Avocado mint chocolate chip ice cream

I was so excited to tell you about my run this morning. That is, until said run happened.

Or didn’t happen, rather.

I finally got new sneaks yesterday (Pearl Izumi) and took them for a 6-miler test run. My heel started throbbing after mile 1 :/ I spent the rest of my time walking, which didn’t hurt, and enjoying the scenery.

I also enjoyed seeing the biker with the Go Pro camera on his head. Legit.

I’m not sure if I just need to break the shoes in, or if they’re not right for me, but I’ll have to call the running shop later today. I’ve been having a tough time finding my dream running shoe because I need support for my slight pronation (my foot tilts inward after hitting the ground), but too much stability and clunky, heavy soles bother me. Why can’t everything be done in beloved dance high tops? 😉

So instead of talking about my run, how about the land of forgotten kitchen appliances?

An ice cream maker. I’m pretty sure I’ve used it less than 10 times since we’ve been married.

While I’m more of a cake/chocolate/gooey brownie girl rather than an ice cream girl, I do enjoy ice cream. I don’t really love making it, though. Something about using the ice cream maker seems like such a pain, even though it has a similar amount of components to anything else.

Today, when I decided I felt like making some ice cream, I broke out the food processor. You know, so this recipe would be more convenient for those who don’t have an ice cream maker. Or those who don’t want to clean it 😉

Avocado is one of my all-time favorite ingredients for creating a creamy texture. It’s absolutely glorious in chocolate pudding, and freezes exceptionally well.

I decided to use it as an ice cream experiment, and was pretty stoked with the result.

Avocado Mint Chocolate Chip Ice Cream

a creamy vegan treat with a healthy twist!

  • Prep Time: 10
  • Total Time: 10 minutes

Ingredients

Scale
  • 1 medium avocado (or 2 small avocados)
  • 1/2 cup almond milk (or milk of choice)
  • 1 heaping tablespoon chopped fresh mint (optional, but I included it since I’m crazy about fresh mint)
  • 1/4 teaspoon peppermint extract
  • 2 teaspoons honey
  • pinch of sea salt
  • 1/2 teaspoon vanilla extract
  • 17 drops liquid Stevia (or more honey as needed)
  • 1/3 dark chocolate bar, broken into pieces

Instructions

  1. Blend all ingredients in a food processor or high-speed blender.
  2. Place in a covered glass or stainless steel container in the freezer, and allow to set 1-2 hours.
  3. Serve and enjoy!

    I had trouble finding a good supportive running shoe that wasn’t too bulky, but would correct some of the issues I have that sound similar to yours.

    I had orthotics made (luckily insurance covered it), and now buy neutral running shoes. This does seem to be the best bet for me, and maybe it will work for you!

    So no need foe an ice cream maker?!!! YES PLEASE!!!!!!!!!!!!!!!!!!!!!! I have always wanted to make ice cream but never wanted to buy an ice cream maker. I have a feeling I would buy it and never use it so why waste my money! So excited to try this!

    I know that running shoe choice is a very individualized task, but I have similar preferences as you (pronation and affinity for a lighter shoe). A few months ago, I switched to the Brooks Pure Cadence shoe. It’s from their minimalist line, so it’s super light with a small heel-toe drop…but it’s still structured, made with some stability for pronators. I’ve really enjoyed it!

      I have the exact same preferences as well and got the Pure Cadence about 18 months ago and then the Pure Cadence II about 6 months ago. I have also really enjoyed this particular shoe, as I need the support for pronation but my Mizunos were getting too bulky. Also, the guy at the running store told me they are good for me because I am a mid-to-front striker, meaning I don’t run heel-to-toe. I think this is because I am much more of a sprinter than a long distance runner and tend to run more up on my toes than pure distance runners, even when I run distance. Therefore, I really don’t NEED the bulky shoes because they have a lot of padding in the heel as well.

    Way to go on stopping when you felt pain while you were running! SOOOO many runners try to run through pain in the hopes that it will go away (wishful thinking!) or that it isn’t that bad (denial!). Better to miss one run than to miss weeks of running because of an injury!
    I had a mandolin accident once. It was very superficial thankfully, but it scared me so mine sits idle now too 🙂

    I gotta tell you. I was torn about whether or not to click on your post. I loved the shoes but didn’t want to be tempted by things such as Avocado mint chocolate chip ice cream! haha. Alas, I came, I saw, and I pinned! Definitely saving that for later. Perhaps I will surprise hubby with it this weekend. He LOVES avocados!

