Soft and Healthy Oatmeal Peanut Butter Cookies

Sometimes you just need a cookie.

Healthy oatmeal peanut butter chocolate chip cookies

(or four…)

I was really hankering for cookies the other night, and since my little sous chef is always willing to help me bake, I thought it would be fun to sneak off to the kitchen to make some cookies.

As far as the cookies go, I’ll let the pics do the talking since my mouth is full.

These ones are chewy, with melted chocolate chips, and also remarkably light for how decadent they taste. We added almond meal to the dough which always gives cookies a pleasant nutty taste, and satisfying oats.

Ingredients

Scale
  • 1 cup oats
  • 1/2 cup almond meal
  • 1/4 tsp cinnamon
  • pinch sea salt
  • 1/2 cup chocolate chips
  • 2 tbsp melted butter
  • 1/4 cup maple syrup
  • 1/4 cup peanut butter
  • 1/2 tsp vanilla

Instructions

  1. Pre-heat the oven to 350 and spray a cookie sheet with olive oil or nonstick spray.
  2. In a large bowl, combine the oats, almond meal, cinnamon, sea salt and chocolate chips. Mix well.
  3. In a separate bowl, whisk the melted butter, maple syrup, almond butter and vanilla until well-combined. Add the wet mixture to the dry and stir well.
  4. Make cookie shapes onto your cookie sheet (I like to use a melon ball scooper) and bake for 10-12 minutes until set and light golden brown. Remove from the oven and allow to cool one minute on the sheet before transferring to cooling racks. Enjoy!!

I was originally planning on freezing some to have as snacks, but I think we all know how that worked out.

xoxo

Gina

I’ll definitely be trying these. I made the flourless pumpkin bars, again, and I swear we can’t keep them in the house for 24 hours!

    • Fitnessista on November 10, 2015 at 11:13 am

same! we go through them way too quickly 😉

  4. Amanda on November 10, 2015 at 9:57 am

Hey Gina. I want to make these today the title says they are oatmeal peanut butter cookies, but there is no peanut butter listed as an ingredient. Is this a typo? I’m confused.

    • Fitnessista on November 10, 2015 at 10:15 am

sorry about that. yeah, it was a typo. def peanut butter (updated in the post now – thanks!).

      • Amanda on November 10, 2015 at 10:33 am

        So no almond butter then?

        • Fitnessista on November 10, 2015 at 10:53 am

          that’s right. no almond butter.

      • Amanda on November 10, 2015 at 2:07 pm

Made these today! So good! Very easy to whip up, took about 10 min to throw it all together. I’m a breastfeeding mom on maternity leave. I’ve had a crazy sweet tooth lately and these were perfect! Thanks!

        • Fitnessista on November 10, 2015 at 3:58 pm

so awesome! happy you liked them 🙂 i feel ya on that. i’m a sugar monster lately haha

  5. Crystal on November 10, 2015 at 1:18 pm

Ahhh these have almost everything I love in cookie form. I wonder if I could sub honey or agave in place of maple syrup?

    • Fitnessista on November 10, 2015 at 3:59 pm

yep! honey would be sweeter, so i would start with less and see how they taste

  6. Beth on November 10, 2015 at 1:24 pm

Is almond meal the same as almond flour? I have never seen almond meal in the stores. yummy

    • Fitnessista on November 10, 2015 at 3:59 pm

almond meal is ground up almonds -they have it at trader joes- and almond flour is usually dehydrated and ground almond pulp. they’re usually interchangeable in recipes though

      • Beth on November 10, 2015 at 4:59 pm

Thanks. The Trader Joes in my part of the states stopped carrying almond meal a few years ago now 🙁

        • Fitnessista on November 10, 2015 at 5:16 pm

what?! that is a bummer. thank goodness ours still has it

  7. Ashley on November 10, 2015 at 1:46 pm

  9. Amy Dreier on November 10, 2015 at 2:11 pm

I have a little one with a nut allergy, so what would I use in place of the almond meal? Thanks!

    • Fitnessista on November 10, 2015 at 3:58 pm

      oat flour would work well!

  10. Jaime D on November 10, 2015 at 2:35 pm

Congrats on your new addition and thanks for the great recipe! If I don’t have almond meal on hand, what would be a good substitute?

    • Fitnessista on November 10, 2015 at 3:58 pm

oat flour would probably work well! just grind up some oats 🙂

  11. Amanda on November 10, 2015 at 3:03 pm

Do you think you could use regular flour if allergic to almonds?

    • Fitnessista on November 10, 2015 at 3:58 pm

i think oat flour would be great!

      • Amanda on November 10, 2015 at 4:00 pm

Thanks! These just look too good not to make!

  12. Heather J on November 10, 2015 at 4:18 pm

How many cookies did you get out of this recipe? Looks good!

    • Fitnessista on November 10, 2015 at 5:17 pm

if we didn’t eat so much dough, i would have a better answer haha
my guess is 12 and they were average cookies (not the super small ones)

      • Heather J on November 10, 2015 at 7:12 pm

Thanks! I’ll try to make them soon and report back 🙂

        • Heather J on April 24, 2016 at 7:34 pm

Finally (!) made these and I got 12 decent sized cookies 🙂 I did have to add one egg as I found the batter didn’t stick together without.

  13. Lindsey M on November 10, 2015 at 5:36 pm

Made these tonight substituting some Justin’s almond butter instead of peanut butter – absolutely delicious! The perfect after dinner treat to enjoy while sipping a little vino and watching The Voice 🙂

  14. Katlyn on November 11, 2015 at 4:04 pm

These look great! I’m going to make them for and use them for a pre-workout meal when I’m having a sweet tooth.

  15. Michelle on November 11, 2015 at 4:51 pm

I made these tonight and holy moly are they good! I needed a lower sugar treat cause I’m having a hard time with sugar after all the Halloween treats and these are perfect. I added a mashed banana to the dough cause it seemed a little loose and they firmed up perfectly!

    • Fitnessista on November 11, 2015 at 5:25 pm

      awesome! happy you’re liking them!

  16. Leila on November 12, 2015 at 5:29 am

  21. Rachelle on December 3, 2015 at 6:53 am

I tried making these last night and failed. Maybe it’s bc I subbed Coconut Flour for almond meal, didn’t use enough butter, subbed Peanut for Almond Butter and had to mix Maple and Date Syrup together bc I ran out of Maple Syrup. I found that the dough didn’t bind that well together 🙁

    • Rachelle on December 3, 2015 at 6:53 am

But they smelled really good and tasted ok!

      • Fitnessista on December 3, 2015 at 10:08 am

        that’s good at least haha!

    • Fitnessista on December 3, 2015 at 7:19 am

Coconut flour will do that. It’s not a great sub for other flours because it’s very thirsty and will suck the moisture out. I learned the hard way with that one!
