Brown Rice Horchata

Hi guys! How’s your day going? Hope it’s been wonderful <3

Mine has been busy but pretty wonderful—3 training appointments, walked the puppers on the base trail, ran errands, got a facial and massage (lurve) and then back to the casa.

THE PILOT IS COMING HOME TODAY! I didn’t mention it on the blog for creeper purposes, but he’s been TDY for a week in Tampa. A week is nothin’, but I still missed his face.

Since he is craving Mexican food, and I’m going to dinner and the movies with the girls, I’m leaving him Build Your Own Mexi – Meal (BYOMM) in the fridge 🙂

There’s romaine if he wants to do the salad thang (which is doubtful, but still an option),

and homemade Tucson tortillas if he wants to go the burrito route (much more likely)

and now they’ll bubbling away on the stove with garlic, spices and sea salt

chips with the best jarred salsa you will ever taste 🙂

Brown Rice Horchata

Makes 2 servings (To double the recipe, keep the amount of sea salt and vanilla the same, double everything else)

Ingredients:

– 1 C short grain brown rice

– 2 C water

– 1 C almond milk

– 2 t cinnamon (fresh ground tastes even better)

– pinch sea salt

– 1 t vanilla

– Stevia, to taste

1. Combine the water and rice in a blender and quickly process to chop up the rice.

2. Let stand at room temperature for 5 hours.

3. Add the cinnamon, process again to combine the cinnamon and strain the mixture into a large bowl using a fine mesh sieve.

4. Save the rice, even if you’re not quite sure what you’re going to do with it yet (rice pudding maybe??)

5. Stir the almond milk, sea salt and vanilla into the strained rice water, and sweeten with Stevia to taste (I used 14 drops of the liquid vanilla Stevia).

6. Store in the fridge overnight for all of the flavors to settle.

7. In the morning, grab a giant glass and enjoy 😀

    I might be trying your horchata recipe, I believe the recipes I have had in the past weren’t strained very well…or at all!

    woww thats so interesting!! i have no idea what it tastes like, but i love mexi, so i think ill be ok 🙂 do you have to use almond milk or can you use regular? and the pilot is SO LUCKY. man he’s in for a treat

    Long time reader, however I had to comment and say that I finally tried the Sun warrior protein and YUM!!!! I love the Vega products and I really don’t like change, but sun warrior is in a class all on its own:) Thanks for the recommendations. Have a great weekend!!!

    Oooh BYOMM are huuge in my casa! We also have Build Your Own Turkish Meals… cacik (like tzatziki), ezme (mixed, minced veggie), mashed eggplants, garlicy spinach, kalamata olives, dolmades, etc with puffy bread for scooping for the fiance and lettuce and all the fixing to combine everything into a monster salad for me.

    I love meals that have tons of different parts and can be combined however you like. It makes cooking for two (one meat eater and one non) muuuch easier! Yay for the pilot coming home!! I don’t know how you do it girlie… I get so bummed when the fiance goes away on business, but you keep yourself busy and upbeat the whole time. Cheers to you!

    I’m eating those very same chips and that very same salsa (medium though, not hot – yowza!) right now. So good. I’ve never had horchata, but it sounds really good.

      BTW I had a tasty whole grain veggie sub from Quiznos today. They toast the bread and spread guac on it and layer in the veggies.Their chopped salads are good too.

    SSUD #4 … nothing but not so ladylike words coming out of my mouth while I was doing the cardio (treadmill 30 min, 12% incline at 4.0 speed) after the legs workout, killer burn, but great workout – thanks Gina!

    the pilot was in my town! glad he is getting home to you. the Horchata looks yummy. My hubby would love that I bet. hmmmm maybe I should make some. I’ve been eating popcorn every night this week (brown bag trick is awesome!) let me know how sex & the city is!       have you tried yoga before? if not, give it a chance.. especially with the yogadownload stuff, it really is awesome
      if not, just do some solo stretching on your own

    I have to agree about the salsa, herdez is one of the best, I totally bought some the other day. Of course in AZ, there is no lack of fantastic salsa. I do have a weird question, I’ve thought about making some kind of tofu chorizo, any ideas on how to make that happen?

      hmmm i have no idea, but that sounds lovely. i know they sell soy chorizo at trader joe’s and some grocery stores- i’d probably do it that way

      i soaked them overnight then rinsed and got rid of the water.
      brought them up to a boil with more than enough water to cover, reduced to simmer and added 2 t sea salt and 5 giant cloves of garlic (with the skin on)
      let them simmer for 4 hours
      then seasoned with a little cumin and cayenne

    I can so relate to the TDY’s and missing him. My hubby usually does at least 2 week long TDY’s, in fact I think he might have been at the Pilot’s base (I could be wrong though) when he went TDY near Savanah GA. That was probably his last TDY with the A-10’s though as they lose their planes in a few weeks 🙁

    I had no idea what Horchata was when you mentioned it yesterday. Looks super yummy. Basically like a sweetened brown rice/Almond milk?

    I found this recipe on one of your most recent posts — thank you! it comes at perfect timing : ) I got to spend the weekend with my boyfriend in DC, and he was on the hunt for horchatta. We found some, but it was mediocre at best. Of course, since he had never had horchatta before last night, he didn’t know the difference! there is a great restauraunt in our hometown that makes ahh-mazing horchatta, but I would also love to try making my own! so glad to find your recipe : )
