Easy and delicious gluten-free crepes

It’s been wayyyyy too long….

The return of crepes! I got a link back yesterday from a friend who made these, and I can’t believe I forgot about them for so long. I’m definitely a creature of habit when it comes to breakfast, and go through phases where I rotate between 3 or so things.

So I busted out the Vitamix:

and made some crepes, along with pumpkin protein fluff.

Pumpkin protein fluff

In a bowl, combine:

-1 T almond butter or nut butter of choice

-1 T pumpkin puree

-1/2 scoop vanilla protein powder

-1/8 C milk of choice (+ more as needed to thin it out)

Heat for 30 seconds in the microwave, stir and add Stevia or honey, cinnamon and nutmeg

It was the perfect crepe filling 🙂

This morning, I’m off to the gym and then picking up ingredients for a fun and healthy Halloween treat- if it’s a success, the recipe will be up tomorrow or Thursday 🙂

Bella will be snoozing, per usual.

Bust out this quick and crazy 5-minute workout during a break –your co-workers will be amazed- or in between catching up on the DVR tonight. No equipment necessary.

[As always, check with your doc before making any fitness changes]

-Jog in place, 2 minutes

-Jumping jacks, 30 seconds

-Plie squat low, then jump and bring legs together and arms straight up (like a squat jack), 30 seconds

-Plie squat pulse- hold the plie squat and pulse for 15 reps, lift your right heel up and pulse for 15 reps, left heel up (15) both heels up (15)

-Mountain climbers (keep your core TIGHT), 30 seconds

-Push-ups, 30 seconds

    Uncle Sam’s or Oatmeal. This is all I EVER eat. If I eat eggs, it’s brunch or lunch. I am a TRUE creature of habit.

    So, this is unrelated, but…. I’m in India working now and there are SOOOOO many cute baby clothes. Every time I see them I think. “oh, the nugget would look so cute in these!” I think I might have to pack a suitcase full of baby clothes when I head back to the States so I’m stocked up for all my baby showers for the next ten years 🙂

    Right now for breakfasts I seriously can’t get enough of lox and cream cheese bagels. We get the whole grain bagels, smoked salmon (obviously), and goat cream cheese and I’m basically in heaven every morning. Plus, I read that fish (salmon in particular) really helps ease symptoms of seasonal depression. Even more reason to eat it every day this winter. 😉

    Love the idea of pumpkin crepes! I’ve made some recently with yogurt, bananas, strawberries, and a little granola on top. Very good and something fun to switch up the old routine!

    I always forget about crepes! I’ve had a draft post about crepes ready to post forever but I accidentally deleted all of my pics, so I guess I must make them soon so I can actually post the recipe 😉 Pumpkin as a filling is an awesome idea.

    I tend to eat the same thing for bfast until I have it so much I never want to touch it again. Lately it’s been Greek yogurt + granola + banana + almond butter. Today I had toast and I thought I was going loco.

    I love when a reader reminds you of a good recipe you posted a while ago – that just happened to me recently as well.

    Also, I still have yet to try the pumpkin protein fluff. I think I need to get on that.

    Breakfast habits are inevitable for me! I’m a creature of habit. I’ll find something I love and stick to it for months on end before gravitating towards something different. Right now, it’s Nature’s Path Heritage Flakes cereal with unsweetened almond milk.

    These sounds amazing!! I’ve never had pumpkin filled crepes!

    Im definitely a creature of habit. My breakfast’s usually consist of a green smoothie along with some toast an almond butter, greek yogurt with fruit or some kind of oatmeal!

    I’m definitely a creature of habit. My breakfasts are either baked oatmeal or cereal. I like knowing that I am going to eat something I like so that is mainly why I rotate these two. However, on the weekends I might make pancakes if I’m sick of cereal but that’s pretty rare.

    I never mix up breakfast like that– I need to aim for more inspired food in the morning! Usually I get on a cereal kick and it takes me months to eat anything else, ha.

    Smoothies, oatmeal, yogurt bowls during the week an waffles, more oatmeal and pancakes on the weekend! I have yet to successfully make crepes!

    Sounds delish! I’m totally a creature of habit when it comes to breakfast. Right now, my favourite combo is very similar to your protein fluff- about 1/2 cup pumpkin puree, 1 packet stevia, 1 scoop vanilla protein powder, 1/4 cup of egg whites, pumpkin pie spice and a bit of water… all mixed up and microwaved for 3 minutes. It rises and is absolutely beautiful!! 🙂

    i work from home now, but when i was in an office, used to bust out workouts like that all the time! i even had a yoga mat under my desk and if things were slow would squeeze in a few sun salutations!

    I pretty much eat the same breakfast every day (cottage cheese, pumpkin or banana, Kashi cereal)—it’s good, and it keeps me full until lunch!

    I am definitely a creature of habit when it comes to my breakfast and snacks during the day at work. Once i find out all the foods i’m allergic to and intolerant to, things will be changing though!

    I love crepes!! There is this really good crepe place in Chicago called Flip Crepes (www.flipcrepes.com) Looking at their menu can give you great ideas for fillings.

    I tend to rotate through only a few breakfasts too. Right now I’ve been eating pumpkin oatmeal, Greek yogurt and cereal, or oatmeal with berries.

    I’m totally a creature of habit when it comes to breakfast, but I try to mix it up between oats, protein pancakes, and Greek yogurt. I never really crave eggs in the morning. It’s always a combo of fruit, protein, and some sort of nut butter. Love my breakfasts! I’m interested to try the crepes.

    Absolutely a creature of habit for breakfast! It’s either eggs and cinnamon raisin toast, cereal and fruit, or protein pancakes right now. If I break the rotation it’s usually on the weekend when I have time to experiment. Then if it’s simple and quick I’ll try to add it to the mix. But eggs tend to be on repeat the most! so simple, so delicious.

    TOTALLY a creature of habit. In fact, I was just thinking on my drive home last night how I will eat the same thing for breakfast for like a month till I’m sick of it, rotate to something else, and it’s like a revolving door. I always end up coming back to the same 3 things! Pumpkin Spice Protein Pancakes have definitely topped the charts as my all time fav. I also enjoy making my own cereal (I miss eating cereal) so I make my own: 1/4 cup oats, 1/4 cup slivered almonds (I blend mine in the bullet so they are really fine), 1 tablespoon flax seed, 1/2-3/4 cup almond milk, sweeten with stevia in the raw and I slice up a banana for the top, it’s money!!! I also love me some breakfast tacos 🙂 Egg whites, whole wheat quinoa tortillas, cheese, avocado, salsa…..ok I’m officially getting HUNGRY 🙂

      one block? haha
      usually on the goat cheese it will say how many servings are in one container or package. usually i’ll use that as a guide to split up servings
