Not-Tuna Salad

Hi guys! How’s your day been? Loved reading your comments about movies that affected you. Looks like I *might* have to watch Earthlings next… we shall see.

The eats today –since I was sick all night last night- have been lackluster

I’ve been waiting for this book to come out since last year, when I attended and worked at 105degrees. Matthew Kenney is my favorite raw chef everrrrr so I can’t wait to try some of these recipes. Mayjah thanks to his publicist for sending me a copy :)

I’m feeling a lot better now (think the lovely mail helped) and really want to share the Not-Tuna Salad I munched yesterday with ya’ll. I was inspired to use the parsnips for the *meat* by Skinny Bitch in the Kitch and the result was fabulous. Very light, robust and very similar to the real thang.

Not-Tuna Salad

Serves 1

-3 parsnips, peeled and cut into large chunks

-1 carrot, peeled and cut into large chunks

-1/8 onion

-dried dill

-garlic powder

-Dulse or dulse flakes (with give it that slight *fishy* taste)

dulse

-sea salt and pepper

-EVOO, canola oil mayo or Veganaise (optional)

-Dijon mustard

-White vinegar or lemon juice

1. Place the carrots, parsnip and onion into a mini food chopper and pulse into large chunks.

2. Add the salt, pepper, garlic, dulse, vinegar/lemon juice, fat of choice (EVOO, canola oil mayo or Veganaise), squirt of Dijon mustard and dill to the mini chopper- pulse until all ingredients are fully combined. Leave the mixture slightly chunky.

3. Serve atop bread or salad greens and feast :D

Glad you are feeling better <3 I don't think I've ever had (or seen!) a parsnip…heheh But it does look verrrry tasty :) And the less mercury the better in my book :)

Question on the recipe: I am not much of a fish person at all. If I leave out the dulse, will it not have the fish taste?

Okay Gina, you have to watch the trailer before you watch the movie for Earthlings. I couldn’t even make it through five seconds of the trailer without crying, and haven’t worked up the nerve to watch the whole film yet :-(

Do we have the same thing? I’ve been feeling so blah recently. I didn’t think I would be able to eat a bowl of oatmeal. I waited two hours and I was able to barely eat the whole thing, then went back to feeling icky. I hope you feel better soon :)

i couldn’t even get past the first 15 minutes of Earthlings. it is so SAD and made me hug my fur babies extra tight!! as i watched dogs being killed by GAS chambers i was bawling and my 7 month old puppy was licking my tears. it’s so tough to watch and anyone who could make it through that whole movie is BRAVE. i probably will never finish it because i know i will not make it through. and also there should be stricter punishments for all the animal abusers it’s so sick!

Okay I saw the un-tuna recipe & had to try it! I altered it a bit though based on what I had on hand. I used turnips instead of parsnips and I didn’t have nor had ever heard of dulse. I also added a splash-n-dash of my fav dressing Hendrickson’s Original Sweet Vinegar &Olive Oil. I think it looks like an “un-crab”salad myself :)

That butterscotch extract flavor stuff is great idea…I’m going to look for it…..and I was just like you with my SunWarrior! They are such ginormous bags! I love it – woot – I hope you get the Ormus greens too and do a promo, I’d be down to try those- and the Activated Barley
