Brownie Fruit Pizza

I finally started packing…

This means I have a pile of travel-sized things + Reebok clothes and shoes, ready to be stuffed into a suitcase.

Bella wants to know where we’re going on vacation, and Caro… well, poor Caro is just freaked out from the monsoon storms.

We’re having a little dinner party at our house tonight — the best type to have the night before leaving on a trip: one where you’re not doing the cooking.

Kyle and my Uncle Eric (the pro chefs in the family) are making dinner at our house for everyone. I’m guessing there will be about 15 of us 🙂 I’m not sure what’s on the menu, but word on the street is that ahi tuna and truffle fries are on the menu. Can’t wait!

Some dessert to contribute to the feast:

If you’ve ever been to a Pampered Chef party, chances are that you’ve tried brownie or cookie pizza. It’s a festive and refreshing summer dessert, plus you can customize it according to your preferences. The idea is super simple: bottom layer is brownie or cookie (the fancy kind made from a boxed mix), the “sauce” is some kind of cream cheese or pudding mixture, and the toppings are whatever you like: fruit, nuts, chocolate chips, mint, anything goes!

I made the brownie part after breakfast this morning,

and during nap time it was cooled enough to be topped with a whipped cream cheese, powdered sugar and vanilla mix.

Next, I added slices of fresh fruit,

and made sure cover the banana slices with a bit of lemon juice so they wouldn’t turn brown.

This is an awesome easy party dish, especially since we usually have most of the ingredients on hand.

Liv is starting to stir from her nap, so I’m off. We have a couple of errands to run, then it’s party time. See ya in the morning <3

    Oh my goodness, I totally forgot about cookie fruit pizzas! My mom used to work for Pampered Chef several years ago, and we’d have Pampered Chef parties all the time with lots of cookie fruit pizzas involved. 😉 I’m going to have to make one soon! Yum!

    I’m pretty sure if I made that, most of my friends would scrape off the pizza part and leave the brownie. Haha! 😉

    I’ve had cookie pizza at a pampered chef party but have never made it. Not sure why since it is so easy and with the fruit addition… it’s sort of “healthy” too. You know, for a brownie smothered in cream cheese! 🙂

    Fruit pizza is my absolute favorite dessert. I love the mix of thin cookie with fruit. I haven’t had the opportunity to go to a pampered chef party, but if they serve these, I’ll start showing up at every single one!
