Fancy a Scone?

Hey hey hey :D How are ya?

When I saw that my dear friend Heaby made her own coconut butter yesterday, I couldn’t wait to get in on the action.

As we all know, I have no luck whatsoever making “butters” of any type. Patience is not my virtue when it comes to nut butters –I want to open the jar and eat it. Not make it- but I was hoping I would be a little better with this attempt. I was a little wary after my smoking Vitamix incident.

I put the shredded coconut in the Vitamixalicious:

And within 20 minutes, it had transformed into dreamy coconut butter.

I put it into a mug and started to think of things that I could “frost” with coconut butter:

(Side note: Did anyone else have a mug of bacon fat in the fridge growing up?? The madre used to use it for crack pancakes. I like to think the coconut butter in a mug is a healthy replacement, and still makes me feel nostalgic)

When I got the following tweet, I knew it was raw scone time.

I conjured the following recipe out of my brain:

Raw Lemon Blueberry Scones

Makes 1 Gina-hungry scone, or 2 smaller ones

1/4 C Oat groats (processed into fine flour in a coffee grinder)

1 t ground flax

8 raw almonds

pinch sea salt

1/2-1 t lemon zest, 1 t lemon juice

1/8 C + 1 T fresh almond milk

1/2 t vanilla

1 t maple syrup (add more if you like it sweeter.. this was more of a fruity biscuit)

1/2 C organic blueberries

1. Grind the oats into fine flour.

2. Add the oats to a food processor, with the remaining ingredients (except for the blueberries). Mix well.

3. Transfer dough to a bowl:

4. Gently fold in blueberries (reserve some for garnish)

5. Make into a scone shape of choice (I rolled with the triangle) and place onto a Teflexx sheet to dehydrate 1-2 hours at 115*

6. Flip onto mesh screen and continue dehydrating for an additional 2-4 hours, until scone reaches desired texture.

7. Top with coconut butter, more blueberries and prepare for foodgasms.

Something to talk about: What was your biggest kitchen disaster?? Mine definitely was mistaking cumin for cinnamon in a pear-ginger crumble (I grabbed the wrong spice because the containers look the exact same). Let’s just say, it tasted like death.

You are a kitchen genius. I’m soooo not creative. I could not “create” a “baking” recipe if my life depended on it. I can’t think of too many kitchen disasters….maybe the one where I used seasoned rice vinegar in an Asian noodle dish instead of regular rice vinegar. Let’s just say it tasted a little….seasoned. :)

Whoa whoa whoa. This scone looks AMAZING!! Love the homemade coconut butter idea, too. I’ve never thought of that!

That cumin/cinnamon mix-up sounds awful! Haha.

Uhhhhhh the thought of excessive amounts of cumin makes me want to vom! Hmmm…I’m not sure what my biggest kitchen disaster was but just tonight I set off the firealarm for the first time in my married life. And of course my husband was on the phone with his mother. Excellent…

Hey hey Gina! Okay, so you take questions from your bloggies sometimes… So I thought U would ask you to share some healthy juice ideas. I just got my juicer and my first attempt was disgustinggg!! I like the idea of cucumber being very good for you. What are like the top 5 or so veggies/fruits that are the “best” for you and taste good in a fresh juice. Share some recipes and maybe some info on what each recipe is good for (energy, weight loss, etc…) Just thought I would ask!!! See you Monday at Zumba!!

hey girl,
i’m honestly not that creative with juices… i have 3 standards i stick with and LOVE:
1 green apple, 1 pear, lots of spinach, 1/2 lemon, 1/2 cucumber, a little parsley
5 carrots, 1 fuji apple, 1/2-1 beet
2 apples, shot of wheatgrass, shot of ginger

yeh i gotcha. i just figured i would ask cuz i am trying to get some good nutrients down without the feeling of eating and eating and eatinggg! lol so when you put in half a lemon is that with or without the peel? sill to ask but i honestly dont know. where do i get wheat grass? that store on baytree? and when you say shot, you mean to fill a shot glass pretty much? i can try them sounds delish. i heard grape fruit was supposed to be really good for your metabolism too but im not sure. i heard alot of greatness with cucumbers tho. thank you!!!

yes, i put the peel in.
grapefruit is super healthy- i just hardly ever eat it!
go to the main squeeze on baytree (the juice place) and he can give you a shot of wheatgrass :)

Raw scones sound FANTASTIC. Now I just need to graduate from college, make some money, find a hubby, and put a dehydrator on the wedding registry :)

Is there anyway to make these in the oven, even if that means them not being raw?

yup, you can definitely do it in the oven- on the lowest setting with the door slightly ajar

I did accidentally set the oven on broil instead of bake…the brownies were burnt on the outside and raw on the inside! I still ate the less burnt/more cooked portion, though :) In my defense, the knob was very hard to read.

Gina…where did you get your smoothie glass and glass straw? I want a set!

i got the glasses at dillard’s (just standard glasses) and the straws are by glass dharma (you can get them online).

Its pretty embarrassing, but my biggest kitchen disaster has to be when I somehow messed up my last batch of fondant for the bottom layer of my own wedding cake. I still to this day don’t know what when wrong but I was up until about 2am the night before my wedding completely re-designing the bottom layer of my wedding cake. I think it was a blessing in disguise because it turned out so beautifully and tasted great!

