Chocolate chip coconut crispies

Hey hey hey :D How’s your weekend going? Hope it’s been lovely so far.

Last night, I met up with some friends to take a High Heel Fit class.

My heels of choice:

flip flop

I decided to dance barefoot because it was my first time and knowing my luck (and clumsiness, haha), I would be the one to eat marley. <—the type of dance floor

Here’s the premise of the class:

-SO many types of dance require the women to dance in heels: ballroom, LA music videos, Broadway, etc.

-Each week, they focus on a different style of dancing and choreography so that you can become more comfortable dancing in heels

It felt so amazeballz to REALLY dance again. From the stretches we did in the beginning, I was mentally transported back to college dancing days and we did the splits to warm up. Um, it’s been a while haha ;)

Last night, we did a lyrical-style Lady Gaga dance to “Edge of Glory”, using free-standing ballet bars to crawl and reach in between, kick over, etc. I loved it.

This morning, I woke up early to make some healthy treats to take to work. These would be perfect for a holiday weekend BBQ or party, and took about 10 minutes to put together.

Chocolate Chip Coconut Crispies

(gluten-free; contain honey, so not totally vegan- but maple syrup could be used instead)

Some ingredients:

1. Spray a 7×11” baking dish with nonstick spray

spray

2. In a mixing bowl, combine:

- 2 C crispy brown rice

-1 C gluten-free oats (or regular old fashioned oats)

-1/3 C unsweetened coconut

-1/4 t cinnamon

-pinch of sea salt

mix

3. In a small saucepan heated on medium, add:

-1/2 C cashew butter (or nut butter of choice)

-1/4 C honey (or maple syrup)

-1/4 C coconut oil

-1 t vanilla

Stir until smooth and foodgasmic

wet

4. Add the cashew butter mixture to the dry ingredients and mix well. Stir in 1/3-1/2 C mini chocolate chips –if you put them in the freezer for a while first, they won’t melt like mine did- and press down into the baking dish.

5. Set in the fridge or freezer to harden, cut into squares and feast :)

I’m off for my marathon Saturday (salsa, level 3 cardio-strength and ZUUUUUUMBA!) and then it’s the weekend for me too :)

  2. What a fun way to work out! I love workouts that incorporate the ballet bar- I do this program up in Portland at a studio called Barre3 which combines the ballet bar with pilates for a fun and full on toning workout.

  9. What a great idea for a dance class. I used to dance when I was younger and I miss it a lot. I feel like I don’t have the rhythm or even memory to catch on the dance routines quickly, like I used to be able to when I was younger. I guess the best way to improve on that is to get back in it! That really makes me miss dancing now!

  13. I can barely walk in heels, let alone dance in them! I love watching So You Think You Can Dance, and I’m always stunned at the fact that they do all of that IN HEELS! It looks like a really fun class.

  14. it is all about having fun and that class nails it! I hear ya on the shoes…I am all about comfy shoes when dancin!

    This recipe is great, works for me, No corn syrup or preservatives (as you know bars like this always have garbage in them, even Fiber One!)…yours are a win-win. :) I have a similiar recipe too. :) People always love em. :)

    The the cashew butter mixture….I could just pour that into a glass and drink that. For.Real.OMG.

    I have a variety of no bake bar recipes that start out with melted PB, butter, some sort of syrup like agave/maple/honey, vanilla, brown sugar…and pour that over some dry ingredients. I love recipes like that and like what you made.

    And I have been wearing Rainbows for about 10 years! I buy a new pair every year or 18 mos…as I literally wear the bottom to a paper thin layer. I live in them year round!

  27. Wow that class looks absolutely terrifying to me! But very cool! :) Dancing is definitely not my forte! I’m telling myself it’s just because i’m tall but I think it’s more down to my utter lack of coordination! :D

  30. Were your’s bars? I made it and mine came more like cereal. I think it would need something like marshmallow creme or something gluey to hold it together, maybe? It was easy, quick and it’s good, though! I pressed the frozen choc. chips and some almond slices on the top, with some extra coconut. It looked terrific, it just didn’t slice but more crumbled. But it was just for home so no biggie! Thanks for the recipe.

      did you chill it? i put it in the freezer and they hardened really well

      • I did, but only in the frig. Maybe that’s the difference. I also used Coach’s Oats, which might’ve made things different, too.
        I made three blog recipes yesterday. One went straight in the trash (a Mama Pea recipe, oddly), the other (Dr. Furhmans’ Anti-Cancer soup) was a major fail but I’m going to choke all 1.5 gallons of it down because it has too many veggies to throw out, and this one. So being crumbly was minor! Like I said, at least it was quick, easy and tastes great!
        Hey, totally unrelated, but when I put on my makeup I always think to myself I should thank you for the Buxom and Nars recs. LOVE them! And then I think I should suggest you wear high SPF sunscreen on your face through your pregnancy, if you’re not already. I think we have similar skin and I got terrible melasma from pregnancy (also in AZ) and it’s still here 12 years later.

          • You’re probably ok if you watch for dark splotches, and if your mom didn’t have it. I’d wear hats for long periods in direct sun. TJ’s sells a cheap, zinc-based (no chem.) sunscreen, if you do decide to step up the SPF. If you do get melasma, CoverFX brand at Sephora has great products to hide it.

            Half my pan of spoon-bars is gone.

  34. The bars look delicious. I can’t believe how long your nails are lasting. Mine lasted 2-3 days. What is your secret? I think I’m really rough with my hands :(

      mine have been lasting about 2 weeks! do you put clear polish on after?? also, do you clean your nails w nail polish remover before you stick them on?

  35. oooh that dance looks like loads of fun. It’s kind of like the Pussycat Class at my studio Sedusa Studios. Though we haven’t used chairs in any of the classes I’ve taken, unless it was the Chair Lap Dance lol.
    Quick question. I love wearing flip flops, but lately I’ve noticed that they have been hurting my feet (ankles, heels, arches). I was wondering if you knew of any flip flips that were stylish but comfy to wear for both pregnant and non alike?

  37. Just made my own version of your crispy bars with Rice Twice cereal, flax crunchies, peanut butter/sunflower seed butter, and peanuts instead of shredded coconut (only because I’m out!)… they’re in the freezer now! :)
