3/22: Meals and fitness for the week

Also known as “let’s use up everything in the fridge and pantry before the movers come” 😉

Hi friends! Hope you’re having a very happy weekend. It’s the street fair here in Tucson! It’s one of my local faves and I’m excited to take the fam and walk around while eating roasted corn.. It’s always fun to check out goodies from local vendors, hear live music and hang out downtown. I think Liv will love it even more this year; it feels like last time she was such a tiny thing.

This week for meals and fitness, it’s our last “normal” week. I’m not going to do much planning and prepping, but we’re definitely planning to eat at home as much as possible to use up the pantry goodies. Some random things to use up: coconut milk, canned beans, frozen goodies (lots of berries) and tomato paste. It should be pretty easy to pack up the new food items to bring with us, too. There’s also a little bit of fear in my heart from what will be unearthed from the depths of the freezer….

It’s kind of a weird situation because we’ll be living on base for a couple of nights until we can get into our new place, but I’m pretty stoked to check out all of the new spots!

    Best of luck with packing and prepping, good for you for planning workouts despite a disruption in routine on the horizon, a good reminder and motivating. If you’ve got some sriracha at the house you could make Anne’s curry with your coconut milk and a little basil.

    Hi Gina, Love reading your blog and so jealous of you moving to San Diego, my husband and I went there for part of our honeymoon and just loved it. I was wondering how you do your chicken teryaki in slow cooker, I have tried before using store bought sauce (even the low sodium one) and it was wayyy to salty? Thanks, Katie

      thank you so much for reading!
      i usually make the chicken first in the slow cooker and make the sauce on the stove top. that way, i can decide how salty and sweet to make it 🙂 i shred the chicken and pour the sauce on top about a half hour before we want to eat

    Best of luck with your upcoming move. I enjoy reading your blog and I live in the Tucson area. I am a new mom and am currently looking for a baby boot camp class. Do you know if there is anything local? My research has only produced a class in Sierra Vista which is too far.

    Good luck with your move. I’m sure it must be exciting and scary at the same time. I felt that way when I sold my home in Tucson of 10 yrs last year and moved to Phoenix.

        I like Phoenix. It offers more opportunities to experience different things all around. I hate the traffic although Tucson traffic was stupid, but Phoenix is on a L.A. level. I miss the slower pace of Tucson and my friends.

    can I find the recipes for your dinners anywhere? When do you move? Will you be renting an apartment or looking to buy a house. I would miss Tucson…but San Diego sounds beautiful (although expensive)!

    Did you find a place on Coronado?! We live in the Otay Ranch/Eastlake area of San Diego and LOVE it. We’ve been here over a year so I think I know my way around pretty well now 🙂 let me know if you’d like some tips or suggestions on anything.. Our daughter is just a few months younger than Liv so I know all the toddler hot spots 😉 We are PCSing already in June.. Exactly one month after baby #2 is due to arrive. Nice timing, right? It always is with the military 🙂 good luck!

    Hope the move goes seamlessly! Be grateful it’s only a few nights on base! Our last PCS, to Japan, we were in a hotel in town for 4 weeks and the Navy Lodge another 3 before we were offered housing. Right now on our base, there’s room so if you choose to live in town, no BAH/OHA.

    This week is a lot of make ahead and/or crock pot since my full teaching schedule is back in swing. (18 classes + scouting and working with the track team)

        Indeed. 😉 We were due to PCS Nov 2013, but he took an extension here. He’ll be gone to XO school (unaccompanied) in the fall, kids and I will leave for the follow on as soon as orders are cut and housing approves our move (hopefully gone by mid August).

    Enjoy your last “normal” week, and best if luck in your move! We’re just heading home and I’ve already got my weekly prep list forming in my head. I bought a bunch of veggies at the farmer’s market yesterday so I need to make sure they get cleaned and chopped, or they won’t get eaten!

    Good luck to you with your move. My husband and I relocated from Orlando to San Francisco a year-and-a-half-ago (note the name of my blog “A Lady Goes West”) and moving can be a stressful time. We had some issues with our moving company and car transfer company and spent a lot of time without all of our belongings… so plan for delays! I’m sure it is harder when you have a toddler around as well. As far as food once we arrived in SF: we had no pots and pans and had to eat out every single meal for quite a while – I’ve never craved a home-cooked meal so much since that time.

    My meal prep is small this week. It includes making ahead of time a few breakfasts (overnight oats) and some taco fixings, including chicken and veggies for a couple dinners. Nothing too crazy for now.

    I just moved, and it was actually pretty smooth, thanks to the amazing moving company! In the end, I packed a few of the things I couldn’t use up, like aluminium foil etc. When I got here, I went to use the saran wrap I’d brought, and there was about an inch left. I’d transported a cardboard roll about 1.000km. Fail! This week, I’m off work until Thursday, so I’ve got a vague meal plan that might change, depending on what happens. Good luck with the move!

    Hi Gina! I was just wondering if you ever take a week off from fitness to rest? Do you think this is beneficial or necessary?

      i definitely think it’s beneficial to take at least a week off. i like to take two weeks off at least once a year to decondition slightly and let the body rest. it will usually let you know when you need to take some time off

    That avocado chicken salad looks amazing!

    Some of my eats for the week- pot roast, pork scallopini, veggie lasagna, grilled chicken with roasted potatoes, and beef stroganoff

    Workouts- gym- HIIT routines, pilates, your “My Biscuits are Burning” elliptical workout, walking my pooch =)
