Spicy almond butter zucchini chips

A couple of weeks ago, I got my hair Keratin-ized. It had been over a year (!) and I was so excited to defrizzify my mane.

Madre hooked it up -you can read more about the type of treatment I get here– and I gave myself a kink by wearing a ponytail a couple of days after getting the Keratin done. (I figured since the processing time had passed that it wouldn’t make a difference. Word to the wise: wash your hair first, then ponytail is ok.) Lately, I seem to forget things, little things. You’ll be talking to me and mid-sentence, I’ll stop whatever I was saying and then trail off…

Like when I told the Pilot I thought my plantar fasciitis was flaring up a couple of weeks ago.

“The bottom of my foot has been hurting again, so I think I’m going to go roll it on a tennis ball for a while”

“Why is your foot hurting?”

“You know.. the plantar.. fah huh huhhhh…..”

Not something I’d usually forget.

Anyways, recipes seem to have a way to of sticking in my mind, no matter what else takes over and deletes the valuable information that used to be stored there. For example, my spicy almond butter sauce recipe. An easy one, but I’m pretty sure I’ll never forget the golden combo, and most recently made some zucchini chips coated in the dressing. 

A mix of the usual suspects coated strips of zucchini, and dehydrated into the perfect portable snack.

Ingredients

-3 medium zucchini

-2 T almond butter

-1/2 t honey

-1/2 t sesame oil

-1/4 t garlic powder

-1/8 t sea salt

-hefty pinch of cayenne

1. Shred the zucchini into “chips” by using a vegetable peeler. 

Ingredients 2

2. In a small bowl, combine the sauce ingredients and pour on top of the zucchini. Mix well to thoroughly coat.

3. Dehydrate on Teflexx sheets (or on a cooking sheet in the oven, lowest setting with the door ajar), overnight at 115*

4. Mourn the loss of those that mysteriously disappeared during the cooking process… enjoy the rest 😉

    I had the express Keratin treatment done in March, I just hated that I could not wash my hair that often. And it’s $$.

    when you peel your zucchini do you cut them in half and peel the entire vegetable, seeds and all?

    The chips sound really good, especially with the cayenne kick! My mom’s Caesar salad dressing is a recipe I’ll never forget! I haven’t made it in over a year, and I still remember how!

    I’ve been thinking of getting a keratin treatment for my frizz-ness. It has been OUT OF CONTROL lately.
    Also, would the spicy almond butter be just as good with agave or something else vegan?

    I finally got my hands on a Blueberry Muffin Lara Bar. it’s good, even though I don’t normally like cashews! have you tried the pineapple upside down one?

    Your hair looks really good, btw. If you actually have the rubber band line, I can’t tell at all! Not even one bit.

    And……you make me want to move back to Tucson. I didn’t like it while I was there, I hate cacti and the ones that actually attack scare the bejesus out of me, but somehow you make Tucson sound appealing and not scary.

    I never do anything to my hair. I probably should, I know it’d look better, but I am really stingy and I don’t like knowing I’ll have to go back.

        It’s top secret… but I have pumpkin growing in my garden so I’ll be making all kinds of GF pumpkin desserts this fall and sharing the best of them!

    Before I read anything in this post, I thought to myself, this is a Gina, circa 2009ish recipe. Dehydrator, almond butter, making veggie chips, oh what memories! These look great, as usual.

    I brush my hair in the morning – that’s generally as far as I go. So definitely no treatments – I think it’s just overall laziness. 🙂

    Your hair always looks cute..even when you refer to it as messy!! The first thing I thought of when reading the part of this post about you forgetting things, etc. is that you must officially have mom-nesia now! I’ve had it bad since my first was born…um, 12 years ago. It doesn’t get better, and now I find I ask my kids what was it I told them to remind me to do, etc. Sorry to be the bearer of bad news!

    I’m going to ask my hairdresser about the Keratin treatment next time I’m in to see her. I used to have my hair chemically straightened, but it’s so harsh. I’ll check it out!

    Mhm, those zukes look delish – as if you’ve put cheese on top. I usually do my eggplants this way, they turn out crispy and salty, and more like an indulgent snack. Now I definitely have to try the zuke-version!

    I have fruit crumble in my brain and can make one in five point oh minutes if required. Pot luck? Fruit Crumble. Christmas dinner? Fruit crumble. Friend in hospital? Fruit crumble. Cousin just had another baby? Fruit crumble. It’s such an ‘everything’ dish.

    Out of the three children my mum gave birth to, only my brother has awesome thick hair. My sister and I both have wimpy hair that doesn’t grow fast and splits easily. It’s very unfair.

    Your hair looks fantastic! My last treatment was a cut and style. Sounds simple, but with hair like mine, I pay a lot for cuts and when I walk out, it’s one of the only days I actually love my hair.

    The recipe looks fantastic- I don’t blame ou for gobbling them up before taking a photo! My never need a recipe meal is veggie chili. So simple, but so delicious!

    I will never forget how to make my moms macaroni salad or her baked macaroni and cheese both of which help me not at all (they’re not vegan) but everywhere I go I get asked to make them

    Those chips look delicious! I love almond butter sauces for stir fries, and I bet it tastes amazing on these chips too!

    I’ll never forget the recipe for my homemade granola – I make it at least once a month so it’s permanently stuck in my memory now!

    Also, I need to look into this treatment! I’ve used Keratin shampoo before and loved it but my hair is pretty crazy!

    I LOVE keratin! It does wonders for my crazy frizz poof hair. I bought mine on a Living Social for $99 and then when I was there I could buy an additional one for the same price so now I’m getting one again in the fall. It did drive me crazy to not be able to pull it back though!

    I always just find myself throwing things together when I’m cooking and it pretty much always turns out tasty, the only downside is when my hubby really loves something and I can’t remember exactly how to make it again haha

    My hair has taken on a bit of a frizzy texture over the years and about a year and a half ago my stylist recommended the brazilian blowout. I got it done and I have never looked back. It’s pricey (about $300) but for me it lasts about 6 months and makes my hair so much manageable in the meantime that it’s definitely worth it!
