Mango-mojito sorbet

A bit of mint in this mango sorbet gives a flavor nod to my favorite mojitos. This mango mojito sorbet is the perfect refreshing treat for hot summer nights! 

It was funny to read a post about this on one of my favorite blogs, as it’s something that’s been on my mind lately. For a couple of months now, the Pilot and I have been going on regular date nights. We have an awesome babysitter -she interned at Disney and LOVES kids- and she comes regularly to stay with sleeping Liv while we go out.

At first, it felt like it was extravagant to be going out so often, but then I realized how much we’ve been needing it. It’s important for Liv to grow up seeing a mom and dad that are in love with each other, and take time for each other, so that she knows what to look for in a caring relationship when she’s older. So many of the books I’ve read about parenting emphasize the fact that kids feel more confident and safe when their parents prioritize each other in addition to their children. It was something that was important to me, but fell by the wayside with raising a newborn paired with the Pilot’s work schedule.

The Pilot and Me

It’s been really nice to date my husband again 🙂

Usually for our date nights we’ll grab dinner and/or drinks, but this past Friday night, we had just enjoyed drinks and dinner with my family.

Liv’s sitter was still coming over, we were stuffed to the brim and on the edge of a food coma, but decided we should still get out of the house and enjoy some time together. Our date night? We went to Target, bought a frisbee, then went to the park to play nighttime frisbee together.

For someone who isn’t’ very athletic, I take frisbee very seriously 😉

Many nights out with 3am stops to Viva Burrito (for the record, a potato, egg and cheese burrito tastes even more amazing after a night of dancing), house parties, hot tubs and mojitos…. lots of mojitos.

I’m not sure if he’s made them since I started the blog, but the Pilot is the mojito king. He stirs everything in a big cauldron of minty justice, and you can’t taste the rum at all. It’s dangerous.

I couldn’t help but think of his legendary mojitos while I made this sorbet the other day, but then again, anything mint reminds me of his legendary mojitos.

Mango Mojito Sorbet Recipe

No alcohol in this, but let’s just say that you could totally replace the water with a little clear rum or vanilla vodka…. Just sayin.’

Mango Mojito Sorbet

Ingredients

Scale
  • 16 oz frozen mango chunks
  • juice 1/2 lime
  • 1/2 pack of Stevia or your favorite sweetener, to taste
  • 46 fresh mint leaves + more for garnish
  • generous pinch of sea salt
  • 1/31/2 C water, for desired consistency (replace with white rum or vanilla vodka for a party)

Instructions

  1. Blend everything in a high-speed blender until it reaches a smooth and creamy texture.
  2. Scoop into serving dishes (or a single bowl…) and garnish with mint leaves.
  3. Enjoy your summer (or summer cocktail!) in a bowl 🙂

    How fun! The hubs and I have just started making date night a priority again as well. The baby is turning a year this week and Momma needs to get out. We’re having a blizzard here together and I’m dying to go night sledding for the next date 😉

    I loooove Frisbee! My man and I use to play this for hours at the beach when on hols. My parents always went to date nights and I loved when they were all dressed up just for each other and smelled from grown-up perfumes, I always thought date nights are mystical 🙂
    That Mango Mint Sorbet looks so good, but I even more like the Mojito part, I am such a Mojito fan!!

    We always get Viva’s for breakfast when I’m in town visiting family! (Counting down til May trip!) Although my uncle mispronounces it Via’s and that has stuck! I can tell you live on my grandma’s side of town (I recognized the library branch where she goes!) – do you have any rec’s for kid friendly restaurants? My LO will only be 5 months and my grandma is recovering from hip replacement so a casual place with fairly quick service would be nice! Thanks 🙂

      blanco is fun and family-friendly. there’s also eclectic, zinburger, the abbey is fantastic, and it’s not super close, but mama louisa’s is another great option 🙂

          Thanks so much! We usually eat hole-in-the-wall Mexican food for every meal (and then smuggle tortillas back in our suitcases…literally) so it will be fun to try somewhere new 🙂

    My hubby and I have been together for 20 years and 2 babies (we got together in high school) and we had kids in our early 20’s so to fight the odds we have engaged in monthly date nights and atleast one adult vacation per year since our daughter was born 12 years ago. It is SO important and I don’t feel the LEAST bit guilty, my kids have grown up to be independent wonderful kids, and I’m sure we left a couple of times when the baby would cling and cry (and I’m sure I felt guilty at the time) but now they would never remember anything like that and our marriage is stronger than ever!!!

    I say definitely couples need to prioritize their time together, it makes them better parents!!

    Sometimes we have regular dinner and movie date nights, sometimes a concert, sometimes even go out and get drunk and dance at the club fun nights! It all depends on the mood. 🙂 Enjoy!

      I’m getting married Sept. 1st to a man I have been with for almost 6 years (we also have a 4 1/2 yr old!). I will definitely take your advice and can the mommy guilt and make date night a priority!

    sorbet sounds sooo good right now! we’ve been trying to alternate planning date nights for eachother every month. it’s so easy to let them escape you, but it’s important to still “date” i think!

    Our favorite kind of date night is getting sushi, wine, and sake, then going to our favorite health food store to get vegan raw cookie dough (we aren’t vegan, but we love raw cookie dough and this is the only way we’ll eat it), then go home and stuff our faces while we watch TV. 🙂

    I cannot emphasize enough now much I love this post! As the daughter of parents who act the way you and the pilot do, I thank my lucky stars to have such an example in my life!

