Out of the box with Blue Apron

I can always count on my Blue Apron shipment to provide dinner inspiration, and get us out of our usual recipe ruts. We’ve had multiple boxes over the past year, and each time, I make entirely new-to-me recipes, discover new flavor profiles, and fall in love with meals that I had no idea I’d been missing all this time!

Our last shipment was right before the holidays, and I was so excited to try and make something that I love, but had never attempted at home: latkes!

I set the enormous pan of veggies and chicken to roast:

and got to work pan-frying the latkes, which were perfectly crisp and beautifully flavored. I love how all of the ingredients don’t abuse seasonings and sauces; they let the true flavors shine through in their combinations. This particular meal included roasted cabbage wedges, roasted onion and celeriac, savory chicken with a sweet and tangy apple topping, and the crisp latkes. It was soul food at its finest.

-The recipes are created by chefs, and all of the ingredients to make the recipes are shipped fresh to your doorstep. The meal planning and grocery shopping is done for you, and you get exactly when you need to make the meals.     We have a local option along the same lines that I’d love to try if it wasn’t so gosh expensive. I bet they are awesome!

    Happy. new . Year Gina!!! Been loving all the post! ( even though I haven’t commented- – ) I have a weird request. Could u either send me some pics of your hair front & back or post some- I’m going to get my hair trimmed next Friday and wanted to show her your hair . My hair is alot like yours in color and texture too ( I think) – just needed ideas to “freshen up ” my do, lol!!! Also do u still use the lee Stafford conditioner- how did u like it?

    I have been dying to try Blue Apron or the Hello Fresh (they have a groupon code) but I am so worried we wont like it. I am a vegetarian but my husband isnt and my daughter is gluten free. I thought about trying the vegetarian option first. Is there enough in the two person option for a couple and a young daughter (who eats small meals)? or would I need the four person option in your opinion??

    My husband and I started taking the ingredients and making our own meals out of them since he’s much more creative in that area than I am. I love to follow recipes verbatim, but he was making all kinds of things with the ingredients!

    The thing I love about Blue Apron is you get to keep the recipes so you can always recreate a great meal again! It definitely helps expand your horizons!

    The boyfriend and I -love- Blue Apron! It makes us feel like such accomplished chefs without totally breaking the bank plus the recipes are relatively healthy and challenge us to eat ingredients we typically don’t consume.

    My last box was a home run. We made a butternut squash vegetarian casserole which my meat-loving boyfriend absolutely loved and even took the left overs to work the next day. Next came a seared sirloin with a mushroom-potato hash which I gobbled up even though I have the biggest aversion to ‘rooms. Finally I made the Asian inspired chicken meatballs with a Brussels sprout/green apple kimchi and I have never been prouder of my “culinary skills”. It’s definitely a huge change from my strictly quinoa-steamed veggie-frozen veggie burger meals back in college!

    Extra bonus: It comes out at about 20 bucks a meal, which is typically what we spend at places like Chipotle and less than we spend at Panera!

    Latkes are actually traditionally Jewish and European food – the word ‘latke’ is even Yiddish – not soul food.

    I’ve had both the seared chicken with apple mashed potatoes as well as the roasted chicken with acorn squash! Both very good 🙂 We love blue apron over here. I get my shipment on Saturday, so if life gets crazy and I haven’t had time to get to the grocery store, we always have dinner for Monday and Tuesday.

    I really, really, really want to try Blue Apron! My boyfriend and I love cooking together, but it’s hilarious because he has ADHD and can never seem to read a recipe all the way through, while I’m a teacher and have to read the recipe twice, check the pantry, make a written grocery list, and set out ingredients on the counter before I turn on the stove/oven. But it works! We’re really hoping BA or something similar sticks around until we’re ready to move in together so we can try it! Haha 🙂
