’t you just love when recipes appear in your brain?!?

Vegan Power Cookies

With maca, nature’s superfood for energy, goji berries, raw brown rice protein and almond butter, these cookies are perfect for a pick-me-up, any time of the day 😀

Dry ingredients:

-150g spelt flour

-1 scoop Sun Warrior vanilla protein

-1/2 cup old fashioned oats

-1 T maca

-heaping t of cinnamon

-pinch sea salt

-1 t baking powder

-1/2 t baking soda

-1/4 cup goji berries

-1/4 cup vegan chocolate chips

Combine all ingredients, except for goji berries and chocolate chips, in a large bowl. Add the goji berries and chocolate chips, stir to combine and set aside.

Wet ingredients:

-1/4 cup canola oil

-1/4 cup Sucanat (or unrefined sugar of your choice)

-1/4 cup grade A pure maple syrup

-2 T raw agave

-3 T raw almond butter

-1 t molasses

In a separate bowl, combine the wet ingredients and thoroughly mix. Add the wet ingredients to the dry, stir to combine but do not overmix. Bake cookies on a parchment lined cookie sheet for 8 minutes (9-10 for larger cookies). Leave on baking sheet for 1 minute, transfer to a wire rack and allow to fully cool.

If you’re not too full from eating dough, try one out:

Now, get away from the computer- go make some! I might add in an additional T of oil because they were a tiny bit dry (but I also overbaked them by a minute, so you should be bueno).

Something to do: Take 5 minutes today to sit cross-legged or lay down, play some music, and clear your mind. You’ll be amazed at how serene you feel when the 5 minutes are up 😀

    I noticed you travel quite a bit, if you are ever in Baltimore you need to check out this airport diner for quick healthy eats! Wish there were more of these!!!

    question for ya: what is the big difference between chocolate, vegan chocolate and carob (mainly in taste)?? I have had chocolate (obviously) and carob, but never vegan chocolate chips.

    I have a POM apron waiting for me at home when i get back to Texas, SO STOKED because POM is such an amazing product!!!! i will wear my apron proudly 😉

    on the flip side,
    do you use spelt flour because you specifically like it? is there something texturally simliar in case, ehem, family members freak out when i tell them i use spelt flour lol

    I didn’t know that about the blood test. I didn’t have to do anything differently with my eating. Were you getting your sugars counted? I know that’s a process unto itself.

    I ate my first breakfast cookie this morning and loved it! I am doing another one for tomorrow.

    Those cookies look amazing! I have been wondering for some time now about the Sun Warrior protein powder. How long have you used it? Do you like it better than any other protein powders you have tried? I am trying to find a good protein powder that is not whey protein because it bothers my stomach. I also don’t want to feel like I am eating grass or dirt. Any suggestions? Do you know if Sun Warrior has sample packs? Thanks!

      hey mia!
      i’ve been using the sun warrior for a few months and love it. it does have a slight chalky taste, but it’s pretty tasty and can easily be “doctored up” with some stevia and cinnamon. it’s by far my favorite protein powder

        Thanks for the reply! I think pretty much every powder is “chalky”. Just don’t want to chug mud, ya know? I think I’ll give it a shot. If it’s horrible, I ship the extra to you. 🙂

    OMG love the ta-tas apron! I have the Hooters one and I LOVE it – but not as much as I love that one 🙂
    I think I could even make those cookies with stuff I have! No maca but I can kick it without, right?

    These just came out of my oven and will be enjoyed during our family game night. I added a splash of applesauce to ward off any dryness. I wasn’t sure what to cook them (I’m no baker, hehe!), so I popped them in at 375 and after 7mins they were perfect. This is most definitely a keeper! Thanks!
