let’s taco bout it

Hi friends! Happy Monday! Hope you had a wonderful weekend.

We enjoyed some time splashing at the beach, had friends over for dinner, some good workouts, and I ate a lot of tacos. It’s always a good weekend when you have an avalanche of Mexican food, right? 😉

The fun started on Friday afternoon. Our babysitter for P usually comes over 1-2x a week, mostly while I go to doctor’s/PT appointments or head to a coffee house to write for a couple of hours. Friday afternoon, for the first time in a long time, I had zero appointments and felt semi caught-up with work stuff. I decided to use the time for something fun, and texted Betsy to see if she wanted to grab lunch at Mitch’s.

and a view of the boats, gently bobbing in the bay. It was perfect. We were were saying that it felt like we stepped out of reality for an hour. Needless to say, it was a refreshing start to the weekend.

Friday night, we enjoyed dinner here at home,

I got in a quick workout (PBB intervals!),

and hung out until late. Liv had fallen asleep on the cough and didn’t wake up until 6:30… so she didn’t go to bed until 11:30. Party. Animal. She knew it was Friday night. 😉

Saturday Liv had ballet, and we headed to a little donut shop in the neighborhood. I blame the Pilot for turning me into a “donut person.” I’ve always liked them, but usually if I wanted a sweet treat, it was a cookie/cake/brownie. Now, I LOVE DONUTS. They’re just everything that’s delicious in the world: fried, bread, and frosted.

and went straight to Trader Joe’s to stash our fridge and get ingredients for family dinner.

Jess, her hubby, and daughter came over for a Mexican feast. I love *family dinners* with friends, so the kiddos have space to roam and toys to play with. We don’t have to push P’s bedtime (= cranky kiddo), and I feel like we all have more quality time together. It’s made me enjoy nights in with friends even more than going out, especially when the kids are Liv’s age and they play together. Liv gets just as excited as I do to have people over.

and plantain + tortilla chips. The Pilot made fajitas (he is the fajita king), and we had refried beans and a salad Jess brought over. It was SO good  (<— a slaw salad with cilantro and lime vinaigrette) and I hope she posts the recipe soon. ALSO I have to tell you guys about these tortilla warmers. We have a couple of them, which were gifts from my nana and madre, and I’d always used them to hold the warm tortillas. (So I’d heat the tortillas in the microwave or on the stove and place into the container.) The Pilot actually read the directions (whaddaya know) and turns out, you heat the tortillas IN the container. They were so soft, and stayed warm during the entire meal.

Sunday morning was my first Zumba class back in action! I am definitely still working on my cardio endurance. I took it a little easier than usual, and was still beet-faced and drenched in sweat when it was over. Also, I had 6 people! Class has been MIA from the schedule since I’ve been out, so I didn’t know if I’d have anyone to dance with me. Thankfully, there were some Sunday morning early risers, ready to shake their groove thangs.

Sunday was Day at the Bay for Livi’s school.

Per the usual, the entire bay was lined with beach tents and pop-ups, the taco catering company was there, the DJ was BUMPIN (like, I wish he would have DJed for our wedding haha), and you could rent paddleboards and kayaks. We spent the entire afternoon hanging out with friends, splashing in the bay with Liv, checking out all of the different booths, and eating more Mexican food.

Exactly one year ago, I was already feeling a bit uncomfortable -so thrilled to be pregnant, but also like “how much longer does this last?!”- and here we are now. It’s crazy how much can change in a year. I had no idea just how amazing this little lady would be, and how happy my heart would be to see these two together. Two peas in a pod, for sure.

It’s also crazy to think that by this time next year, we’ll likely be somewhere very different. I not-so-secretly hope they forget about us, and maybe we can just stay? Yes, sounds good.

And just because every beach day needs to be capped off with Tiki Port.