    Maybe that’s why I am still single:) It makes me reflect upon what I want out of a relationship beyond the serious stuff which is always emphasized.

    YUM! This is great for summer BBQ’s. It’s so important to take regular date nights even when life gets crazy busy. My favorite is just to walk the dog together. It’s a great way for us to reconnect at the end of the day.

      you’ll get there! i used to feel really guilty and anxious… but after i got over the same fears, i was much happier to have some freedom. most of the time, liv doesn’t even know we’re gone because she’s asleep when we leave. it works out well that way

    This sorbet looks amazing! I want to adapt the recipe/method to use in my Yonanas machine. I think I would just chop the mint seperately and mix it into the fruit once it has been run through the Yonanas.

    As a mom of two, in the beginning when they were young I felt so guilty about taking a night off. Now that the boys are teenagers and we have been married for almost 24 years, I realize how wrong I was!!! Now that we get out together more often, we are definitely closer than ever. Date Nights are so important. Find a trustworthy babysitter and get out together!! Laugh and have fun. So important.

    My parents didn’t do a lot of dating after I was born because they thought it would be better to stay home with me, but I really wish that they would have gone out some more! I think it’s great that you and The Pilot make it a priority to have some time to yourselves 🙂

    My Husband of 14 years and I never took time for ourselves, away from our 3 sweet girls. I was too afraid to leave them, guilty-mom feelings, too much work to just get out – you name the excuse, I had it. Fast-forward to now: A recent cross-country move, being stir-cray cray cooped up in this house all winter long, lonely, depressed, etc… Well God smiled down upon my fabulous family of five, because my awesome in-laws moved here to the South 1 week ago, and we are sooo down for date nights now!

    I made so many excuses (that you make when you are terrified of being a bad mom), that just the fact that you are concerned with being a bad mom (in my case), makes you a good mom, ya know?

    I am absolutely relishing the near future of many many date nights with The Italian, just as soon as my in-laws unpacked. Glorious. It will be so GOOD for the Girlies to see their Momma & Dabi (the baby’s nickname for her Daddy) out & about and in love with each other. What a gift for them! I cannot wait….. :)0

    My hubby and I are down at Ft. Huachuca (I know so exciting!) so we go up to Tucson frequently, you know to be near civilization, and we recently tried Monkey Burger just for those sweet potato fries. Ah-mazing!!! I’ve been thinking about them ever since! 🙂

    I think my favorite dates with the boyfriend have been the simple ones – getting a sandwich and taking it to the park or the river to eat. Or going to a nearby town known for their ice cream and then finding a pub with live music.

    We were terrible about making time for ourselves after our first baby. I’m a stay at home mom who never spent a night apart from her until the second was born over 2 years later, and she had horrible separation anxiety that took awhile to get over. I realize now that the better lesson would have been showing her that it’s okay for mom and dad to leave, that she’ll be safe and that we’ll always always come back. Now my parents take both girls for an overnight once a month and we have an occasional babysitter. We are all happier and more balanced!

    That is so great about you and your husband still making time for just each other. My parents separated when I was three so I never really had a strong father figure in my life, and when I met my fiance I noticed his parents would go on regular date nights, and I thought that was weird at first because it was something I wasn’t used to. You guys are too cute. Liv has great parents.

I have a 5 week old son & i was just curious as to what you did for healthy dinners/meal when Liv was a newborn? I’m sure you remember how hard it is to find time to cook/meal prep when they are this young. Any tips I would so appreciate!
    ps- it’s only been 5 weeks, but I sooo already miss dating my husband & your recent post totally got me excited and reassured me it will happen again some day!

      I have a 13 month old and when she was first born I used my crock pot non-stop! Check out the crockin girls website and Stephanie O’days website. When in a pinch- 4 chicken breasts and a jar of salsa- cook on low 4 hours- serve over brown rice or quinoa. Hope this helps.

      i made a lot of snacks to have on hand, like amazeballs, trail mix and bought lots of fruit and bars. we were fortunate to have meals brought to us by friends initially, and from then on, we kept it super simple with grilled chicken, sandwiches, big batches of chili and omelets. lots of breakfast for dinner!

    That sorbet is such a simple, amazing idea…mostly due to the fact that I’ve had a mint obsession lately (even in smoothies).

    You briefly mentioned the array of parenting books you’ve read. Did you ever do a post on which ones and what you thought of them? My little guy is 2 months old now, and although I still have some time, I am looking for recommendations for everything from sleeping to solid foods 🙂

    Wow that mango mojito looks AMAZING! I am having a dinner party on Friday night and may have to slip this in the menu 🙂 My hubby and I make one date night a week and its so refreshing for our relationship! I honestly have such a hard time when he goes away to Asia but when he comes home its like seeing him again for the first time!     I just want to say how much I love your blog! If I ever can get my butt in gear, I’d love to use yours as my inspiration!
    I don’t have children yet, but I can definately understand how having an infant would take priority for a little while. But I agree so much that as you can comfortably fit it in, it is super important to let that love between husband and wife become a priority again to keep the relationship strong, and provide a good model for your daughter.
    You’re doing awesome!

    The Mango-Mojito sorbet looks amazing and I so wish I had the perfect Mojito recipe. There’s a Brazilian restaurant here that makes the best ones I’ve had…the kind where you can’t taste the rum. I just saw Kath’s blog post where she talked about her day at Canyon Ranch and I don’t know why that homemade sports drink looks so good but it does. Maybe it’s because I read the post after going on a run so I was thirsty? 🙂
