Bitsy’s Baked Chicken (+ a HUGE giveaway)

I’ve mentioned this before, but sometimes Liv will surprise us with the things she prefers. She has an adventurous palate and will try anything, which is a lot of fun. She has tried many things that the Pilot and I didn’t have until our 20s or 30s (escargot?!), and I always have a blast checking out new restaurants and sharing recipes with her.

We try to involve her in the cooking process as much as possible, and for meals, I’ll give her a couple of options to choose from. 

As she’s gotten older, some of her favorites are not-so-favorites anymore. She doesn’t really like salmon as much (ok, so she doesn’t like my salmon, but Seasons 52’s is just fine hahah), and something she liked yesterday she may not be in the mood for today. And I get it; I’m the same way. Now that she is more verbal about the things she wants to eat, I depend on some of the no-fail options, like Bitsy’s Brainfood.

We’re huge fans of Bitsy’s in our house. The cereals, crackers and cookies are delicious -I think I like them as much as Liv does- and I love that they don’t hide the fact that there are veggies in their foods. I think that this can help kids associate healthy foods with *fun* foods, and enable them to make smarter choices as they grow.

Also, they are nut-free and the cookies and crackers are made in a nut free facility for kiddos with nut allergies, or those who attend nut-free schools.

Chicken tenders are another one of those fail-proof Livi meals, and I used the maple carrot crackers as a savory coating, with a hint of sweetness. They kind of remind me of chicken and waffles! I baked the tenders in the oven until crisp, and served with a Ranch and honey mustard for dipping sauces. They’re a great dinner option, and I’ll freeze them and heat for quick lunches.

Here’s the recipe if you’d like to give it a try!

Ingredients:

1 box Maple-Carrot Bitsy’s Brainfood Smart Crackers (ground into breadcrumb-sized pieces. I found it was easiest to put them into a plastic bag and roll/break with a rolling pin)

1 lb chicken tenders, seasoned with salt and pepper

2 eggs

Salt, pepper, garlic powder

Coconut oil

Directions:

1. Preheat the oven to 425 and grease a cookie sheet with coconut oil.

2. Whisk the eggs in a medium bowl, and pour the Smart Cracker crumbles into another medium bowl. Season the crackers with salt, pepper, and about 1/2 teaspoon garlic powder. Mix well. 

3. Dip each chicken tender into the egg mixture and then coat completely in seasoned Smart Cracker crumbles. Shake off any excess crumbles and place on the cookie sheet in an even layer. Spray or drizzle lightly with coconut oil. 

4. Bake for 15-17 minutes until cooked through and golden brown.

5. Serve with dipping sauce of choice!

    Yum! Yes, please! Soph is too little for these (teeth required, lol), but they seem delicious! With a years worth we can totally have some around for when she shifts from mushy food to real solids. 🙂

    I just bought some Cheddar Chia Veggie crackers for my 13 month old the other day, and she looves them! Now I’m excited to try some other flavors, too. I know I’d like to try the sweet potato oatmeal raisin, personally 🙂
