A delicious disaster

Hey everyone! Hope your Friday is going well 😀

In celebration of cookie Friday a la Tina, I had two types of cookies in my life today…

1) a vegan cookie I split with Jeni

Ack! Attack of the cookie blob!

I tried (key word there) to make a gluten-free version of my Vegan almond butter chocolate chip cookies for a good friend who was recently diagnosed with Celiac, so I subbed tapioca flour for the spelt flour.

The dough came out beautifully:

But as you can see from the pic above, the cookies were a flattened disaster 😉 The thing is, they taste like heaven (the pilot and I have been scraping bites off) but there’s no way I could put them into a container and share them with friends. Oh well, ya win some, you lose some 😀

On the workout front, I did 50 minutes on the elliptical and back and biceps with Jeni.

I had a few training appointments and now I’m back at the casa, trying to figure out what to do for dinner. Some friends are going out but looks like I’m gonna be lame tonight – I have a meal plan to finish for a client and am going to work on the playlist for tomorrow night’s soiree. Tomorrow morning I have a long run with Kelly and Meara, two training appointments and a massive Christmas sweater hunt in the works 😀

Something to do: Know your dosha 😀

From Yoga Journal:

Ayurveda, which translates as "knowledge of life," dates back 5,000 years to the ancient Sanskrit texts, the Vedas. It’s a system of healing that examines physical constitution, emotional nature, and spiritual outlook in the context of the universe. According to the philosophy, universal life force manifests as three different energies, or doshas, known as vata, pitta, and kapha.

We’re all made up of a unique combination of these three forces. Though everyone has some of each, most people tend to have an abundance of one or two of the doshas. This unique combination is determined at the moment of conception, and is your own personal blueprint, or prakriti (nature).

As you move through life, the proportion of each of the three doshas constantly fluctuates according to your environment, your diet, the seasons, the climate, your age, and many other factors. As they move into and out of balance, the doshas can affect your health, energy level, and general mood.

    Mm! I had bananas in my oatmeal today. I always smush them up so they’re practically pureed into my oatmeal:)

    Tapioca flour is amazing, and has the ability to work really well as a binder, but definitely makes for some flat cookies! You’d be better to try it with brown rice, sorghum, or quinoa flour. So sweet of you to help a Celiac friend out! They look yummy and would make a great sundae topping 🙂

      good to know, thanks! i’ll have to try quinoa flour because last time i made cookies with brown rice flour, they were very grainy.

    Interesting about the doshas – I’m pretty sure I’m a pitta although I had alot of vata qualities too. I was pretty evenly divided.
    You still haven’t found a sweater?! Tomorrow I’m using one that I bought last year but didn’t get to wear because of a snow storm. I hope you find something!

    I have Celiac disease and after many years have finally become a whiz at baking. You probably needed to change the leavening ingredients and use some xantham gum or guar gum. Like someone else suggested, gluten free baked goods normally turn out best if you use a variety of flours. If you want some gluten-free baking recipes, take a look at my website at todayicooked.blogspot.com.

    Of course, I’m not a vegan! But you could make those adjustments easily. And, the queen of all vegan-free, dairy-free, gluten-free, casein-free baking is Karin over at glutenfreegoddess.com.

    Bob’s Red Mill makes a great All-Purpose Gluten Free flour that might work…otherwise, I actually posted a Gluten-Free Vegan Chocolate Chip Cookie recipe on my blog yesterday!!! It’s from the Whole Life Nutrition Kitchen, and everyone who had tried them has LOVED them!!!

    Whenever I make these cookies usually I find it very hard to commit to putting the entire mix in the oven, so to have the dough come back out, but warm – heaven!

    Any more experiments with the raw gingerbread?

    I love the ayurvedic chatter and dosha talk! I started being mindful of my dosha about 10 years ago…love the understanding and knowledge about one’s self that comes from that.

    Your AB cookies look yummy to me anyway 🙂

    It it is going to be truly difficult to make you and the Pilot look bad, in Christmas sweaters or otherwise, BUT…

    Check the Goodwill!!! And the Salvation Army. Here in Florida, that is where many an ugly homemade Christmas sweater, horrendous reindeer googly eyes and all, goes to die. 😉 Sometimes for less than $5 !!!

    Sounds like the flour might be the problem but maybe freezing the dough a bit before baking might help them retain their shape?

    keep in mind that quinoa flour is very nutty tasting. i have never tried it with cookies but really like it in pizza dough. for cookies, try 1 cup sorghum, 1/2 cup tapioca flour, 1/2 cup potato starch flour, 1 TBS xantham gum. or you could always buy a GF pre-made baking mix to start you off so that you don’t have to invest in a bunch of different GF flours…

    I’m celiac so I know the trouble with gluten free baking — Kathleen’s recipe for a gluten-free blend sounds good — the main thing is, you usually can’t get away with using just one flour. xantham gum definitely can help, as well as recipes with a low flour content (think classic peanut butter cookies or brownies, using ~1/2 cup flour). Also, some flours are more stable than others when baking… bean flours (like gar-fava blend) tends to do well with baking. One other thing to keep in mind is raw goodies… I know with my dabbling in the raw world, treats like raw macaroons have been awesome! plus, don’t forget about things like truffles which don’t involve flour. and there are oats you can buy which are designated “gluten-free” (not sure how easy they are to find in Valdosta, but Whole Foods for sure on your next trip to Orlando). One other thing is buckwheat – it’s a flower (I think), definitely gluten free… there is flour made from it that is pretty good, and you can soak it and blend it for raw recipes. Good luck!

    i love learning about ayruvadic medicine. i’ve done those diagnostics before and i’m always surprised at how accurate they are!!! i’m almost always pitta-vata
