Welcome back, Cobb

Hi friends! Hope you’ve had a wonderful day! It’s been a bit of a busy week already. Yesterday, I went to go to see the doc for some heart palpitations I’d been experiencing. I’ve had them on and off for a couple days along with some extreme nausea and fatigue. They wanted me to go in and monitor me and the baby to make sure everything is ok. Thankfully, all is good. I just have to be mindful of how I’m feeling over the next couple of days. It can always been off-putting when you don’t feel like yourself, but when you have someone else depending on you (and your body!) it can be a little scary. I got to see little miss dance around the screen, and felt instantly relieved. After a few hours, they gave me the “all clear” to go home, but I have an appointment with the midwife today.

Summer is officially here. The beach was packed!

A night out shopping -Liv went through a growth spurt and suddenly had zero shoes that fit her- and Ruby’s Diner for dinner.

I wanted to post this quick and easy dinner option we made the other night: homemade Cobb salads. I’ve made these a few times for lunches, but it’s been ages, and we never think to make them for dinner. (They’re especially delicious with tempeh bacon!) It was the Pilot’s suggestion, and when he’s on the salad train for dinner, I never want to be the one to stop him. 😉 We boiled some eggs, he grilled the chicken, and we served it with turkey bacon, heirloom tomatoes from our little garden, olives, romaine, cucumber, avocado, feta and Goddess dressing.

Livi went crazy for it. We will definitely be adding this into the regular dinner rotation.

Sadly, I was still feeling pretty terrible and mine was left mostly untouched. You know I’m not feeling well when I won’t devour a beautiful meal like a savage beast. (I wrapped it up and ate it for lunch this afternoon.)

    So glad you are doing okay! Sending healing and healthy vibes your way! And that salad looks so filling and delicious. I will be making that combo! One salad I have been LOVING lately is fresh spinach, goat cheese, grilled chicken, poppy seed dressing and the most juicy and delicious local strawberries. It’s the perfect summer combo.

    I put everything in salads. My favorite is a mix of spinach and romaine with a fruit (apple or strawberries), a cheese (feta or goat Gouda) or avocado, a nut (walnuts or sliced almonds), grilled chicken, bell pepper, and cucumbers. With a champagne vinegarette or poppy seed dressing. So tasty!!

    I am the same way, if the husband proposes a salad dinner…. There’s no way you can say no! 🙂

    And this week, I rediscovered blueberries and whipped cream for dessert! I’m been overdoing it with the sweet treats recently and that’s been a good, healthier way to satisfy my sweet tooth after dinner.

    I know you’ve talked about acupuncture on the blog before… I am seeing my acu for heart palpitations today (they coincide with my menstrual cycle) and are a symptom of liver chi stagnation… may be something to inquire about next time you see an acupuncturist, since I know you like holistic medicine, too 🙂 xx

    Saw that pic and had heart palpitations myself! So relieved you and baby girl are both okay. It’s so difficult for us mama’s to listen to our bodies and rest when we need it. Take care of yourself and baby girl!

    I could eat salad all day every day, especially cobb salads. Lately I’ve been making southwestern salads with romaine, black beans, corn, salsa, pico de gallo, and a mini wholly guacamole. It helped convert my husband to the leafy green side…

    I’m sorry to hear about your heart. I understand how scary it can be to feel out of control when it comes to your body. I’ve been suffering with hormone problems now for a year. I can’t explain it, but I don’t feel like myself and want to sleep all day. I’ve been to every Mayo Clinic doctor and was passed around like a Thanksgiving turkey without any real answers. I’m now working with a holistic doctor who is looking at everything together and hopefully will get me on the path to recovery. Wishing you well!

    Kind of a scary event! I hope you get some time to rest and take good care of yourself, mama! Glad you are both OK. On a lighter note, that snake skin bra scenario is pretty funny and would so be my same luck!

    Anything heart-related is scary! I have a weird arrhythmia that I’ve had monitored since college. Stress, caffeine and heat trigger it so when I’m pregnant, I have to be extra cautious, even though it really is just annoying and a nuisance more than dangerous (in my case). Glad you got the OK from docs!

    I am all about the salads lately. I love using the new TJs kale brussels cabbage mix with romaine, tomatoes, bell peppers, along with chicken, sweet potato, avocado, and beets. and drowned in salsa and hot sauce. ah its so good.

    Praying for you. I was diagnosed with mitral valve prolapse a few years ago. I would get palpitAtions every so often and this was an easy diagnosis for the cardiologist with echocardiogram and monitor. Caffeine, stress are triggers for me. Also that” time of the month “!

        It’s going great! The first weekend I felt pretty overwhelmed (so much ahead to learn!) but the second weekend I felt a lot more confident. I’m so excited to absorb it all and start using it. Thanks for asking 🙂 Are you almost finished? Another question…do you get a lot of homework? We have quite a bit of outside reading and written work!

    Oh goodness, glad you and baby girl are ok! I hope things continue to be just fine.

    We did a Cobb salad for dinner one night last week too, and it was so good! My favorite combo lately is spinach topped with chicken, strawberries, candied pecans, goat cheese, and poppy seed dressing. Mmm!

    It’s not quite a salad, but I’ve been all aboard the Zucchini pad thai train recently. I hadn’t used my spiralizer in a while but brought it back out the other week when I was feeling too hot to cook anything. Now it’s my staple while I deal with the swampland that is DC!

    I LOVE salads!!! But I am on a pretty awesome yet strict eating plan to rid myself of the preggo pounds. When I was preggo last summer I literally went to Wendys every other day and got the BBQ ranch salad (without dressing). This past weekend I wanted it sooo bad. So I decided to make it at home since I had Turkey bacon…heres the combo I used:

    -Baked chicken breast (grd chicken baked into patties without season)
    – romaine lettuce
    – yellow cherry tomatoes
    – red grapes
    – steamed corn
    – turkey bacon
    – bell peppers
    – Sweet Baby Rays Honey BBQ sauce

    Came out sooo good and hit the spot. Best part is I saved money. 😀

    I would imagine it is so scary having heart palpitations with a little one growing inside of you. I occasionally get them (without a little one) and I know I tend to get paranoid and frantic when I do. So glad you are feeling better.

    I had recently forgotten how good a piece of toast with smashed avocado with a little salt, pepper and crushed red pepper is. It has been my go-to since coming home from vacation and I can’t get enough. Sometimes I through some spinach and an egg on for a quick morning breakfast.

    I’m glad you’re feeling better!! Currently I’m loving super greens and because I’m a jersey girl I’m all over our tomatoes and corn. I made corn on the cob with chili flakes, lime juice, OOVO, and goat cheese. Then I cut it off the cob and put it in my salad

    I hope you get good news from the midwife! I’ve also been undergoing extra labs this week… my initial glucose test levels were high so I had to do the 3 hour test plus my blood pressure is on and off again high so they wanted to check my protein levels. Here’s hoping for better results!
