I’m so glad you guys liked the cardio blast video! Lacey is HARDCORE and I really hope you can use some of the moves in your next cardio/strength workouts.

So yesterday was helter skelter –laundry mountain, errands, post office, work, YouTube upload battle- but I did manage to enjoy some delicious eats:

Tuna chickpea salad and miso slaw from Whole Paycheck

(Side note: I haven’t had canned tuna in years, and when I saw it at the Hot Bar, it looked SO good. And it was!! Canned tuna back in my life??)

a raw Fall Fennel Salad

-1 bulb fennel bulb, sliced

-1/4 sweet onion, sliced

-1/2 green apple, sliced

-juice of 1/2 lemon

-1 hefty T extra virgin olive oil

-sea salt, pepper and garlic powder

gouda

and an entire block of goat gouda. It was from Cowgirl Creamery (in San Fran!) and I wanted to save some for later, but I think we can all guess how that plan worked out 😉 There’s a sad little sliver left in the fridge at work, haha.

When I got to my aunt’s house, I was in snack mode, so I busted out an old favorite.

Plain unsalted organic popcorn with vegan chocolate chips and cinnamon.

It never disappoints 🙂

Then I read the Kindle in bed (loving “I Remember Nothing”) and called it a night.

This morning I’m off to practice yoga with one of my new faves, and then making a recipe perfect for Thanksgiving leftovers 🙂

    I think hot popcorn with chocolate is one of the best snacks. I love how melty the chocolate gets. And I don’t even love popcorn! But that gets me every time.

    I’m just not a fan of fennel, which I think is related to my extreme hatred of licorice. Oh well.

    Popcorn + chocolate is great, though!

    I love sweet onion + apple — that flavor combo is so good!

    Ohh I always forget about how awesome a snack popcorn makes. I haven’t had any in AGES (probably last winter?) but now I want some with chocolate chips. What isn’t made better by chocolate?! Speaking of which, your goat cheese addiction sounds exactly like my dark chocolate one 🙂

    MMMmmmmm I love Whole Foods tuna salad. I spent my weekend at a Nutrition & Wellness Course that happened to be running in the classroom at WholeFoods, and literally ate the tuna salad 3 days in a row! I checked and we don’t have that miso slaw here though…. I guess I’ll have to wait till the day I visit one in the States to try it!

    The apple and fennel looks like a great combo! YUM.
    Oh, and how can you possibly go wrong with popcorn and chocolate.
    Are you enjoying the Kindle? Does it hurt your eyes like a computer screen tends to do? That is my only concern with those things. 🙂

    I used two of those moves for my “cardio blast” class I taught this morning: the side to side squat with the medicine ball raise, and the little runs back and forth touching the ends of the bench —killer! I’m always looking for new moves for variety so thanks so much for sharing!!

    I definitely read ‘Gout Gouda’ on the package when I first glanced at it. I had to give it a second glance and read your description below. Obviously goat makes more sense…because some sort of gout cheese? GROSS!

    Also, I LOVE canned tuna. It’s the cheapest, easiest little meal pick me up when you don’t have time for anything else.

    The popcorn looks delish and your eats are always interesting. I have a Reader’s Request… I would love a post where you describe the taste of the foods you eat (ie goji berries, chia seeds, cacao nibs (and kale and fennel for me- I have never had them!)

    I did purchase the cacao nibs and am not loving them so much:(

    Popcorn and chocolate is an awesome combo. I’d add a sprinkle of sea salt for that sweet n salty taste. Yum 🙂

    That chickpea tuna looks freaking awesome! Great idea with the popcorn/choc chips/cinnamon, I have never thought of doing that! Will re-create very soon!

    I tried a couple of those moves in my bootcamp class this morning!!!! I was so proud of my class for sticking with it! The moves were much tougher than they look, especially doing each one for a minute. Thanks again for posting that video!!!! I cant wait to hear about the gatorade product.

    Tuna chickpea salad looks good and I havent had tuna in probably 15 years? Other than tuna sushi but that even has been like 8-10 years! But that looks delish. I’ve been on a chickpea kick lately.

    I love fennel. Lots of ppl dont but I think it rocks 🙂

    I always spray my popcorn down w/ cooking spray or coconut oil spray. Helps everything just stick to it. Dont want to lose any of my precious toppings…haha.

    you’re killing me. popcorn with chocolate chips is about my favorite snack ever..except i’m allergic to chocolate (yeah, WHAT?! that was my reaction too). popcorn with carob is not the same! it is my birthday tomorrow (!!) and i’m treating myself to movie theater popcorn on friday night! triple workouts tomorrow to motivate myself. 🙂

    I love baby Rosemary Christmas trees! My friend dumps m&ms in her popcorn. I like spicy popcorn(still waiting for the hog corn recipe!)

    I did a couple of the interval moves this morning. I loved the video, thanks for sharing it. And that canned tuna does look so good, I don’t really make it, but when I see it at Whole Foods I buy it sometimes.
