9/12: What I Ate Wednesday

Last time I posted an entire day of eats, I got a few requests to make it a regular thing. While it was fun, taking care of Liv and photographing my many snack/meals is a bit of a tricky combo. Plus… well, you’ll see. Some of the things I eat are not very pretty to look at 😉 Since today was a pretty “normal” day -I only taught one class and was at work- I thought it would be fun to do another round.

So here ya go- an entire day of eats!

Breakfast:

2 eggs with lots of salsa, a brown rice tortilla, Donut Shop coffee with coconut milk creamer and Stevia

Morning work snacks:

Oats in the waning almond butter jar (there was about 2 T left and about 1/2 C of oats), almond milk, a big thing of chocolate Zico -my fave!- and some grapes

This is why I don’t photograph all my meals, but for the record, it was DELICIOUS. Green beans with pulled chicken on top (leftover from the other night)

Afternoon pick-me-up:

Almost every day, I like to have a little something sweet, chocolate or caffeine to power me through the afternoon. Today, it was some chocolate, which melted in my hand by the time I remembered to grab my camera

Packed up more pulled chicken and green beans to-go, plus a nectarine (didn’t end up eating the fruit)

Dinner:

 At Eclectic Cafe with the Pilot and Oliv. I enjoyed a cup of tortilla soup with no cheese and a lunch portion of my favorite salad with no cheese (greens, strawberries, blueberries, walnuts, poppyseed dressing).

I also enjoyed the guacamole we ordered for Liv, since it was way too salty for her. I ended up scooping chunks of avocado out of my soup for her, which she loved, along with puffs and some greens puree I brought with us.

Vino: generous glasses for each of us. The Pilot is reading next to me while I blog and catch up on the world. I’ll probably just drink half because I got a little overzealous pouring and am already singing that Michael Buble song about feelin’ good.

Fitness:

45 minutes of teaching Zumba. I did a couple of new dances today -one of them was “Come On, Eileen” which is one of my all-time favorite songs (and I LOVE the Save Ferris version… aaaaand I’m totally dating myself here).

Some things that happened today:

-I didn’t drop the towel basket in the spa and disrupt the zen. I held onto it for dear life, and somehow managed to keep it upright. I did, however, leave lipstick in the car that felt out of my gym bag. It melted.

-Driving home, I saw a rustle in the bushes next to the road. I quickly hit the brakes and a DEER crossed in front of me. It was a close one, for sure. I don’t even know how I stopped on time, because it was split seconds.

-It hurt to shampoo my hair today. My arms are wicked sore from CrossFit. I loved reading your comments on the post, too!

What did you eat today? Any fun new recipes? Anyone else surrounded by sugary temptation each time you go to work?

    The green beans and pulled chicken looks/sounds so good! Also tempted to try the chocolate coconut water…
    I tried a new-to-me breakfast this morning: overnight oats. Oats, dark chocolate almond milk, PB2, cocoa powder, and chia seeds left in the fridge for the night. So.good.

    I bought some chocolate coconut water but haven’t tried it yet. I love the regular zico. I have also started enjoying a little piece of chocolate after lunch or dinner, the lindor dark truffles are so good and perfect portion control.

        Hahahaha I agree. Once you go Zico you never go…Bico? Ok that did not work out as planned but you know what I mean! lol I also mix protein powder with this and it tastes heavenly, just some food for thought!

    Hello! I love that you posted everything you ate. Your breakfast makes me want to go out and get some salsa right now for my eggs in the morning! I do have one question – Where do you buy the big bottles of Dark Chocolate Zico Coconut Water? I can only find the small bottles and sometimes they are even hard to find. Thanks!

      trader joes! they always have a great selection, and i can never seem to find the chocolate anywhere else

    I also had tortilla soup today. Seriously could live off of nothing but chicken tortilla soup!

    My office keeps a bowl of really awesome candy at reception. My weakness, believe it or not, are the lifesavers. I try to limit myself, but enjoy at least one of two a day 🙂

    Sometimes when I take photographs of what I ate I have that same feeling…gross photo…but it tastes so good! Let’s see…so my office is doing this new thing for other companies we work with called “fill my candy jar” where we will fill their candy jar when it’s running low if the email the “candy fairy” (an e-mail address for our office manager, really). Since we are the ones filling their candy jars (this is all for building customer relationships, mind you haha), my office has been bursting at the seams with junky candy (you know the kind I speak of…not organic dark chocolate, but the God forsaken hydrogenated fat kind…) for weeks it seems! Luckily, I keep my sweet tooth at bay most of the time, and I have a Whole Foods within walking distance if I need a quick fix for something!

