3/30: Meals and fitness for the week

Morning! How’s your weekend going?

Ours has actually been kind of *normal*, which is especially nice considering the fact that we’re in for a wild and crazy next couple of weeks. The movers came on Friday, packed up half the house and left it livable for us to enjoy this weekend before they come back. Everything will be done on Monday, we’ll spend the week on base, and head to San Diego next weekend! Things ended up getting pushed back with our new place, so we’ll get the keys this coming weekend. I’m so excited about it! I’m actually kind of looking forward to staying on base since it’s close to everything. It will be like a mini vacation before the unpacking begins 🙂

Packing up

Since I won’t have access to my usual kitchen tools and goodies this week, meals are going to be on the extra simple side. We’ll be able to cook there since our room has a kitchen and a grill outside. I’m also glad that the pups will be able to stay with us on base, too.

Here are some menu ideas for the week, but I’m sure more restaurant meals will sneak in there. Friends and family want to meet up this week before we go, so food is usually involved. 

Enchiladas, rice and beans (<– new recipe otw)

Burger night with black bean burgers, jalapeño burgers, sweet potato fries, broccoli

Pizza (homemade with a mix of toppings), salad

Snacks that I’ll make tonight to bring with us:

-Amazeballs

-Paleo bread

-Grocery stop for yogurt, eggs, breakfast/lunch stuff and produce

Here’s what the fitness plan looks like:

Sunday: Lower body and HIIT

Monday: Upper body + hills

Tuesday: OFF

Wednesday: Teach Zumba

Thursday: Yoga

Friday: Total body circuit

Saturday: Teach Zumba (one more before we go!)

Cats lost last night, but they had an amazing season, especially considering that we lost one of our best players to injury early in the season. I’m excited to see how they do next year.

    ha I just got done planning the menu for the week and have both pizza and enchiladas on there. Also–chicken pot pie & spaghetti. Boring, but it works. Have a great week! xo

    We got a dehydrator so I’m planning on making lots of dried fruits and my own cereals! SO excited!

    I’ve been thinking about you with this move! I’m glad things are still “normal” and that you’ll get a mini-vacay of sorts prior to the actual move.

    I think it’s SO hard to eat healthfully or “cook” in a hotel-type environment. Generally, I bring fruits and nut butters, but other than that, it’s restaurant meals for me. I need to get better on that front…

      same. i LOVE going out to eat, but since we’re already spending a lot moving, i think we should reign it back a little this week

    We just spent a week in the Navy Lodge last month before moving into our new house, and I found the Italian Wonderpot (Pinterest!) was quite easy to make in our kitchenette. Good luck with your move!!

    good luck with the big move! i love san diego and cannot wait to read about your adventures while living there. 🙂

    i’ve never really cooked in a hotel room before, but i always pack some sort of prepped food (overnight oats) and plenty of healthy snacks (fruit, nuts, larabars, etc).

      i think as long as we stock up on produce and good snacks, it will be fine. i could live off egg burritos for everything else 😉

    Sending happy moving thoughts your way! I know how stressful it can be. While watching the game last night I felt bad watching the wildcats lose since I know you’re a big fan! I only felt kind of bad, though, since I’m a Wisconsin alum. 🙂 they played a good game!

    what is your favorite amazeball recipe? How exciting moving to San Diego!! What kind of dog is the white one? I’m assuming the other dog is a cavalier?

    Hey Gina. Out of curiosity, are you on base often? Could you do a post about what it’s like living on a military base? I’m a civilian who would personally not enlist but am fascinated by the lifestyle.

    I remember seeing this article on NPR about cooking with a coffee maker! Basically you use the reservoir to boil things, the coffee basket like a steamer, and the carafe to poach or bake on the hot plate. Next time I’m staying in a hotel, I’m totally trying it!

    We spent 91 days in a hotel room during a TDY en route. We had a 4qt crock pot and a small fridge to call our kitchen. I was surprised at how many healthy meals I was able to prepare with such limited resources. Mexican inspired dishes were my favorite because they use so many fresh ingredients and required only a few things to be cooked. Getting to a house with a kitchen was definitely a huge excitement after those 3 months!

    I lived in a hotel for 2 weeks before moving into my house once. It was a mostly microwaveable soups, oatmeal and sandwiches during those weeks with a few take-outs mixed in between. What I want to know is what did you find in your fridge or freezer? Anything scary?

    Thought of you last night while watching the bball game. Knew you would be sad but I was pulling for the Badgers, grew up in Iowa so I am a Hawkeye through and through but I had to stay true to the Big Ten.
    I always kind of enjoy those few days between when the movers are done and when you head out to the new place, last chance to go to your fav restaurants and kind of relax before having to get settled in the new place. How did Livi handle the movers taking all your stuff away. Last time we moved I was pregnant so I haven’t moved with kids but it always freaked my dog out.

    cannot waiiit for the enchilada recipe! i usually just bring snacks and go out to eat when i stay at hotels, since I am on vacation at those times! i would think crockpot meals (but i see youve already packed it :/) or already frozen meals you made & can bring with you in a cooler! good luck with the move 🙂
