Slow cooker shredded Mexican chicken

A glass of wine and jammies = pretty much the best way to cap off a Monday night. Or any night, really.

When are you too old to wear the PINK collection? Actually, don’t answer that.

Some other highlights from the day:

The Schweaty May workout

Mom came over in the afternoon to hang out with Livi and told me to go run errands or workout. Since Liv and I had already done a couple of errands in the morning morning, I was excited to work out during the day instead of at night.

The workout was indeed very schweaty and it was nice to go through the entire thing without stopping to write (I test every workout before posting them, minus the ones I created while preg) 😉 Have you tried it yet?

-#smoothieaday: Green-a-colada! I skipped the banana because I’ve been kind of meh about them lately – used 1/2 avocado instead

So refreshing and naturally sweet from the pineapple.

-Visiting my great-grandmother, Livi’s great-great-grandmother (tatarabuela). She said that Livi wanted some frijoles and tortillas- soon she’ll get to experience the joy that is nana’s cooking.

-My own little Mexi meal with the Pilot at home, which cooked away in the slow cooker for most of the day.

When we went to Kelly and Shooter’s house for Cinco de Mayo, Kelly made some seriously awesome chicken taco meat. I asked her what she did and made my own little version:

-Put two chicken breasts in the slow cooker with 4 garlic cloves (whole) and enough veggie broth to go halfway up the sides of each

-Topped with 1/2 t cumin, 1/2 t oregano, 1/4 t cayenne, sea salt and pepper

-Cooked on high for 4 hours and then removed half the juice, shredded the chicken with a fork

and added 1/2 can each of organic diced tomatoes and black beans

(froze the rest of the tomatoes and saved the rest of the black beans for tomorrow’s lunch salad)

-Adjusted the seasonings as necessary

We enjoyed the taco meat with corn tortillas, greens, salsa, avocado and queso (for the Pilot). I was going to make rice and beans but skipped it- all we really wanted were the tacos anyway.

I’m not sure what we’re up to today –definitely a grocery haul- but I’m going to try and choreograph a new Zumba song for tomorrow. I did two new ones on Saturday, so I’m slowly starting to revamp my playlist.. if I don’t have at least one new song each week, I hate all of my music. 😉

    That is similar to how we make the meat for our tamales during Christmas. Granted, we use a TON of spices and ground red peppers to spice it up enough to make 200+ tamales. We have a big familia 😉 now I want to make the shredded chicken. Crave.

    It’s so sweet that Olivia gets to hang out with her great great grandmother. I miss my abuelita very much.

    I had to smile when I read that because I wonder the same thing…often. In college I used to rock PINK when I was going to classed and didn’t want to get dressed, but still look “cute”. I justified wearing PINK in grad school because that’s totally still college, right? And now I’m 26 and I just. can’t. stop. When do I have to let gooooooooo? 🙂

        Yeah my almost 30 year old self is rocking some super comfy Pink sweats as we speak…I mean I figure as long as I don’t wear them in public I’m still ok right? I just won’t tell anyone I actually just bought this pair because they were so stinkin’ comfy and they aren’t from back when I was still in college 😉

    Livi is so precious. Im going to alternate your may workout with my toneitup girls dvd. Im not bikini ready for the beach in 4 1/2 weeks?! Hopefully this will help. Im about to put those tacos on my crockpot right now; thanks for the recipes.

        The chicken tacos are wonderful! I think you would like this dvd cause you can mix & match workouts iif you want. The pure2raw sisters have been doing it & are supposed to do a review. It motivates me because they are so cute & the hawaiian scenery!

    Never too old for PINK!!! I worked at VS for 3 years (ending 2 years ago), so I have a ton of stuff from there. I’m 25 and I still wear their t-shirts, tanks, sleep shorts, undies, and sweats all the time. Those shorts you’re wearing are totally cute, and I think they’re definitely still age appropriate!

    We were calling Sunday Mexi-Mama’s Day… since we ate Mexican for lunch and dinner with our mama’s! We didn’t really plan it that way, but I wasn’t sad about it haha. So yummy! Those tacos look delish, I never use our slow cooker… fail!

    I have a similar chicken taco recipe. I make a lot of it because then I put it on salads, quesadillas, etc. I put a few chicken breasts in the slow cooker with taco seasonings and a jar of chunky salsa and let it go to town. Then when it is nearly done, I break it up with forks. Delish! I also make lentil taco “meat”. I soak brown lentils for a few hours, then drain. Chop an onion and toss into a skillet then add the lentils and some sodium free chicken broth and seasonings and let it simmer. I smush (technical term) the lentils a bit while they cook. I use this in place of meat in tacos. I crave this dish often!

    I want to make a whole big pot of that chicken and use it for the weeks meals. Yum! I also saw on pinterest the other day that if you put whole cooked chicken breasts in your kitchen add mixer with the mixer that has the 3 triangles and then spin on medium it shreds in seconds. I LOVE simple kitchen tips like that!

            es la verdad! cuando estaba viviendo en valdosta, nunca podia oir el espanol y pienso que ha afectado mi abilidad a hablar. es muy beneficial para oir el idioma frequentamente, especialmente cuando estoy aprendiendo a hablar el primer vez.

    Awesome shortcut to shredding chicken: put the chicken into a stand mixer fitted with the paddle attachment. Put the speed on the lowest setting and watch it closely, as it shreds really quickly. 🙂

        I was just about to comment and suggest this! My hubby and I love chicken salad sandwiches made with shredded chicken and cesar dressing- but I hate shredding chicken! The stand mixer shortcut is FABULOUS. Perfect every time. Just be sure to do it while the chicken is hot.

    That photo of Livi with her great great grandma is sooo sweet! I must say miss Livi is quite the fashionista already!

    You have posted quite a few slow-cooker recipes that I want to try. I think with meat (as opposed to vegetables) I’m always afraid I won’t cook it enough and/or as soon as I leave the house something will malfunction. That chicken looks so good though and I’ve got some Trader Joe’s organic chicken breasts in the freezer. Maybe I’ll defrost them before the weekend and try it then! So far I have liked every recipe I have tried on this blog.

      if you’re scared about doing meat, try browning it in a pan first. that always keeps me from feeling like it will be undercooked. hope you like the tacos if you try them!

    I’m turning 25 this year and still dress in the junior section. Sometimes the prints are TOO MUCH but then the ladies section is too… old for me and the prints are ugly as well. I can’t decide! Good thing I’m just in workout wear all the time!
