I’m excited because we’re off to San Jose for Fit Expo. I’ll be making some delicious treats in the Healthy Living Pavilion if you’d like to say hello. 🙂 The expo will be filled with tons of fitness and nutrition vendors, in addition to cooking demos, group exercise, competitions, and free samples. It’s going to be an awesome event!

A Salad a Day in May continues! I haven’t done the best job this week photographing my extra greens, but here are a few!

It’s been easy for me to stick with this challenge and it’s something I think will become more of a habit. I love salads but sometimes don’t feel like chopping everything, but in reality, it only takes a few minutes. It’s also helpful to prep as much as possible for the week so that I can just grab lettuce, toppings, protein, shake with dressing, and eat. It’s a great reminder to get more greens and fresh produce into my life.

I thought maybe I was a little overexcited about it, but nope. It’s perfect, and I love when you can taste a little bit of salt in cookies. Gluten-free, dairy-free, and VEGAN so you can eat as much dough as you want! (Not that it’s ever stopped us anyway haha.) Liv and I had some dough, then baked the rest.

This salmon recipe. My friend Michele had raved about this recipe from Pinterest, and I had all of the ingredients on hand to make it. It was so so good. The spicy seasonings and avocado topping were an unexpected way to enjoy salmon, and we all went crazy for it.

Being back in the gym! I’ve gotten in 3 solid workouts so far this week (with plans for one more today, and one tomorrow). I’ve been blasting through PBB workouts (mostly legs, intervals and core work) in addition to some cardio. It’s hard to believe that I’ll be back teaching a week from Sunday (wahoo!!) so I’m working on building up endurance. Muscles have an incredible way of remembering exercises and reps (with some extra soreness at first) but I find that for me, endurance is a little trickier to get back. It may take a few weeks for me to simultaneously ride a spin bike and yell without feeling like I’m going to die. 😉

    I’m so happy you are able to workout again! Not being able to workout is the absolute worst!! I see you are following your own workout plans, however, I thought you were working with a trainer?? Please do a post about working with a trainer! I would love to hear how working with a training plan helped you and was curious if you saw any strength/fitness gains. How was it training from afar and did you follow a meal plan?
    Thank you so much for your posts!! They are always so insightful and well thought out. You are an inspiration to us all.

    Yeah for working out again!!! I just started doing elliptical this month. I was on crutches 3 months last year and was so weak that I didn’t want to venture outside of spin and swimming until recently. Looking forward to some nice long walks outdoors this weekend now that I’m getting my land legs back.

    OH goodness the girls are too cute! That picture of the two of them, precious, frame worthy for sure! And that cookie dough, drool! I ate a whole pint of Ben & Jerry’s non-dairy Cookies & PB ice cream last night, couldn’t stop :). Good thing I had some awesome workouts this week haha.

    Awesome that you’re able to work out again, I know that’s important to you. I remember having to take a break when I sprained my ankle, I think I cried about it a few times. It’s emotional when you’re used to being able to do whatever you want.

    The San Jose Expo sounds so fun! You should check out San Pedro Square Market and Willow Glen while you’re in town! Willow Glen has Orangetheory and Barre3, too. 😉

    I am with you on the not feeling like chopping salad everyday. I usually have one for dinner every night. I always tell myself I am going to prep the salad on sundays and put in individual baggies but I don’t. I am worried it will be bad by the time I eat it. 🙁 I may try it though.

    You should check out Devotion Nutrition protein booth 1216. Their protein and flex flavors are amazing!!! I prefer it now over shakeology or anything else.
