Salad beast

Hi friends! How was your night? Ours was pretty bueno- it was nice having the Pilot around for 4 days in a row! We actually got to hang out. I kinda liked it 😉

I was ready to post about our adventures in baby registry, but it was pretty uneventful. I’m more of an online shopper girl, so our online registry is way more beefy than our brick-and-mortar fare, and the only exciting thing was the crazy lady who cut in front of us in line at Target. [We didn’t care at all] The cashier said, “Sorry ma’am, I think those people were waiting.” and the Pilot said “It’s ok, go ahead” and the lady got in his face and yelled at him. I had to turn away so I didn’t laugh.. he was so nice to her, per usual, and she was a little riled up about something.

To make up for lack of afternoon adventures, I do have a legend to show you.

A grilled salmon Caesar salad beast.

Basically all of my favorite things in life on one plate: greens, goat cheese, salmon, homemade croutons, dressing… I swoon and faint.

When we got home, we were definitely ready for dinner and this only took 20 minutes start to finish.

I seasoned some salmon with steak sauce, sea salt, pepper and a little bit of BBQ sauce:

[I’m sure you can guess who the little unseasoned piece was for…]

and sprayed some romaine with the Misto and seasoned with sea salt and pepper.

The Pilot grilled them up:

and while he was working his magic, I made the dressing and croutons.

Caesar Dressing

-juice of 1 lemon

-2 anchovy filets, minced <—do not fear the little fishy

-3 cloves of garlic, minced

-sea salt and pepper

-1/4 C shredded aged goat gouda + more for topping

-1/4 C almond milk

-2 T olive oil

-1/2 T Dijon mustard

-1 T Veganaise

Whisk all ingredients in a bowl and adjust seasonings to taste.

When the grilled goodies were ready, we poured the dressing on top of the grilled romaine and topped with sliced olives, more shredded goat cheese, and homemade croutons (cubed gluten-free bread sprayed with olive oil and put under the broiler for a couple of minutes) and pepper.

It was a legendary dinner.

So quick and easy, too!

    Looks delicious, and the pic of Bella is just so cute. Lulu also adores salmon, and this post makes me realize that we need to spoil her more with it! The problem is, after something like that, she refuses to eat her kibble for a while in protest! Does Bella do that?

    Omg that salad looks delish! i didn’t even know you could make your own Ceasar dressing so fast and easy like that! I will def have to try that 🙂 Bella’s little face in the last pic takes my heart away! her little eyes <3 🙂 she's so darn cute!!

      One of my two cats nearly does the Bella Chicken Hind Legs Dance when I crack open a can of wet food for the both of them, I really need to get it on video one of these days. He goes completely insane for the stuff.

    Oh my god that salad looks AMAZING. Will definitely be adding that one to my stable this week. Where did you get the idea to grill the romaine? Super awesome. Just curious though, what’s up with the Pilot being home for 4 days straight, you mean 4 days off? He doesn’t go off for days anymore does he? I hope not!

      a bloggy left it in the comments section when i asked for grill ideas a couple of days ago. i’d had grilled salad before, but it’s been years!
      and yes, i meant off work for 4 days. it was nice to have him around 🙂

    How does the grilled the romaine taste, I’ve seen it before but always figured it would taste wilted. Cute pic of bella, my bella cat is a salmon freak and my doggie loves Brussels Sprouts which is soo weird to me because even most people hate them, then again he likes lots of veggies and fruits!

      it tastes wilted, but in a good way. the inside and base of the lettuce is still crunchy, though 🙂
      bella loves veggies and fruits too! her faves are watermelon and garbanzo beans 😉

    I LOVE grilled salads!!! OMG I had a grilled ceasar at a restaurant once and fell in love!! Haven’t had one since cause I thought they’d be hard to make but you just convinced me to try it out at home!!

    Bella eats better than 90% of America I think 🙂 She’s got good taste savoring her cedar-planked din-din!

    And online shopping..letting the fingers do the walking (and shopping) is pretty much me, too!

    Great recipe on the Caesar dressing. Nice use of vegenaise. (My fave mayo!)

    I think My Baby sister loves grilling almost as much as you do! I bet the croutons would have been awesome cooked on the grill too! Can’t wait for the work out tomorrow!

    I had salmon and salad for dinner tonight too, but your looks oh-so-much tastier! I will be trying out your grilled salad recipe when we get a BBQ. I always give Layla a bite of salmon, but heard that uncooked salmon can be poisonous to dogs. I’m always careful to only give her a little of the cooked fish. Have a good night!

    That looks so yummy! I’ve always enjoyed grilled romaine when dining out, but was never really sure how to attempt it at home! I’m going to have to make this salad this week! I’m not sure about the anchovies, but I’ll try and work up the courage! LOL!

    What a fabulous dinner, lovin’ the grilled romaine!! The first time I used anchovies I was a scaredy cat for sure, they are kind of unsightly but aside from that lend fabulous flavor esp to Caeser dressing!!

    my little jackson loves salmon too…he goes nuts…and his eyes look just as crazy as bella’s!!!!

    and i couldn’t help but laugh out loud at your target story…so glad the pilot is a gentle soul!!!! i most likely would have yelled back…but that’s only because it’s a month to my wedding, and i am in crazy mode…

    I’ve always wanted to make my own Caesar dressing so thank you for the recipe! And, Bella looks adorable! I’ve got a cat who goes nuts for cherries (and fish too, of course) – it’s the oddest thing that can’t be explained. Does Bella crave anything odd & weird?

    Wow! Your dinner looked amazing. So weird though.. the only other time i’ve seen grilled salad was when an ex BF made it for me and he was also an air force pilot who used to be stationed out of Valdosta. Until I read the rest of the comments here I thought maybe it was some super secret air force recipe. 🙂

    I’ve never had grilled lettuce but I’ve seen it around lately and really want to try it… of course I say that now, as summer’s ending and it’s going to get cold, so no one will grill, haha.

    Bella with her tongue sticking out – damn that is cute. I’m glad to see I’m not the only one who grills up a plain portion of whatever we’re having for our pup – steak, a mini burger, salmon – he eats pretty darn good! Take care.

    Wow I love that you posted the caeser dressing! i have been trying to find one that is creamy like, but didnt include dairy, goat cheese doesnt bother me at all, its the cows milk that does, i am excited to try this recipe, what difference does grilling the head of lettuce make/

    I would never think of steak sauce on salmon! That sounds great. I have a question, since you’re probably a salmon expert by now 🙂 : are you supposed to eat the skin? I never do, because it seems kind of gross to me, but my fillets also never come out as pretty as yours when I take the skin off to plate them, so I thought you might? I don’t want to miss out on the nutritional benefits if the skin is super healthy or something haha. Thanks!
