Hey Fitnessista readers!

We are the twins, Lori and Michelle, from pure2raw. When Gina asked me to do a guest post, I was thrilled and honored. Lori and I have a fun holiday recipe and we hope you like it!!! I know Gina is a big fan of easy and delicious desserts! We had our fair share of desserts while at school together 😉 Lori and I love anything with chocolate, so we got to thinking…pecans are in season and coconut just pairs wonderfully with both…this no-bake chocolate pecan brownie biscotti (now that is a mouthful) was created! We shaped them like a biscotti for fun and because we just love anything resembling a biscotti. It is not dry like a traditional biscotti, but more rich like a brownie without being overly sweet. DSC_0085 Pure2raw recipe: No-bake chocolate pecan biscotti cookies

  • 2 cups pecans (whole pieces)
  • 1/2 cup coconut flakes
  • 1 cup cocoa
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 tbsp coconut oil
  • 3 tbsp maple syrup

Directions: Place pecans, coconut flakes, cocoa, salt, and cinnamon into food processor, and pulse together to get small crumbs. Then add vanilla, coconut oil, and maple syrup. Pulse till combined. Spread batter onto cookie tray (parchment or wax paper will help prevent sticking) and shape into a biscotti log. Now here you can get creative and shape the dough anyway you like!     These look so delish! I rarely like biscotti because it tends to be dry, but this looks unreal.

    I always make the traditional cut out sugar cookies and decorate them every year but I like to try new recipes as well. So I am looking to make something extremely yummy this year! These look awesome!

    Yay, some vegan holiday cookies- it’s been hard for me to find good recipes and these look amazing! I love making sugar cookies and gingerbread cookies since I love decorating them!

    Yum, I just made some chocolate biscotti at a class I took on Sunday, but these look phenomenal! I bet you don’t have the problem of them crumbling so easily and they look adorable all wrapped up!

    These look sooo good! Nice touch with the coconut flakes. I really LOVE desserts at Christmas time. My hubby makes a mean Chocolate chip cookie this time of year for everyone. That’s our go-to treat gift. BUT, this year I will be making Almond Roca…::crosses fingers::

    I LOVE how this recipe doesn’t require a dehydrator! I totally thought it would when I first saw it. They look beautiful and I’d love to try the recipe!

    This recipe sounds delicious! I tried to make biscotti last week but it turned out to be super hard and really bland tasting – even though it did look quite pretty! Gonna try this one for sure. 🙂
