8/30: Friday Faves

I made these sweet potato rounds for last night’s girls night, and even though it’s been forever since I’ve made them, they used to be my-go snack for parties. Super simple: cut sweet potatoes into rounds, bake 35 minutes at 375, top a mix of feta (I used the goat milk feta), olive oil, chives, salt, garlic and pepper, then bake for 10 more minutes. It’s an awesome sweet and savory combo!

Girl’s night was a blast as usual, and I’m officially obsessed with Ashley’s Mason jar wine glasses:

I can officially say she’s now a frequent tail-waggler and cuddler… so proud of her.

-Ghee! I’ve never really cooked with ghee, but I’m a huge fan of Kerrygold butter, and when I saw this as a “new item” at Trader Joe’s, I decided to give it a try. It has a lovely light texture and flavor… and to do it right, I think some Indian food might be on the agenda 😉

-New Reebok backpack! They sent it to me per our partnership, and it’s been my travel bag and gym bag ever since. (Looked online and can’t find it, but there’s a similar one here.) I’ve never been much of a backpack fan since they tend to be bulky -and I overpack, so they also get super heavy- but this one is sleek while still offering great compartment space. I can fit a couple of outfits and shoes in there, no problem.

-Our picnic at the U of A campus earlier this week. I’m hoping to make it a regular thing, especially as the weather starts to cool down.

    That campus is gorgeous! I love the palm trees 🙂 We have NO plans this weekend and I am super pumped about it. First weekend with no real plans in a couple of months. Going to lounge, do yoga, cook and picnic.

    LOVE ghee. It gives you a delicious concentrated taste of butter, without any of the casein and lactose. Since you don’t do well with dairy, you should consider switching over to it for good! I also love its use in Ayurveda. Delicious AND healing.

    That sweet potato appetizer looks so delicious! I’m always looking for new, fun ways to use sweet potatoes. And I love goat cheese so these would be fabulous!

    Ghee is the secret to Indian cooking deliciousness! If you want to take canned split pea soup (I like Amys or the TJs brand) to the next level, add a tiny bit of ghee along with a few dashes of Cholula to a bowl of heated soup and enjoy. You’re welcome. 🙂

    Sweet potatoes and goat feta are a heavenly combo. I love baking the taters whole and then broiling them with the cheese and a drizzle of honey on top.

    Bf used to fly a jet that the Navy is doing away with (well, giving to the Marines), and everyone had anxiety about it at first, and what transitioning would entail. But it seems like they made it as smooth as possible and after some initial grumbling and apprehension all the guys in the squadron he transitioned with are now happy with the new one. Whatever happens with the A-10, it’ll be ok! :o)

    Great Blog! I saw that you got the great Reebok backpack! I saw a guy with one at the airport last week and been looking for one ever since!
