This lemon bar recipe doesn’t contain any refined sugar, is packed with whole grains and healthy fats, and has a bright, lovely lemon flavor. It also looks like scrambled eggs! Make this for all of your family and friends. No wait, don’t do that.

Hello there. Happy humpday! I’m starting to get excited about Wednesdays because you know Indian Food Wednesday is making a comeback when we’re in Valdosta. I also found out they have something similar to Postmates, so we can get delicious Indian food delivered to our doorstep. Yes yes yes.

Sorry for disappearing on ya yesterday. It was one of those days where I didn’t really feel like I much to say, so instead of wasting your time, I took a little break. I have two posts coming at you today (this one and one on the family page) so let’s say the word shortage is over.

Can we please talk about Next Food Network Star? I’m not mad that Tregaye won -I think she’s awesome, engaging and has such a natural energy- but I really wanted Damiano to win. I think I would have actually watched his show. I thought his cooking style was the most versatile -his savory dishes looked just as insane as the pastries- and I would have loved a pastry-based cooking show. He could have taught me some new tricks!

What went wrong here? haha.

In all fairness, Damiano’s lemon bars would probably be decorated with gold flecks and have birds flying out of them, but I just want something that has the right texture. Aka not a scrambled egg tart.

I think my problem was healthifying something when I’ve never made the *real* version. I’ve just eaten them. I googled around online at the regular version, like Ina’s (she can do no wrong) and figured I’d wing it with healthy ingredients.

NAILED IT.

The result: sweet custard-y quiche. They taste great, but something went wrong.

This is the second egg snafu I’ve had recently.

I wanted to show how I make egg oatmeal on Snapchat, but since I was filming instead of whisking when the egg went in, I had giant egg bites in my oatmeal. It was strange, but good in a very weird way. So there ya go.

When I haven’t been fighting with egg dishes, I’ve been teaching barre (hot barre was a scorcher last night!), spin, lifting some heavy things,

and enjoying dinner from the Pilot. At least while my cooking game has been a little off this week, his has been on point.

Bolognese

(I dictated the recipe running out the door to teach barre and came home to the most delicious bolognese.)

It’s been so much fun now that P can *really* eat solids. Her choking has dramatically subsided, so I’ve been able to really combine Baby Led Weaning with purees, very similarly to what we did with Liv. (Some of my favorite baby food recipes, and the top viewed page on this site every day is here if you have a baby getting into solids, too!)

    Ha! I was watching this on Snapchat yesterday and was wondering how you handle it!

    To be honest, while I try to make “pretty” versions of my recipes for the blog, sometimes the ones that look completely weird and like an awkward oobleck taste just as good or even better! (Those are the ones that end up on snapchat, too – we’re human, right?!)

    So, hey – if they taste delicious, be sure to share the recipe, please! I’ll eat the healthy version, no matter what it looks like, over the Ina version everyday. 🙂

    Well, the plus is I guess that the bars are edible and still taste good? A high protein treat 😉

    I like to think I can cook pretty intuitively having grown up with parents who always involved me in the kitchen, but baking is a whole other ball game! I once tried to make a chocolate-swirled cheesecake for a friend’s birthday. The melted chocolate was too warm and I didn’t temper the eggs enough and go a chocolate egg scramble cheesecake. The crust was delicious though haha

      i’m the same way! for cooking, i feel like it’s so intuitive. for baking, i need to really watch myself. sometimes i get carried away and it ends in disaster

    You know, sometimes there are recipes where there isn’t really meant to be a “healthy” version and I think that’s perfectly alright. Desserts aren’t my favorite anyway and I don’t eat them often (like, maybe once a month?), so I feel like one monthly full-fat, white-flour lemon bar wouldn’t kill me.