    I love making avocado pudding but have yet to try avocado ice cream. This sounds delicious and I just got peppermint stevia in the mail! Yum!

    Mmmm this sounds lovely Gina! I am a kitchen gadget fanatic and have come very close on several occasions to buying myself an ice cream maker! My spiralizer and Vitamix are definitely 2 of my most-used appliances, and this is going to sound weird but the one I use the least is my toaster! I moved in February and it hasn’t come out of the cupboard since!

    That sounds fabulous! Haven’t had many avocados because they aren’t really big around here but I definitely want to start incorporating them more – they are soooo healthy. Plus, in ice cream form? I bet Peppermint stevia would be the perfect thing to use in this recipe!!

My least used kitchen appliance is my beautiful hot pink kitchen aid mixer. I’m just not really a baker and its a pain to get out of the closet!

    I’d highly recommend mizuno wave alchemy ! I have similar issues with the way i primate and these have done wonders for me! They also are light and not bulky! Good luck!

    Have you ever thought of newtons? I had a different pair of shoes and had terrible heel pain. I was at my witts end until I got the newton energy shoe…second I put them on and took them out for a test drive I had zero pain and haven’t had any since! They were my saving grace!

    Just a thought! 🙂 Thank you for the ice cream recipe, I am sure I need to unpack my ice cream maker and try that!

    Yumm- sounds amazing!! I always want to make ice cream but without the ice cream maker it seemed unattainable…exciting!
    One thing- honey isn’t vegan! Not an issue for me but just in case anyone is lookin’ for a specifically vegan treat for a friend .. 🙂

    Have you tried Superfeet insoles? I have a sight pronation as well and HATE big heels on my shoes. On the recommendation of my Physical Therapist and the clinic’s Kinetic chain specialist, I use the Berry Superfeet insole in a closer-to-minimalist style shoe, and it works like a charm. Haven’t had any issues with my feet, knees, or hips!

    How about some insoles? I am also a pronator, with low arches. Superfeet Blue have been helping me a lot, but they have other kinds if you have high arches!

    Yum! That looks amaze! Can’t ever go wrong with ice cream!
    I have a whole slew of appliances I hardly ever use too! Seriously. Need to do some major cleaning out and find a different storage place for them!
    Have you been to a running store and have them watch you run? I have a slight pronation too, try mizuno wave riders or sayonaras! I love both!

    Sorry to hear about the shoes….sounds like you dont have the right shoes. I would call and have them retry other shoes. Your feet should not be hurting.

    Love the jars you have on the 2nd shelf with chalkboard labels. Where did you find them?

    I have been wanting that ice cream maker (in red). But i always talk myself out of it. It does seem like alot of work though. Which is what turns me away. I do want to get a yonanas maker.

    My most neglected appliance is the breadmaker I got for Christmas 2 years ago… and still haven’t used yet. Oops!

    Have you worn NEWTONS running shoes? They are AMAZING!!!! On my 2nd pair…will never go back to a traditional running shoe. I have pronation issues also. Newtons help with that and also soooo fun to run in. Best of luck with whatever shoe you choose.

    Avocados are one of my absolute favorites, but the ice cream scares me. I am very interested in checking back in here to see if people try it and what they think. I’ve never tried it as an ingredient in pudding either so maybe I should start there. I guess it has always seemed as more of a savory ingredient.

    I can’t recommend Mizuno Wave Riders enough. I have the same problem as you, it sounds like, only my heel isn’t the offender, it is my Achilles. I get tendinitis flare-ups now almost exclusively if I don’t wear my Mizuno WR or Wave Creations. I can’t do minimalist shoes, and WR are the most “minimalist” I can find that are still supportive. The creations are a bit heavier, but I wear them in Marathons and sometimes Minis and they are only a few ounces heavier than WR, but the support they provide helps me over those long distances.

    Ohmygosh. I’m so excited to try this. I feel like I always come across ice cream recipes and then see you have to have an ice cream maker – sad face. I LOVE your idea to combine avo, mint, & chocolate. I mean yum. And all in the food processor! Thanks for a great recipe idea!! I wonder what other combos would be good… 🙂
