Brave the Boiled Huevos

Hey guys! How’s your day been?

Thank you so much for all of your lovely nominations- I appreciate it so much and am looking forward to returning the favor later this evening Smile

So the Pilot and I have always had pretty clear ideas of who does what in our little household. We each have our own *jobs*, from the normal everyday stuff (I cook, he does dishes, he vaccuums, I Swiffer and clean everything else, he takes out the trash and recycling), to the more unusual stuff.

Like boiling eggs… that’s always been his job.

When I had a sudden and fierce craving for egg salad today, I knew I’d have to boil some eggs. It’s one of those things I’ve never really done before, save for the time in college which ended up with mushy refrigerated eggs and yolk everywhere…

I had a drink

 kombucha

Googled

and got down to biznazz.

We only had one casualty

but the rest were a SUCCESS! Smile 17 minutes later, I had perfectly boiled incredible edibles.

Since I’m not a mayo fan, plain goats milk yogurt and mustard were an amazing substitute:

yogurt

Along with two chopped boil egg whites, 1 whole egg, half container of yogurt, 1 T mustard

went:

onoin

1/4 chopped onion, 1/4 t paprika, garlic, sea salt, pepper

1 T nutritional yeast and 1 t tumeric (for the lovely yellow color and natural anti-inflammatory purposes)

Ka-pow.

(Vegan? Try my raw not-chicken salad)

Kale chips are in the dehydrator:

and I think Bell is trying to tell me to take her for a walk so we’re off to get some fresh air Winking smile

    I love love love eggs but for some reason I’m not a big egg salad fan — I’m not sure why. Give me an over easy egg anyday!

    This has nothing to do with the current post, but I made your beet and carrot burgers for dinner tonight. Holy moly those are yummy!!!! I almost can’t wait for lunch tomorrow to have another one!

    I could never get the hang of hard-boiled eggs without the grey ring around the yolks…but now that I’m vegan, I guess it doesn’t matter! My fingers are crossed for a mind-blowing assignment for you and the Pilot!

    I do have a request!

    I was wondering if you could give some recommendations for workout videos that you have either done or heard about. I know you have done Insanity…and that’s a bit beyond my skill level. I have dabbled with Gillian Michaels, but am so turned off by her pushing “fat burners” and “detox cleanses” (the unhealthy kind). What I love about workout videos is that it kind of takes the thought process out of working out, and it provides good, live examples of what the form of the exercise (if doing weights or calisthenics) should look like (much like what you do with your clips!).

    Your expertise would be greatly appreciated!

      i personally haven’t tried it, but have heard amazing things about chalean extreme. it’s more basic weight training and cardio, but still will get awesome results. maybe worth checking out?

    No matter what I do, I can NOT hard boil eggs. I fail every time. So, I go to Trader Joe’s and buy a package of 6 HB eggs already peeled. Works for me.

    That egg salad looks fantastic! I cant do goats milk yogurt it hurts my tummy too much. Its sad because I LOVE the taste of it! :( We do kale chips every monday so my 6 year old has them for her lunch all week. they are a staple in this house!

    I stink at boiled eggs. whenever i make them the shell cooks to the egg which makes them nearly impossible to peel!

    Ha! I can sooo relate to this. I love having breakfast, any time, all the time. And when we decide to make breakfast my husband is always they one to break out the egg rings and make my eggs just the way that I like him. When he was on a work trip one time I decided that I wanted to make breakfast for myself. Breakfast FAIL. It sounds so easy but there is just something about the way he does that is just right and why I keep him around :)

    Haha, I hate mayo too! I also use yogurt as a substitute, but I’ve never tried goat’s milk yogurt. I know you eat goat’s milk yogurt for its digestibility, but what do you think of the taste compared to regular or greek yog?

    My Mom taught me this YEARS ago, and apparently it’s the “Julia Child way” of cooking hardboiled eggs. I’m vegan now, but I used to eat HB eggs like crazy and this always worked.
    Put the eggs in a pot, cover w/ water, plus a few inches. Cover w/ lid. Turn on burner to high and let the water boil. When the water boils, turn off the burner and take the pot off of the burner (keep covered). Wait 10 minutes. Voila, perfect HB eggs! After the 10min, if you want to slowly cool them down, just put the pot under a small stream of cool water in the sink for awhile. Hope this helps :-)

    I have been craving egg salad for weeks! I didn’t boil eggs until last summer, and after a few attempts of peeling the shells off in tiny pieces getting stuck under my fingernails, I finally mastered it. I have gotten out of the habit, but I had been keeping a few in the fridge for snacks.

    I’m not a big fan of mayo either (vinegar with egg yolks? uh, barf. :P ), and the yogurt + Dijon sounds like a great idea!

    Try using mustard and hummus (and dill relish if you are into that) but the mustard/hummus combo totally makes egg (or salmon) salad

    Glad you got over your egg inexperience and rocked out an awesome looking egg salad! Turmeric is such a great anti-inflammatory, you’re so right. And nooch…oh I bet it’s awesome in egg salad. I havent had egg salad or eggs in years…probably at least 15? I kinda just had a craving for Deviled Eggs reading your post :)

    My husbands a chef and he taught me the way to get a perfect hard boiled egg everytime.

    Put your eggs in cold, very salted water. Bring to a boil. Once it’s at a rumbling boil, let it boil for 9 minutes exactly and bring the temperature down a tiny bit. Rinse with cold water, and let it sit in cold water for a few minutes. Crack and enjoy!

    I was really into using veganaise for awhile and then I realized it has soy! I use it very moderately so I guess it won’t kill me. Better than the “real” stuff or Miracle Whip in my opinion.

    Love egg salad – have the boiling eggs thing down to a science – but haven’t tried it with anything other than mayo. Will give your recipe a whirl. Hope Bella got her walk. We had 50 degrees last week and now we’re back to over a foot of snow. My 14 year old pupper acts like he’s 2 in this stuff – it’s really cute. Take care. By the way, there’s no better work out then shoveling that wet, heavy stuff!

    I am going to try the vegan raw version!! Numeric is always great for the goooorg yellow color;)

    I made a lot of boiled eggs last year and I have finally gotten it right! I place eggs in cold water, bring to a rolling boil for 1 minute, turn off the heat, leave the lid on, and set the timer for 12 minutes. After that they get a cold water bath and are good to go! I used to keep them at a boil for the whole 12 minutes but it turns out it’s an unnecessary waste of electricity! Is this the method you used?

    I’m down with your mayo-less egg salad. I’ve never been able to do mayo myself. Not sure why! It’s just more eggs, technically…right? I don’t even know. Something about the whiff I would get when mom would open the jar always turned my tummy.

    In other news I was watching the Jeff Corwin Experience streaming on Netflix last night (confession: I die for Animal Planet but don’t have cable so I have to take it where I can get it) and it was an episode all about AZ. He was exploring the air force base in Tucson and finding all kinds of stuff like toads, owls, coyotes, snakes…I don’t know anyone but you and the pilot who are out there so I am popping in to say: there are toads under the debris on the field where all them airplanes are hangin’ out. That is all. :)
