Foresight

Verdict on the car front: negative.

It needs about 7 things done in the nearish future (3 are immediate), so looks like we’ll be getting the necessary stuff fixed and trading in Betty this weekend. Thank you for the SUV suggestions! They were so helpful and I’ll be sure to let you know what we decide.

Bella is stoked… more room for her!

I thought I’d have my car back by 10:30 today, but since they’re keeping it until tomorrow, madre lent me hers for the two appointments I had. I knew I wouldn’t want to-go food from anywhere (restaurant food 3 days in a row), so before heading to pick madre up, I blitzed through our casa to make snacks and dinner, grab my gym clothes and computer.

Eggs and toast:

(with lots of nutritional yeast and hot sauce)

Salad (greens, goat gouda, beets, olive oil, balsamic, sea salt and oregano)

Veggie curry in the slow cooker:

(onion, bell pepper, grape tomatoes, zucchini, chickpeas, diced tomatoes, veggie broth, curry powder, cumin, garam masala, salt, pepper)

+ brown rice in the rice cooker.

When the Pilot and I got home tonight, dinner was ready and waiting! So much easier, and far tastier than grabbing something to-go on the way home.

    I didn’t comment this morning, but I LOVE my Ford Escape hybrid! It’s the perfect size (roomy, but not giant) and I like that it’s eco-friendly!

    I’ve never even heard of Gaiam TV! That’s such a fantastic idea! It can be tough to drag your booty out of the house when there’s a blanket of snow outside!!

    I wish my husband would let me leave slow cooker on during the day- he’s paranoid about fires. Nevermind the fact I have never heard of a Crock Pot destroying a home before…. 😉

    LOVE Bella’s dog toy! I have the same one on my desk actually haha. My name is Clarice and it’s always rare for me to find things with my name on it. So when I found that dog toy last year I had to buy it! Rudolph is my favorite holiday movie just because Clarice is in it 🙂

    Nothing like a new baby on the way, changes with your financial status I’m sure because you won’t be working for awhile (maybe I’m being presumptive though) and then….the need for a new ride. Oh, boy! I hope it all is as painless as possible. Car shopping for me is one of the worst things…I hate it. Good luck!! 🙂

    That slow-cooker curry looks delish! Lately, all I want is curried foods-if it ain’t spicy, I don’t want! Could you share the recipe specifics (amounts,cook time,etc) please? I tend to get specific with my recipes. Thanks!

      i have no idea how much of each thing i put in there as far as the spices go, but it cooked on low for 5 hours

        there’s an eggplant curry recipe on the food page- try that using different veggies instead of the eggplant, since i actually measured for that one 😉

    I looove my slowcooker. I made a “burrito bowl” in the crockpot yesterday – black beans, chicken, red & green peppers, onions, honey, red pepper jelly, sriracha and taco sauce!

    I love Bella’s expression in that photo. My dog is the same way when I give her a new toy – pure bliss. Unfortunately, she’s very rough with stuffed animals, so they usually only last a day unless we get something really tough. I’m constantly finding tufts of toy stuffing everywhere. 🙂

    Been reading your site for about 2 years now. In fact it was the first one I found when I was doing my search for running! Everyday I look forward to your posts! One thing on your purchase of a new car concerning your soon to be little one. Do you have have the car seat already? It might be a good idea to bring it with you to see if it fits . Sometimes carseats don’t fit safely in the back. This happended to my brother and sisnlaw. Just a little idea for you! Hope your day is blessed.

    I haven’t had any real problems with my x3; new headlight bulb about it. Dang. I never had any issues with my Honda Pilot and my mom has a new CRV she loves. A friend has a new Nissan Murano he likes and another friend has the new Explorer (that’s what I’m liking now). I keep my crockpot on the counter I’ve been using it so much.

    I’ve read a lot from you on nutrition yeast and it is making me very interested to try it…I would love a new way to get more protein!! Are there any side effects from suddenly using it (i.e. bloat!)?

    I bought my first crock pot a couple of weeks ago and made a delic beef stew! I’m planning a chicken noodle soup sometime soon, but some type of chili always is enticing 🙂

    Thanks for the easy crock-pot idea! I put together something very similar for an easy Friday night meal, which left me free to enjoy the start of my weekend. I really need to get the crock pot out more often 🙂
