Swim in sorbet

I’m more of a cake girl (or pizookie girl!) than an ice cream girl, but twice this week, I’ve fully appreciated the beauty of sorbet.

The Pilot and I took the family on a walk

and then walked over to Frost for a little treat.

It definitely stayed on my mind because when my friend Lee Anne texted to ask if I wanted sorbet with the baby meal she was bringing over, I didn’t turn it down.

The dinner she brought was absolutely amazing

Vegan black bean soup with avocado, cilantro, lime and pulled pork for the Pilot

and the salad of my dreams: arugula, goat cheese, walnuts, strawberries and homemade vinaigrette

After digging into the blackberry sorbet, I had an incredible lunch:

(Salad, pork tenderloin for the Pilot, potatoes, broccoli and fruit, which I’ve been using as oatmeal and yogurt topping all week)

We’ve been so fortunate to have friends and family supporting us for the past couple of weeks and helping us out with grocery, errand runs, and food. I’ve also been very thankful for all of the kind words, love and packages from my blog friends. A recent surprise:

Our last baby meal is on Monday, and then I’ll be back in the kitchen again! Since I’m still juggling and trying to figure out time to do things, what are your favorite quick and easy meals? I think the slow cooker and I may be reunited…

I love icecream, I actually got an icecream maker for christmas so that I can make my own icecream and sorbet from scratch now!

I’m just finishing up Junk Free January, and at first struggled with what to eat, because I’m a busy person and need quick food. I put up a post today with some piccies of the things that have made it work since lara bars were out (too high in fructose for this particular challenge). The almond butter jar stayed close to my heart though. I’ve put some pics up here. My ‘go to’ meals were crepes, smoothies, soups and salads that would work the next day as leftovers. You have great friends!! I hope that if I am able to get pregnant that my friends can cook like that! (it’s been a tough road and your posts about your trials have certainly helped! thanks for sharing.)

My easiest meals: kale salads and baked sweet potato :)

Moosewood cookbook has an awesome recipe for sweet potato and black bean burritos. The recipe makes a ton and freezes really well. Just make the burritos, wrap each in foil, and freeze.
BTW- I have been having breakfast cookies and cookie dough cereal for the last week and am addicted. I was out of regular almond milk this a.m. so I had to take one for the team and use my dark chocolate almond milk…. What a sacrifice!

My favorite easy meal is Barbacoa beef, stuffed in soft corn taco shells, with the works. I can cook it all day in the crock pot (I use those liners) while I’m at work and it just takes a few minutes to throw everything else together. And the leftovers are amazing – and you can make quesadillas, top salads or make frittatas or quiche. I found my recipe online and it makes trips to Chipotle unnecessary. :) A good thing!

Those baby meals look delicious, and blackberry sorbet is now the only thing on my mind. :)

Slow cooker meals are always great when you are short on time to actually “cook.” A lot of time on the weekends, Daniel will smoke a chicken (or two) or some other type of meat, and we will throw it together with something different each night (pulled chicken tacos, quesadillas, soup, fajitas, roasted veggies, etc. It makes weeknight cooking so much easier!

Cooking Light’s website has lots of good ideas, including crock pot ideas. My standbys are spaghetti and tacos…quick, easy and you can make both of them super healthy.

One of my favorite quick meals only requires black beans, a jar of salsa, eggs, and tortillas. In a large skillet mix a can of drained black beans with a jar of salsa and cook over medium heat until warm. Make 5 indents in the bean mixture and crack an egg into each. Cover and cook until the eggs are set and to your liking (here we do about 5 minutes cause I like the egg yolks to be drippy). Spoon into a tortilla & enjoy! Avocado & goat cheese would be super delish toppings!

Quick meals? I have a zojirushi water boiler, so I have hot water around the clock (4 liters worth). I use it for your typical stuff (coffee press, tea, noodles, oatmeal), but I also use it to speed cooking up. When I boil water for pasta, I get it from my water boiler so it take less time for it to come to a rolling boil (60 sec versus 15 min).

I also use the bejesus out of my crockpot, breadmaker, rice cooker (to make complete meals, not just rice), and pre cooked chicken patties and sausage from Costco and TJ’s.

I take a pattie, some brown rice, some kind of veggie, and mix it all up with spices or marinara. It looks like hell but tastes amazing.

I’ve been reading for awhile now, and I just wanted to say that I LOVE your recipe and workout ideas! I’ve been randomly picking past shape-up workouts to do, and after you started posting the newest winter shape-ups I have been incorporating them into my weekly workout plan! I really enjoyed week 2, and had my boyfriend do it with me on Friday..he’s still sore :p
Breakfast cookie and egg puff are genius and so fast/easy that they are perfect before classes start every morning (I’m a med student, so time is precious).