      Amen! I stopped trying to “healthify” desserts long ago. They are meant to be infrequent treats & it’s ok to indulge periodically (I know Gina shares this same mindset…). I want my indulgences to be worth it. 🙂

        yeah i’m the same way! but i do like making healthy treats, too. they’re an entirely different thing; not meant to “replace” real treats

      i totally agree. treats are treats and should be enjoyed. making healthy versions inspired by other things aren’t meant to replace them, they’re just for fun and for more of an everyday type occurrence 🙂 i still have my weekly real donut haha

    I love Food Network Star.
    I didn’t watch Sunday but I recorded it and watched it on Monday night.
    I have DirectTV and we had some storms Sunday night when the show aired so of course right as Bobby is about to announce the winner it cuts out and skips to the next show. WTF!?!?
    I was so frustrated. Of course I had to look online to see who won, which was OK, but just not the same.
    I too wanted Damiano to win and said I’d be interested in a pastry show. Oh well!

      uh totally agree w/ you both…i was so disappointed she won! too much like all the other winners…who are doing what now?! at least pastry (and his other dishes!) are different than what’s on the network now.
      not gonna lie though…i miss my originals. Ina, Giada, Bobby, Rachael, etc. They’ll do like 6 episodes and then that’s it for years.

    Totally agree that Domiano should have won! He is very unique and I feel like I could learn a lot from him. While Tregaye is bubbly and has a lot of the personality, it isn’t enough to make me want to watch her show (plus I just can’t with the constant “on fleek”).

    Have you read the blog Detoxinista? She has a cookbook which is seriously amazing-I give one to everyone for a gift and use it almost every day-but anyways she has a recipe for lemon bars that are amazing. Her cookbook is sort of paleo/vegetarian but everything I’ve made from it has turned out amazing. Not even kidding when I say this is the best $12 you’ll ever spend!!!!

    Any tips for transitioning a baby from purees to BLW? I started my daughter with purees since she wasn’t ready for BLW. She is approaching 9 months and mastered her pincer grasp but will not bring food to her mouth. I would love to hear anyone’s thoughts. I am not sure if there is something I can do to help her or if I should just wait for her to be ready. Thanks in advance 🙂

      i think just offering it makes a huge difference. i would just give p little bits on her tray, and if she picked it up and made it to her mouth, bonus. if not, NBD. she finally got the hang of it! it just takes a little time. it’s so nice to put some cut-up food on her tray and she can snack on that while i make liv’s food and sometimes even my own breakfast (!) and then sit down with them and feed her a puree

    I have to say this is why I LOVE your blog! You don’t just post the picture perfect successes! Way to keep it real 🙂 Every Friday I have a Seasons 52 BBQ Chicken Salad sub goat cheese and no seeds…they know me and expect my call lol. I also cruise our supermarket Wegman’s every Saturday after the gym for (as I affectionately call it) Sample Saturday! They have samples of cheese, WINE (swoon), seasonal favorites, cauliflower sushi, and if you’re really lucky…desserts! They know me by name and even know my dietary restrictions lol

    Pretty sure the eggs were not sufficiently emulsified-guessing you reduced the sugar and there wasn’t enough to break up the egg proteins.

      yeah that’s very true. i used maple syrup instead of white sugar and i’m wondering if that’s what did it

    I just made some stir fried veggies last night and mixed miso with nori– both are super salty…so I had one salty & soggy stir fry…I can’t believe I managed to eat it all today!

    No food rituals but for some reason tacos have been on my mind for weeks! Guess where I’m going this weekend? hahhaa

    I really wanted Damiano to win! Or even the other guy too- Tregaye was a my least favorite out of the final three. I only half paid attention to the show, but Damiano was certainly my favorite by far.

    Speaking of Indian, you have to check out Punjabi Tandoor before you move if you haven’t already. They have a few locations and they’re all a little far (Mira Mesa/sorrento valley), but it’s the BEST and so worth the drive. Their chicken mahkni is my fav but everything is really good 🙂

    I feel like 95% of the food I make looks disgusting, but still somehow tastes good. I don’t know how people with food blogs do it because nothing I cook outside of a class manages to be photogenic.

    Love these baby food ideas! Our LO is almost 4 months. We still have awhile to go before we introduce food but I am so excited about it! Maybe it’s the new experience or maybe it’s the end to pumping 4 times a day at work that I am excited about….not sure! lol (<—- don't get me wrong..I've been so so blessed to be able to breastfeed and I love it. I just stress over it a lot and I swear it makes me tired.)
