Indian spiced chickpeas and potatoes

Even though I’m not working at lulu anymore, this week has been CRAZY. Even so, I’ve managed to ninja kick most of the to-do list and have been all kinds of organized up in herrre.

Proof?

I even celebrated Indian Food Wednesday…. on a Wednesday!

This chickpea and potato dish was super easy and was the perfect fuel for a super busy afternoon 😉

All I did was steam 6 baby potatoes for 10 minutes:

Reserved the potatoes and in the same pot (on medium), sautéed 1/2 sweet onion and 2 cloves of garlic for 5 minutes.

To that, I added 1/4 t cumin, 1/4 t tumeric (a natural anti-inflammatory), 1/8 t garam masala, 1/8 t cinnamon, 1 can of diced tomatoes (drained), sea salt and pepper.

That cooked for about 10 minutes and then I stirred in the potatoes and 1/3 C chopped dried apricots.

At the last minute, a splash of fresh lemon juice and some mint for garnish.

This would have been lovely with some roti, brown rice or quinoa, but I decided to roll with gluten-free, vegan, RAW roti!

Just for fun: 3 Things I Didn’t Know About the Pilot

Since the Pilot got home from Afghanistan –it was this 3rd time over there- we’ve finally gotten re-acquainted and settled back into a semi routine. All of the things I know, love and missed about the Pilot are still there, along NEW things that I’m just now figuring out.

1. He only eats half a cookie.

I discovered the above cookie in the fridge a few days ago. Half a cookie?! Who does that? I just don’t understand. It’s totally cool if you’re sharing with someone, but to eat half and forget about it… well I would never.

2. He always win.

I was the Fruit Ninja champion in our household, with a high arcade score of 504. He finds this out and spends days playing Fruit Ninja… to eventually show his iPhone with the numbers “645” on the screen. I had to wave the white flag at that one.

3. He calls his grey hairs “Ginas”.

    Hahah too funny about the gray hairs! I don’t know what I don’t know about my fiance. Maybe that’s concerning 😉

    Totally hilarious! Love it.

    My hubby has to have at least 3 boxes of cereal open at all times, even though he only prefers one kind. So annoying!

    He refuses to hold a full sentence before 9a..seriously, he’s ridic!

    I just learned that my SO is a total diva when he has to dress up! I had no idea after over a year of being serious. He’s such a slob normally, so I was quite shocked when he spent an entire day figuring out an outfit. Who knew?!

    Hahaha, that’s so funny. I feel like I learn new things about my husband all the time, and vice versa. Recently I saw him take a beer into the bathroom before his nightly “routine”…I know lots of people read in there, but seeing him carry a drink in there cracked me up. He says it’s relaxing 😉

    I have learned things recently about my husband too. For instance that he LOVES sourdough bread and that he doesn’t like scrunched hair. Good things to know!

    My husband and I did the exact same thing with Fruit Ninja. He wouldn’t stop playing until he beat my score. Too funny!!

    LOL, after my husbands last deployment he came home and took over my Angry Birds high score. I was sad to lose that score, but it was worth it to have him home 🙂 I cann’t figure out how your Pilot only eats half a cookie.

    Well hey I could eat just half a cookie too…if said cookie were the size of Rhode Island.

    Under normal cookie circumstances, however, 1/2-eaten cookie –> does not compute.

    Eating 1/2 of a cookie takes a lot of willpower! Since moving in with my fiance, I’ve learned that he doesn’t like jelly, he will only eat peanut butter and bread. The thought of it makes me choke.

    I usually leave a bite of something, never eat all of it whether it’s a candy bar, sandwich, etc. I don’t know why!Kinda like the left behind burrito bootay.

    Hi Gina,

    Did you use a can of chickpeas in that recipe and if so, when did you put it in? With the tomatoes? Looks delicious.

    I would NEVER eat just half a cookie – craziness!

    wait! you didn’t say how many chickpeas? Just one can? Also- I have never steamed a potato, I did not know this was possible. Just in a pot of boiling water but in the strainer thing? Thanks!