Anyway you could do a tutorial/video or something on how to grind/use the oat groats? I reallllyy want to make raw fitnessista bfast cookies and now these scones of course…you said you used your coffee grinder but is there any trick to it, or just run them through it? Can you grind it into the oat flour and then just keep it as flour for awhile before using it? Thanks!

hey! yes, i’ll definitely do that in the breakfast cookie video :)
you can make a lot of oat flour in advance and keep it in the freezer

You are not the only person who has mistaken cumin for cinnamon!! I have done it many a times with disastrous consequences! I have to keep those 2 spices FAR away from each other in separate cupboards so I don’t do it EVER again! ;) The scone looks INCREDIBLE! Wish I had one here for breakfast…right now! The scone looks fantastic! I think my husband is getting me a dehydrator for my birthday :) My biggest kitchen disaster was last summer when I was making garlic bread and set my oven on fire. Yes, we had to get the extinguisher out, and when you spray it, the foam goes ALL over everything, which included the food I had cooking on the stove as well. Fun times (not), LOL :)

I caught the kitchen on fire once while making boxed macaroni and cheese. And I was also babysitting my little brother at them. Minor disaster, but nothing we didn’t recover from ;)

You’re such a rockstar Gina. I don’t have much experience creating any kind of recipe, except an awesome spaghetti sauce. Meanwhile, you can whip up goodies of any type in your sleep. I’m hoping to acquire this skill over time. Also, I’ve noticed the word foodgasm appear in vocabulary from time to time. Again, you’re a rockstar.

One of my biggest kitchen disasters was making my own soup for the first time. I put the hot mixture of potatoes and other things into my glass blender, but it was so hot it cracked the blender. I was SO sad. Learned a big lesson there! Good thing I was engaged and was able to get a new blender through getting married. ha ha!

That scone looks amazing!! And I LOVE coconut so I might have to try making the butter. Yum!

When I was in elementary school I tried making a birthday cake. The recipe called for 1 1/2 cups of water, which I read as 11 half cups of water. When the water started to get to the top of the mixing bowl I figured I had done something wrong, but it wasn’t until my younger brother pointed out that it was only supposed to be one and a half cups that I realized my true mistake. Ooops! To redeem myself I graduated college as a math major (no joke). The family still gets a good laugh with this story.

I have a question for you. I received one of those LARGE 9 slot Excaliber dehydrators for Christmas. The thing is so huge I don’t know where to put it. I almost died when the box came to the door, and again when I pulled it out of the box. Where do you put your dehydrator? My husband is agasp that I want to put it in the house, lol.

I was sort of amazed at the industrialness of it, lol! Hubby will not let meput it on the counter, lol. He thinks it’s too ugly and big. I’m thinking about getting somekind of thing to put it on in our dining room.

Wow girl I just re-read this post…20 minutes?! I have smoked and blown up one vita mix in my life, i dont want to do it again! 20 Mins?!!! Could you leave it alone or was it doing the vita shakey dance all down the countertop? Ive left one running for about 30 secs before and it almost slid itself off the countertop. I am scared to blow a motor :) and dont have a food proc (the only piece of equip I dont own). Also like 1-2 cups of flakes or more? sometimes less is not ok in the vita b/c it doesnt have enough to “grab” onto…any insights would be awesome! thanks Gina!!!

we also had bacon greese in the fridge, however, my dad would put it in peices of birch tree branch that had been hollowed out slightly and hung in the trees for the birds…they loved it!!!

Wow – raw scones. Raw lemon blueberry scones. I think I’m in love.

I get so frustrated making homemade butters too! Absolutely zero patience and I’m always panicking that the processor is going to just vibrate right off the edge of my counter.

My biggest baking disaster – since my life is one whole disaster that’s kind of a broad spectrum answer, but most recently…Last year I started using margarine instead of butter when I baked. Earth Balance sells these little bars of margarine for baking, and I made the mistake of not reading the label on these little puppies. Because they were half the size of a regular stick of butter, I assumed they were half the contents of a regular stick of butter – 4tbsp instead of 8. I kept making things using two sticks of EB where it would call for 1 stick of butter and they would always come out GREASY AND DISGUSTING. I actually stopped using margarine and started looking for oil free recipes because of this, which is a good thing, but then one day I decided to read the label and discovered they were actually 8 tbsp and I felt ridiculous thiking about all the money I’d wasted! This is why I always read labels now.

My sister is addicted to the Whole Foods blueberry baked scones and always grabs a container or two to snack on when she stays with me for a visit. Even though they’re made by WF, they still have a LOT of sugar and other ingredients I typically don’t care for, so I told her I thought I could make a healthier version that tasted just as good. And then you posted your recipe, so I had to try it. They are SO GOOD. She loved them, I loved them, my hubby loved them. TASTY! Since she tends to like sweeter things than I do, I also added a few drops of vanilla stevia and used lemon extract instead of zest (out of laziness) but they still turned out. I think they are the best “baked” raw food thing I’ve tried (next to macaroons, of course). Thanks for the recipe!

I LOVE these!! I quadrupled the recipe the second time around!

I work at Starbucks and I brought these into work, people couldn’t believe how much better they were! and without the weighed down feeling from all the empty calories starbucks’ have.
