Baller Banana Bread

Morning friends! The weekend is in sight! I can taste it… and it tastes delicious 😉 Any fun plans coming up?

This morning, I made a quick smoothie

(almond milk, Sun Warrior, spinach, frozen organic berries, banana, cacao powder)

and a sandwich to take to work:

I still have to pack up my snacks and (5!) outfits, but before I go, I wanted to share a banana bread recipe I came up.. Needless to say, I made it last night and it’s gone already (the Pilot and I each had 2 pieces, he took 2 for breakfast this morning, and I gave 3 pieces to my mom). I think that’s the sign of a winner 😉

Baller Banana Bread

Gluten-free, vegan

-3 small overripe bananas, mashed

-1 C canola oil (yogurt works too!)

-1 flax egg (1 T ground flax, dissolved in 3 T almond milk)

-1 C Sucanat (<—an unrefined sugar; you can use 3/4 C brown sugar instead)

-1 t vanilla

-1 t baking soda

-1 t xanthan gum

-2 C Bob’s Red Mill All-purpose Baking Mix

-1 t cinnamon

-1/2 t salt

-1/2 t nutmeg

-Mix-ins: vegan chocolate chips, walnuts and/or raisins

1. Preheat the oven to 350* and spray a loaf pan with nonstick spray.

2. In a large bowl, make the flax egg and allow it to sit while you combine the dry ingredients.

3. In a separate bowl, combine the flour, baking soda, cinnamon, xanthan gum, salt and nutmeg. Mix well.

4. In the flax egg bowl, add the canola oil, mashed bananas, Sucanat and vanilla. Stir to combine.

5. Add the wet ingredients to the dry and stir- don’t overmix.

[The bonus about gluten-free baking: the raw dough tastes like death, so I’m less tempted to snack on it. The finished product is always delicious, but the dough…. blech]

6. Add in your mix-ins. If you’re like me, think about raisins and then opt for chocolate chips instead 😉

7. Transfer mixture to the loaf pan and if you’re feeling fancy, garnish with extra sliced banana.

Bake in the preheated oven for 50-55 minutes, until a toothpick inserted in the middle comes out clean.

8. Feast 🙂

Banana bread is one of my top fave uses for overripe bananas,

but here are some other ideas for overripe bananas:

-Freeze to add to smoothies- this way, you don’t need ice and it adds a creamy texture

-Dip them in melted chocolate, roll in nuts and put in the freezer- banana popsicles!

-Add them to your morning oatmeal while it’s cooking

-Make banana pancakes –either mash and add to the batter, or slice and place on the “raw” side while the other side is cooking and flip

-Mash and mix with protein powder and a little almond milk; top with a nut butter drizzle

    This sounds like SUCH great banana bread Gina!! I can’t remember the last ripe nanner I ate, because I always throw them straight in the freezer (peeled) for smoothies! They’re definitely a staple ingredient. I suppose you could also make banana soft serve with them too, after freezing them and throwing them in the food processor. Mixed with some fruit… yum!

    I love banana bread — and I have to almost-banana-bread-ready bananas on the counter.

    With brown bananas I make bread or I chop them up and freeze them for smoothies.

    Haha. I made a GF chocolate cake once for a friends birthday party and almost didn’t bring it because the batter was so nasty – glad I did, because the final produce got rave reviews. This reminded me that I still have a bag of xanthum gum and GF AP flour I need to find a use for.

    Sometimes I will mash up the ripe banana using a fork, add in some cinnamon, a dash of nutmeg and nuke it for 15-20 seconds! Very simple, naturally sweet and most importantly delicious 🙂

    Somehow it totally slipped my mind that it’s Thursday! Weird. I’m pretty excited for this weekend. Why? Harry Freaking Potter! I’ve been waiting SOOO long for this movie, J didn’t read any of the books and wouldn’t let me tell him what happened so I’ve been sitting on this info for years.     i made banana bread and muffins a couple days ago, surprising there is still plenty left. but im sure it won’t last much longer.
    I only make banana bread and muffins when i have brown bananas, but i wouldn’t mind pancakes, i dont eat enough pancakes!

    That banana bread looks way delish!
    On a whim I hosted some vegan couch surfers but with a short notice of their early arrival I sadly didn’t have much to give them other than really ripe bananas. 🙁 Luckily they had some magic in their pockets. They put too little dollops of oil in a skillet over medium heat, cut up 4 browning bannaners, a tap tap of cinnamon and a dribble dribble of vanilla… POOF with a little attention using a fork it all combined into a sweet Banana Sauce. Voila!
    Also, I never by syrup anymore because it’s the perfect topper for pancakes and you can basically do this with any fruit (some need a sugary assistant though).

    My best friend just found out she can’t have gluten (and she feels so much better without it!) She misses breads, pasta, sandwiches, etc…so I’ve directed her to a few blogs for recipe inspiration! I get to see her in 2 weeks, so I’ll definitely be making this bread for her!

    Oh this looks delicious! I love banana bread which is ironic because I don’t really like bananas! I love how this is vegan and gf- the perfect recipe to make for a brunch where people might be both of these things! I would totally contemplate the raisins and decide on the chocolate chips too… just like my Grandma makes it! 🙂

    Love what you said about ‘thinking’ about using raisins and then opting for choco chips instead. They say ‘it’s the thought that counts,’ right? 😉

    Weird question, but how do you keep your smoothies so small? I use 1 c. milk, 1/2 banana, spinach, and a scoop of protein powder, and it’s HUGE….too big for a huge glass, and definitely too big for my tummy, so I end up dumping it out. I think the protein powder may have gums that make it too fluffy? Any tips?

    This bread looks amazing! There are a lot of specialty ingredients though. Is it possible to use regular flour rather than the Red Mill mix?

    One gripe though– 1 cup of oil seems like a LOT for less than 10 servings… did you make it with yogurt and did it come out alright? Can I sub more bananas and add 1/2 cup or less oil?

    My banana bread recipe that I came up with is vegan, GF, and uses PB in it. It’s so thick I swear it’s like eating lead balloons but it’s kinda okay by me 🙂

    Mmmm…banana bread is my favorite snack! I have slice of banana bread with a Tbsp (or 2!) of peanut butter spread on top every single night. Soooooo good. I also make a great banana snack cake for my kids when I have old bananas in the pantry. They love it. I love adding it to my oatmeal in the mornings. It makes it nice and thick and tasty.     Yum!! That bread does look baller. I think that banana bread is actually one of the few gluten free recipes that actually can taste like the “real” thing. The banana adds so much moisture that it can disguise the dryness of gluten free flours. I like to dry my bananas in the dehydrator, and then powder them in the vitamix and use them as an ingredient in raw cookies and cakes! It adds a much deeper flavor to raw baked goods than just mashing a banana into the mix.

    bread looks incredible! another benefit to gluten free dough, you really can’t overmix it, since there’s no gluten in it, which is what makes traditional flour get all gummy and gooey. So, in my experience it’s nearly impossible to overmix gluten free dough 🙂
