Indian spiced chickpeas and potatoes

Even though I’m not working at lulu anymore, this week has been CRAZY. Even so, I’ve managed to ninja kick most of the to-do list and have been all kinds of organized up in herrre.

Proof?

I even celebrated Indian Food Wednesday…. on a Wednesday!

This chickpea and potato dish was super easy and was the perfect fuel for a super busy afternoon 😉

All I did was steam 6 baby potatoes for 10 minutes:

Reserved the potatoes and in the same pot (on medium), sautéed 1/2 sweet onion and 2 cloves of garlic for 5 minutes.

To that, I added 1/4 t cumin, 1/4 t tumeric (a natural anti-inflammatory), 1/8 t garam masala, 1/8 t cinnamon, 1 can of diced tomatoes (drained), sea salt and pepper.

That cooked for about 10 minutes and then I stirred in the potatoes and 1/3 C chopped dried apricots.

At the last minute, a splash of fresh lemon juice and some mint for garnish.

This would have been lovely with some roti, brown rice or quinoa, but I decided to roll with gluten-free, vegan, RAW roti!

Just for fun: 3 Things I Didn’t Know About the Pilot

Since the Pilot got home from Afghanistan –it was this 3rd time over there- we’ve finally gotten re-acquainted and settled back into a semi routine. All of the things I know, love and missed about the Pilot are still there, along NEW things that I’m just now figuring out.

1. He only eats half a cookie.

I discovered the above cookie in the fridge a few days ago. Half a cookie?! Who does that? I just don’t understand. It’s totally cool if you’re sharing with someone, but to eat half and forget about it… well I would never.

2. He always win.

I was the Fruit Ninja champion in our household, with a high arcade score of 504. He finds this out and spends days playing Fruit Ninja… to eventually show his iPhone with the numbers “645” on the screen. I had to wave the white flag at that one.

3. He calls his grey hairs “Ginas”.

    Haha! I would never be able to only eat half a cookie. I would never be able to eat only one cookie for that matter! 😉

    Fruit ninja 🙂 I love that game. How oddly addicting is it??? For us, it’s more of an Angry Birds competition. My husband is the better bird flinger…but I’m okay with that 🙂

    Your Indian food looks divine!!! I’m not sure how the Pilot only eats half a cookie… he must have superpowers or something. I wonder if he’s even able to only eat half a roon! Now that would take LOTS of self control!

    I saw your macaroons going for $500!! That is so awesome, I would really love to try your roons but I just don’t think I can afford them! Also, for real who only eats 1/2 a cookie! LOL! My morning walk was ruined by 100 pound dog pulling me down a steep while chasing another dog! My “me time” walk needs to not coincide with his walks.

    I learned that he “cleans” the fridge every night and leave empty containers. It makes it very hard to know what we need.
    Love the idea of labeling days like today is indian. Awesome idea which I’m incorporating right now. Puts the fun back in eating and shopping.

    My husband used to tease me about my love for Angry Birds…until he played it for an hour straight one day. We have been together for 7 years, and I just found out a few weeks ago that he knows how to moonwalk.

    Too funny about the pilot! My husband credits ME for most of his gray hairs! (And my kids for the other few!) After 25 years, there is not much that I don’t know about him!

    My fiance pointed out to me the other day that I use the phrase “a part of me thinks…” too often 😀 I guess I said it a couple times in a row because he finally said “How many parts of you are there?!” and started to laugh at me.

    I like when those things happen… we’ve been together 4 1/2 years and we’re still learning about eachother!

    Jason is the same way!!! He can eat 1/2 of a cookie or a piece of candy and not eat the rest — what????? I do not get it. Oh and he “forgets” to eat all the time too. Crazy!

    I love the half cookie! My husband leaves almost empty boxes in the pantry, like a box of cereal with about a tablespoon left in it. I can’t seem to break him of the habit. Any suggestions?

    I saw your macs and price pack got 5 big ones. My little cookie dough balls got 2 benjamins. I was shocked. And sooo grateful to those who bid. My god..I was floored. Seriously. At everyone’s generosity. As I’m sure you were with what your macaroons fetched!