    I saw a deer today whole driving too! And her baby followed her! I was so glad I was driving slowly. Luckily they weren’t too close.

    If you guys ever PCS to Elmendorf or Eilson up here in Alaska, you’ll have to watch out for moose on the road 🙂

    My husband was at Ft. Richardson for several years and loved it. A little different than Tucson, though!

    I have been wanting to try that wine! Every time I am picking out a new wine to try I pick that bottle up, but I never end up buying it. I am definitely going to get it next time I’m shopping for wine!

    Could you maybe do a post (or point me in the direction of a post you’ve already done) on how to eat as a student to have energy throughout the day? I feel like I end up drinking too much coffee and eating too many processed, packaged foods, since I’m in the library all the time and don’t have access to a fridge. Thanks!

    We do “Come on Eileen” at Zumba too and it’s SO FUN!!! Especially at the end when we’re supposed to go crazy and butt kick/jump around!!! haha

    I found this post fascinating! I like how you eat so consistently throughout the day 🙂 The coconut water sounds so refreshing! I heard crossfit is amazing!

    honestly, it’s so refreshing to read a WIAW of someone that eats about the same amount that I do! I mean I totally understand that everyone eats differently and everyones bodies do different things with food but I cant help but see some of these crazy small portions from people and think, what the heck I’d still be hungry!! And as for the wine.. some days I’ll ask my boyfriend to pour me a glass and he’ll say “do you want a glass of wine, or a big girl glass of wine?” and that means fill-er-up! haha somedays you just gotta go for it

    This was why I started reading your blog in the first place way back in the day 🙂 You inspired me so much with such healthy, well balanced, eating that involved actual foods in normal portions! You continue to inspire me each and every day and I love it! I hope more “what i ate” posts are to come because I love reading them!

    I didn’t eat anything too exciting yesterday. It was the hubby’s 24 hr shift so my eats we’re simple and random. Today, however, tamales will be making a trip to my mouth and I can’t wait. Ever since you did the post about a tamale run in the taco bell parking lot I’ve had a bad hankering for them!

    My husband’s family has been making wine for over 100 years and he has recently started getting into it. We have a few batches going right now in our basement. It’s been really interesting and fun to learn. We live on an orchard so most of the fruit that goes into it comes from right in our back yard! I can’t wait for them to be ready. It’ll be pretty cool to drink wine that WE made! When our son starts kindergarten, we’re going to make a batch, bottle it, and open it on his graduation day:)

    I saw you post that chocolate coconut water on Instagram yesterday and have been dying to try ever since! Looks great.

    And I’m a fan of the Layer Cake too. This thirty days without wine or chocolate is really weirding me out lol I should probably stop looking through food blogs so much.

    My office is constantly filled with sweets so I keep a zillion clean snacks handy and lots of water. I try to curb sweet cravings by putting dark chocolate, unsweetened cocao powder in my coffeee. So good!

    Your pulled chicken looks amazing….did you post a recipe for it?

    I’ve never seen brown rice tortillas around here – they look yummy!

    Food day at work today, so I made Pumpkin Puppy Chow that I found on Pinterest. Not my cup of tea, but it was interesting. I think I prefer classic puppy chow.

    At the risk of dating myself as well, I LOVE Save Ferris! When I was a freshman in high school, my friends and I went to a concert the band was a part of. We got to meet them and everything!

    You should tape your Zumba routine for the song, I’d love to learn it 🙂

    This is a great feature. It’s nice/helpful/motivating to see how clean and balanced you eat. It’s something I’ve gotten better about but it helps to know that you walk the walk (or is it talk the talk?).

    I work as a civilian for a state National Guard Bureau. About half of the people I work with are active guard members and they have fitness/weight requirements to meet so there isn’t too much junk around. The last place I worked there was always food around and it was hard to ignore. Not having junk around at work helps. Plus seeing cute, fit military guys (and women) is also motivating.

    The tortilla soup looks absolutely amazing. I wish I could have some guacamole…..yummmy.

    As for the Michael Buble song, Nina Simone actually sang it first. Her version is soulful, very deep.

    I love seeing meal posts and pictures, it gives me more food ideas so I am not stuck on the same meals everyday! it doesnt have to be pretty to be yummy!

    Last night for dinner I grilled chicken thighs and made this AH-MAZING asian sauce to put on top after: hoisin sauce, rice wine vinegar, sriracha sauce, soy sauce, brown sugar, ground ginger, garlic powder, corn starch, red pepper flakes…I think thats all, but it was so good i poured some over my steamed rice like it was gravy LOL