    Looks like you had an awesome weekend!
    I have a question regarding Zumba – didn’t you say a while (months?) ago you felt like Zumba wasn’t a popular workout anymore and that you didn’t want to teach it anymore? Obviously that has changed now, but can you say if they’ve made some changes to certification or music, etc? Thank you!

      hi michaela!
      yes, zumba definitely had its moment and i’m not a fan of the music/dvds they send out. (they used to be hit or miss and now they’re just horrible.) i don’t mind teaching it at all. i’m used to teaching whatever, especially since when i worked at the resort i had to teach a ton of random classes that weren’t necessarily my personal fave, but i could see that they brought joy and a love of fitness to others. i love where i teach and the members there so much, and it’s my job, so i teach whatever they ask me to 🙂

    What a fun weekend! Your Mexican ‘family dinner’ looks awesome…I wish guacamole were a part of every meal. Thinking about your outing for Liv’s class, how did P handle being out of the house all day/afternoon? I’m a FTM of a 5 month old, and while enjoying the current stage, am really looking forward to being able to stay out for more than two hours at a time!

      hi lily! totally agree that guacamole should be part of every meal.
      the good news is that p will nap in the ergo. she just played under the tent and i took her out to see the water a couple of times, and when she started to get tired, tom put her in the ergo and she crashed out. we try to have at least one nap at home each day, but if we’re out and about, it’s nice that she’ll nap in there. it’s not the best quality nap, but just enough to give her a rest and she isn’t cranky
      it’s funny because with liv, we HAD to be home for every nap. now, i’m happy if we’re home for one since we like to be out and about

    Your weekends are like my vacations…if I lived there, I don’t know how I’d get anything done! Lol. Sounds like it was great…I’m excited to see the goat cheese app recipe later, yum!

      i joked when we first moved here that i could feel my productivity fly out the window. all i want to do is go to the beach and be lazy. but since it’s so expensive to live here, it’s good motivation to not be lazy haha 🙂

      haha! it’s so funny how that happens. i used to be meh about them (i liked donut holes every now and again) and now i’m like gimme all the chocolate cake donuts

    My sister-in-law (she lives in OB) gave me one of those tortilla warmers and they are BRILLIANT! Just a little tip…they get slightly damp on the inside from the warm tortillas, and it can turn the pouch moldy if put away damp. So my husband came up with the idea of turning the pouch inside out when we put it away. That let’s it air dry, then we just turn it right side out when we use it again!

    This was the perfect weekend for the beach! So hot! I’m really excited for that goat cheese recipe because it’s my favorite type of cheese. Mmmm, so fresh and unique. Love the comparative beach pics of you from this weekend and last year. It feel like just yesterday I was reading your pregnancy posts and now sweet P is looking so big and lovely!

    I have a totally random question….But how often do you/will you have to move?

      we usually move every 2 1/2 to 3 years. except for when we were in valdosta and stuck there for 4 haha 😉
      ingredients:
      turkey bacon
      small can green chiles
      large log herbed goat cheese
      firm goat cheese
      balsamic (just a splash)
      mushrooms (baby bella or white)

    I am going to a girls night Friday night and will be making that goat cheese recipe!
    And my family is so obsessed with tacos that it is what my 4 year old has requested for her bday party food!! Waterslide, taco bar, and cake LOL!

    My goodness you eat some amazing food, and I love getting great ideas from your blog! So have you tried the new “sweet” plantain chips from Trader Joes? I have eaten the regular chips for years and then I fell in love with the new version. Be forewarned…..they are super addictive and no sugar added!

    Oh for donuts…you guys HAVE to go try Yum Yum Donuts on Linda Vista Rd! They are amazing! I grew up around the corner from them and used to go all the time. Cant wait to go again!

    Where do you take Liv for ballet? How old did you start her? My Bella turns 2 in Sept and I am thinking of putting her in it when we get back to SD

    Which BTW, I hope they forget about y’all too so you will be there when I move back and I can take one of your zumba classes. I love and miss zumba. There is one class in SD I HAVE to hit up. Its on Saturday mornings at 24 hour fitness on Balboa. Nobuko teaches it, she is soooo good!