    And yeah, Im sure the dehyd give away is just a tad popular 🙂

    Half a cookie. Only a man would do that. Women don’t do half of chocolate bars or half of cookies, ever 🙂

    Kevin does that with any kind of sweet item. He claims that after a bite or two it’s “too rich” and can’t finish it. What?! I could eat a few 😉

    I still have a few more months before my hubby and I are under the same roof so I’m sure we will have to become re-acquainted again…let’s hope neither one of us has any weird habits to add. Does the Pilot comment on any of your habits that are weird to him?

    I’m Indian and grew up eating Indian food almost every day. Now I only eat it once or twice a week. It’s always interesting for me to see how others make it – your version looks healthier than what I grew up eating. 😉

    I’ve never had steamed potatoes before…I think I’m going to try it.

    I don’t get why the pilot calls his grey hairs Ginas? It’s funny though!

    haha…’ginas’ – my dad names his grey hairs after me. rando facts about my man – he eats lemons whole and cilantro by the bunch (sexy), he’s married to his job and his cell phone is subsequently a permanent part of his anatomy.

    I love swiss chard wraps. Favorite way to eat them is sweet- filled with nut butter, banana + apple, and cinnamon 🙂 I’ve also done avocado- extreme YUM. 🙂

    I would say that’s even less than half a cookie! I have a friend who does that- her fridge is always full of random treats with nibble marks in them. Wish I could do that.

    Actually my CAT has started doing the weirdest thing. At like 5am he will get on the bed, crawl over me, grab my eye glasses in his mouth, and then run off! He has done this soo many times. And he will bite them when they are on my face. I don’t get it. But now my glasses have bite marks. ;/

    This was very cute, and I especially like that he calls his gray hairs “Ginas”…too funny.
    I’ve been with my fiance for over 8 years, and just the other day I was so surprised by his reaction to my speeding ticket (and then the next week, to my written warning! Tough driving month!). He was so patient, and said, “These things happen”. I didn’t know how he’d react, but was relieved that he didn’t make me feel worse about my mistakes. 🙂 Another reason I think he’s so wonderful!

    Mike says his hair will be all gray soon because of me ; ) lol I told him it’s ok because he will still look good !

    The cookie thing, Mike has done that before too, he says because he doesn’t want to feel guilt and eat the whole thing, it’s like, your a man, you can eat the 20 cookies and not have to worry, he eats so much and still does not gain weight!

    my cat didn’t read the obligate carnivore memo – he has a secret love of carbs. mind you, he even got doctor’s orders for me to cook for him. a vet dermatologist wanted me to feed him something he could have never possibly had before to work on his allergies – i cooked emu, rabbit and duck for him, and he turned up his nose on all occasions. but if i make a sandwich, he’s all over me for bits of crust or pierogi’s, crackers, etc., and he’s like “oooh baby!”. yup. go figure.

    My man’s grey hairs totally came from Bananastan (since it’s bananas). With every tour he returns from, he has a few more. They’re sexy on him though.

    Since he returned from his last tour in December, I’ve learned that he is a natural at yoga, and really rocks out the Body Flow classes – I couldn’t have been more surprised.

    My boyfriend is THE pickiest eater I know. Seriously, he could live off of chicken nuggets and fruit snacks for the rest of his life. It always amazes me when he likes something that I would have never guessed he would enjoy (like broccoli, pickles, or bananas.)

    I just learned a few months ago my hubby is a serious cat-man. He loves them, and they love him! I had no idea. I always grew up with them and liked them, and was ok when he said he wanted a pet that we get a cat (they’re easy) but we just got our second one a few days ago! I said two is enough! haha 😀

    I love that he calls his grays “Ginas” bahaha!

    I found out the other day that my husband (of 3 years!) has never owned a dresser. He apparently just used those rubbermaid drawers because they came in “cooler colors”. And then I clear out one of my drawers for him….and then he wants 2 more. haha
