2/3: Pics (and words) from the day

Not all from today- how ’bout the past 24 hours?

Last night we took a little road trip to Phoenix to see Brian Regan. I got the Pilot tickets as a Christmas gift and thought that it would be a fun date for the two of us. It also saved me because I never know what to get him for Christmas. My mom came over to stay with Liv, and we stopped at one of our favorite places for dinner before the show…

How I love thee.

I wish Tucson would get on the bandwagon, but I’m sure they’ll open one after we move 😉

I usually hate to bust out the paparazzi camera at nice places -try to be extra sneaky about it- but had to do it last night to show ya the goods because it was very, very good.

To start we had the shrimp and lobster spring rolls:

(they came with 3 dipping sauces, my fave was the red chile)

and for my entree, I ordered the grilled scallops, which came with a glorious broth/gravy/savory nectar of the gods, and stuffed mushrooms.

We each had to have a mini dessert even though we were full… it’s illegal to go to Seasons and deny the dessert tray.

I got the caramel macchiato, which was a little too sweet for my liking- I should have stuck with my classic pecan pie or chocolate peanut butter or rocky road….

The meal was everything we remembered and had wished for, and the show was fantastic.

If you haven’t heard of Brian Regan, he’s a goofy, hilarious man and is often on Comedy Central. I like the fact that his humor isn’t off-color or full of obscenities; it’s true, genuine comedy.

and after the show, made the drive back to Tucson.

Today was breakfast with my little love, and while the Pilot stayed home to work on finishing the wood floors, we did 5 miles at Sabino Canyon.

Livi sang to me in the jogging stroller, and I walked/ran, making sure to include the speed surges for today.

(I made mocha flavored by adding a teaspoon of espresso powder instead of the nutritional yeast in this recipe)

We’re off to grab some groceries so I can prep some food for the week and make dinner.

    I prepped! I cooked spinach and mushrooms for egg white omlettes so I can save time in the morning. I also made a huge spaghetti squash. I plan to eat it with pretty much everything. I washed all my fruits and veggies so everything is ready to grab and go!

    Spring rolls! I love them! I’ve been wanting to make my own badly! Now I just need to pick up the ingredients. They’re so easy, I always forget.

    We’ve been out of town for a week and so I haven’t been cooking. I can’t wait to get home Tuesday and make some goodies for this week. One batch of amazeballs coming up!

    Now I can’t stop thinking about scallops, thanks 😉 And my parents are thinking about moving to Tuscon next year so I love when you post pics of the area so I can show them and get them even more excited. Looks like such a fun place to live 🙂

    I did some prepping…I made some dark chocolate coconut bites, and made a huge salad for the week! Those ballz look good too 🙂

    I need to make those ballz soon. I keep seeing them on your blog and others have blogged about them as well. They look so delish!!
    I am planning to make navy bean chili tomorrow from The Natural Gourmet cookbook. It’s vegetarian, so I imagine I’ll have to add some ground meat to satisfy my hubby. Tons of salad stuff and veggies to roast as well. Leftover turkey or pulled pork will most likely be pulled from the freezer as well for extra protein. I also cooked up adzuki beans to eat with millet for lunches.

    Steamed a bunch of broccoli, cooked up a big batch of quinoa and chopped tons of romaine! Excited for workout #2 this week! Looking forward to a week or good eats and sweaty exercise!

    I’m so psyched to be a part of this year’s Winter Shape Up, and I want to use the workout plan as effectively as possible. But my gym is kind of small, and we don’t have a Stairmaster! Any suggestions for an alternative?

      i’ll have the workout up this week but feel free to use any other cardio equipment you like for it. a spin bike would be a fun option

    I need help with the ballz….I’ve made two of your recipes for amazeballs (tried the PB cup this week…AMAZING), but there is no way I get “5 sizable” balls. I have been following the recipe exactly and given the amount of dough I get, in order to get 5, mine are the size of a marble, maybe a bit larger. Any thoughts as to what I could be doing wrong or what’s going on?

        This time around (for the PB cup balls), I used Fitmixer Vanilla protein powder, unsweetened coconut, the cocoa powder, and nutritional yeast (I only used about 3/4 tsp b/c I was scared! LOL!). I leave out the additional stevia. Maybe oats instead of coconut?

    Hi Gina! The food at Seasons 52 looks great! What type of food is it? They recently opened one up at a mall near us in San Diego and I still haven’t gone inside. Anything you’d recommend?

    Sometimes it’s very difficult for me to daily food plan like what i am going to prepare, is it healthy or will it go with my diet. Even though i had all types of veggies and fruits, ingredients at home planning is too difficult. So planning for one week is a lot more difficult like impossible.

    I’ve bookmarked your Peanut Butter Cup Amazeballs to make this week – they look amazing. As my cooking/baking skills are still very basic I’m going to try peanut butter, oats, chocolate protein powder, maple syrup, cocoa and cinnamon – and see how I go before proceeding to more advanced combinations 🙂 Mocha sounds divine though!

    Hope to see some gorgeous Livi pics tomorrow – gotten used to seeing that toothy grin in your posts 🙂 My 4 month niece is just learning to smile and laugh and it’s the most spectacular thing!

    Those shrimp and lobster spring rolls look fabulous – I wish we had a Seasons 52 here!

    Today I’m prepping an adzuki bean and quinoa tabbouleh to eat for lunches. Chicken fajitas and rainbow trout are also on the menu for this week!

    I prepped veggies, balsamic chicken and quinoa muffins. Breakfast will consist of oats or creamy buckwheat. Snacks quinoa muffins or Greek yogurt or smoothies or hummus veggies. Lunch chicken or egg salad beasts. Dinner salmon meal, shrimp pesto spaghetti squash, your fried rice egg, black bean burgers, bean sweet potato chili.

    I spend a few hours on Sundays prepping some things to make my life a little easier during the week. It’s totally worth it! I work late on Monday nights so Sunday I like to get everything ready for Monday. 🙂

    I’ve never heard of Brian Regan before but I love comedy shows. They always seem so much more funny in person than on TV shows too! I agree with the others, still really need to make a big batch of ballz!!

    I took two hours last night to meal prep for the week, we are having turkey shephard’s pie and chicken sausage pastitsio this week on top of the glorious broccoli and mashed potato soup that I whipped up too!

    Prepping meals on Sundays is the only way to make sure we eat good healthy meals all week when we have a 9 week old to take care of!

    Prepped banana oatmeal muffins and homemade granola (Tara Stiles’s recipe)! I’m also going to try Kris Carr’s Curry Chickpeas for lunch for the rest of the week. It’s really easy for me to get in a rut because I love me a routine. So I’m trying to switch up lunches every week.
    I also ended the day with just over an hour of yoga yesterday. I also did the week 2 workout (and posted pic on #wintershapeup) and it was awesome! Wore me out in 1 round… especially those side planks… ack! My Feb. goal is 25 hours of yoga, so I’m not able to do all the cardio you outline, but I promise, I’m getting my time in!

    season’s 52 is one of my top 5 fave restaurants!! we have one here in long island!! seriously, the mango cheesecake and pecan pie are my faves!

    I made the mocha amazeballs while my son was napping. Those things should come with a warning because I can eat all of them in one sitting!! I doubled the recipe (10 total) and half are gone already… ugh. They are awesome! Thanks so much for the recipe!!!
