Big Dreamin’

Hi guys 😀 How’s your Friday been??

Mine has been pretty wonderful 🙂 The pilot and I did Insanity and then had bfast.

It was funny –during the warm-up, which is really more like an actual workout, the pilot was being a huge goofball. He was sprinting around me in circles and lifted the Buddha statue above his head. I looked at him and said “Save that energy. This is the warm-up, you’re going to need it later.” He didn’t believe me until the end, when he was on the floor, sweating, huffing and puffing 😉 He finished the whole workout like a champ – pure cardio + cardio abs. Pretty amazing.

His and Hers Waffle Mix:

mix

I did Old Fashioned Pancake Mix recipe for the pilot, and perfect protein pancake recipe for me- thinned out a little with extra almond milk

My waffles were topped with a chopped apple that I microwaved for 2 minutes with cinnamon:

And the pilot’s waffles were bathed in a shower of maple syrup:

waffles (2)

After our feast, we took the puppers to the dog park 🙂

dog park

Bella was a sprinting machine and had races with the other dogs on the other side of the fence (the park has 3 fenced-in areas but we secluded ourselves from the other dogs since Vies doesn’t get along with all dogs)

running

And then she parked herself in the grass, let her tongue hang out and rolled around in the mud. Lovely.

Viesser loved envisioning the dogs as her next meal watching all of the other dogs 🙂

After the park, I made some foodie and went to work.

The menu for dinner:

Grilled Chicken with Roasted Garlic Oregano Vinaigrette for the pilot

– Dijon salmon for me

– Baked sweet potato fries

-Grilled yellow squash

-Salad

and Riesling

It’s Friday 😉

Off to cook!

Something to talk about: Your *BIG DREAMS*. When I asked ya’ll for some reader’s requests the other day, I got an awesome email from a reader asking me to do a post about long-term goals. A lot of the time, we’re too focused on the right now and near-future to think about what’s much further away- like 10 to 20 years from now. So, what do you *wishsobadly* to accomplish in the long term? The kind of things where, at the end of the road, you can look back and say “I’m so proud I did that.”

Mine:

– Be the best wife, friend, sister, daughter, mom that I can be

– Make a conscious effort to take care of my health and take time for myself

– Write a book

– Open a fun fitness center for kids and young adults (maybe 8-18?), where they can come after school and take classes (like dance, basketball, Zumba, yoga, weight training, etc) and chill after school. I’d also like to have a cafe and cooking center on site and teach kids how to have healthy attitudes towards food and make dinner for themselves, while having a healthy and fun attitude towards fitness at the same time.

Big dreams indeed 😀 I’d love to hear about yours!

One of my future goals is skydiving, lol. I WILL do it.

I wish so badly to have my two injured knees heal. It’s been five years of chronic pain and I so badly want them to feel better so I can walk and stand without pain. After that, it opens up other things I want to do, like travel a ton and have kids. Not sure how those two things will work out together. 🙂

  16. Allison @ Food For Healing on May 7, 2010 at 7:26 pm

sounds like you guys have had a lovely day together so far!

Sounds like such a fun day with the hubbie! You must be ecstatic that he’s home 🙂

I *love* talking about my big dreams because it makes them seem like more of a reality, you know? Mine are:

    1. travel as much as possible! Especially Israel, Greece, and Austria.
    2. meet the man of my dreams (hopeless romantic right here!) and start a family.
    3. work in the holistic health field….still narrowing down ideas on that one!

Sometimes I get discouraged because I thought I’d have much more accomplished by age 23 than I actually do, but then I realize that I’m being crazy and have my whole life ahead of me!

  22. Jenny on May 7, 2010 at 9:54 pm

I am so happy the Pilot is back….you both look so happy!!!

  33. Liza on May 8, 2010 at 8:42 am

    Hey Gina!

How’s the Insanity going for you? Are you seeing any significant results? 🙂 I just finished downloading it. I’m a little doubtful though since it all looks like cardio.

And GOSH I’d wanna join that fitness center! I’m 18 now though. 😛

Yay! Can’t wait! Because I’m thinking of just substituting Insanity for my cardio days and stick with my usual weight lifting days (following your Summer Shape-Up). Do you think that’s a good idea? 🙂

yes, i think it’s an excellent idea 🙂

Emigrate (although I’m not sure where to yet!)
Be self sufficient (for at least just fruit and vegetables)
Be as kind, happy and loving as can be, and strive to make everyone around me as happy as they can be too

I love your idea for a fitness centre for kids!

    – Always see the light in everyone

  36. highonhealthy on May 8, 2010 at 11:18 am

I’d love to become a dietitian.. even though it means I have a lot of work ahead of me. First I need to take chemistry which I didn’t take in high school because there was no way that I would need it. Then I have to go around applying to schools and hoping I get accepted into one.. and if I do, chances are it won’t be in my province. So that means I would have to leave my family and the province I love behind. I’m up for the challenge though! No dreams are too big. 🙂

    I love this post!

My dream is to be a mom. I also want to travel around the world and write about food. I want to continue to make jewelry and see it in stores nationwide. Finally I want to teach yoga to people struggling with addiction. Hooray for dreaming and ultimately achieving goals!

  40. Shelly on May 8, 2010 at 12:10 pm

My big dreams are to write a good novel (I’ve written a novel during National Novel Writers Month–called NANWRIMO– but given that you do in in a month flat, it’s not a very good one) and have it published; have a daughter (at least one); and spend more time in Europe and overseas in general (I’ve been to Switzerland 3 times, but I’d like to go elsewhere- hopefully I’ll be going to Portugal for my honeymoon).

  41. Kilee on May 8, 2010 at 1:40 pm

I loved reading everyone’s dream and aspirations! I really like your idea of the after-school children’s center. What a great way to create positive habits in young people! As for my dreams, I think about them constantly and they are ever evolving. Most importantly, I want to be the best daughter/sister/girlfriend/friend that I can be. I treasure all of my loved ones and they mean everything to me. As for career goals: be as fabulous as I can at whatever I want. Have a great weekend!

  42. Hilary @ Purelicious on May 10, 2010 at 12:05 pm

So I just heard about this grant contest and I thought of you and your idea for a kids center! You can win $25K to implement a healthy living idea in your community. Sounds like it would be right up your ally with that idea. Not sure if it was something you wanted to do in the near future anyway or more of a long term thing but figured I’d pass this along anyway! It’s a great idea, I hope you make that dream a reality eventually! 🙂

Such awesome goals! I swear, your blog is making me a better person! I have always tried eating healthier and working out more, but usually crash and burn after a weekend “binge” and repeat… but now I’m realizing I need a little cheat meal to keep from burning out and I’ve suddenly lasted for two whole weeks eating right, exercising daily, and having a much better outlook on the world in general. I actually just self-published my first young adult and children’s novels this year but my goals would be to generate enough income from that to replace my current job, to continue to maintain this healthy lifestyle and not just lose weight but get HEALTHY, and also to be the best wife/daughter/sister/friend I can be. =]
Thanks for being such an awesome inspiration!
